Single Cask Whiskies

When we began crafting whisky nearly three decades ago, we made choices that shaped our philosophy at Sullivans Cove. The most significant of these was the decision to release our whisky as single casks. It defined our role as distillers – to create the conditions where each cask can develop to its peak and express its uniqueness.

These three American oak whiskies are a prime example of this philosophy, each needing significantly different amounts of maturation to reach that magical point where spirit and cask come together magnificently.

20 yo American Oak Old & Rare HH0031

Distilled in 1999, HH0031 is our oldest single cask whisky released to date, having spent over 20 years maturing in an American oak ex-Bourbon cask. This extended maturation has crafted a beautifully complex and well integrated whisky and is an incredible example of what time, patience and skill can achieve. HH0031 was matured for a total of 20 years and 8 months, resulting in a mere 118 bottles.

American Oak Second Fill TD0081

TD0081 was identified as a stunning single cask whisky in early 2020 and was sampled by our tasting panel a total of 17 times; in order to identify the moment when it reached the perfect balance between spirit and oak. TD0081 matured for 15 years 4 months and yielded 416 bottles.

American Oak ex-Bourbon TD0330

Our American oak ex-Bourbon expression is Australia’s most awarded whisky. Known for their mouthwatering banana, malt and vanilla flavours; TD0330 is a classic example of this style. Matured for 12 years and 8 months, TD0330 yielded just 256 bottles.

These whiskies will be released via ballot. The ballots will open for 24 hours from 10am Hobart time on the 6th of December 2021. Further details will be sent prior to the ballots opening.

Our policy is one entry per person, per household, per ballot. Johnnie Walker Masters Of Flavour is an exceptional Scotch crafted from the finest maturing whiskies in the Johnnie Walker reserves. All of the whiskies used to create Johnnie Walker Masters Of Flavour are aged for at least 48 years and only 288 decanters have been released – an extremely limited run of an incredibly rare Scotch.

This superb Scotch contains extremely rare whiskies from the four “ghost” distilleries of Port Dundas, Brora, Glen Albyn and Glenury Royal which are balanced perfectly with whiskies from Cameronbridge, Blair Athol and Dalwhinnie.

This special liquid is housed in a beautiful Baccarat decanter, all encased in a handmade wooden cabinet.

 Somehow this 12 year old—a mix of sherry and American oak—is overlooked by malt lovers heading straight to the mental world of a’Bunadh. This is Aberlour at a crucial point in its growth: you’ve lost the maltiness of the 10 year old, but there’s none of the heavy toffee and licorice of a’Bunadh or older expressions. Here it’s sweet fruits in charge: red apple, black currant, plum. The sherry has added depth, the American oak honey. Length and balance. (DB, Summer 2013)

·         In January’s Hong Kong Whisky Sale, a classic Macallan Lalique-50 year old sold for an impressive HK$1,054,000, against an estimate of HK$750,000-900,000.

·         In March’s A Nippon Whisky Collection Online Sale, all 82 lots of Japanese whisky were 100% sold, with over 60% selling above their high estimates.

·         In May’s Fine and Rare Wine & Whisky sale, Bonhams set a new auction record for the Karuizawa ‘Samurai’ series.

HAVE A VERY MERRY CHRISTMAS 

Raise a glass of something special this year with one of the rare whiskies coming up in Tennants Auctioneers’ Whisky Sale on 17^th December. Timed perfectly for stocking up for Christmas, the sale offers a fantastic selection of single malt whiskies for collecting and drinking.

The highlight of the sale, however, is a Hogshead cask of 1995 Tobermory Single Malt Whisky, to be offered for the first time at auction. Held in bond at Deanston Distillery, near Stirling, the barrel contains 137 litres of whisky and is on offer with an estimate of £15,000-20,000 plus buyer’s premium.

Further highlights from the whisky section of the sale include a bottle of ‘The Edwardian’, a private bottling of Macallan 31-Year-Old Highland Single Malt Scotch Whisky (estimate: £1,000-1,500), a 1980s bottling of Longrow 14-Year-Old Campbeltown Single Malt Whisky (estimate: £1,000-1,500), and a bottle of Benriach 1966 35-year-old Single Highland Malt Scotch Whisky (estimate: £800-1,000).

Infrequent Flyers Batch #8 has arrived including a Pedro Ximénez sherry puncheon matured Craigellachie. Expect dark chocolate, cherries and sultana notes. MAXIMUM 1 BOTTLE PER CUSTOMER.

Nose: Toasted oak, treacle toffee and caramelised Demerara sugar.

Taste: Rich and densely flavoured. Liqueur-esque. Brandy snaps, dark chocolate and Morello cherries. Intense raisin and sultana. Quite a peppery note at the back.

Craigellachie Distillery sits in the village of the same name having been designed by the renowned distillery architect Charles C. Doig. It was founded by Alexander Edward and Peter Mackie in 1888 and opened in 1891. Craigellachie is one of the few remaining malt whisky distilleries that continues to cool its new spirit in traditional worm tubs. Most of this Speyside whisky flows into White Horse and Dewar’s blends of scotch but it is available in a range of independent bottlings.

Apogee XII

Apogee XII from Bimber distillery, crafted from selected malt whiskies matured for a minimum of 12 years. These fine malts were then blended together and given additional maturation in ex-bourbon casks that previously held Bimber whisky!

Beautiful presentation, Apogee has been filled into bottle that features hammered glass to represent the surfaces of the Bimber copper stills.
