This means that each distillery is set up to produce a wide range of styles. Hakushu uses four different types of malt (unpeated to heavy) run through four pairs of differently-shaped stills. Springbank 1995 Port Cask

An unusual single cask expression from Springbank distillery in Campbeltown on the Kintyre peninsula. This single malt was distilled in December 1995 and matured in a fresh port cask, no. 15/286-11, for the next twenty years. In October 2016, the cask produced just 216 bottles at a natural cask strength of 51% abv.

The nose has banana and tropical fruits with some deliciously rich treacle. The palate brings dark chocolate notes and angel delight, with hints of Campbeltown’s coastal notes. The finish has just a hint of smoke, balanced by more treacle.

It’s not everyday that you get to try, as well as talk about one of the rarest Japanese whiskies in the world. One of only 795 bottles across the planet, Akashi 15yo is a combination of twelve and a half years in a former Pedro Ximinez cask and then being further transferred into a Konara cask (Same family as Mizunara/Japanese White Oak) – As a result of these huge flavors and made by a distillery who are most renowned for producing, Sake. This charming little pearl from the Far East is arguably one of the best whiskies that I’ve ever tried. Subtle and robust all at the same time, it sets your sense alight with ginger, sage, pork, slightly off sherry notes, white pepper and cedar wood. A truly mysterious and complex whisky from what is a relatively unknown distillery in the world of whisky. Cheers!

Their malt mill, glistening copper mash tun and traditional wooden washbacks form part of a vigorous but carefully attended process. Without a doubt, this year has not disappointed.
