Port Ruighe is Named after the old Gaelic name of Port in the Isle of Skye. The distillery has been using Port Casks to age its whisky as far back as 1898 and this new Malt is a toast to the Scottish merchants who braved the high seas to bring back the newly discovered Port Wine from Portugal.

Double matured in port casks to combine Talisker’s powerful maritime character with succulent sweet berry notes. Port Ruighe is the Malt for consumers who have good knowledge of the Malt world and want to discover more diverse flavours. They are willing to spend a little more.

NEW CANADIAN SINGLE MALT WHISKY TO BE RELEASED

Vaughan, Ontario, April 2013 – Still Waters Distillery announces the release of the first Single Malt Whisky to be distilled, aged and bottled in Ontario. STALK & BARREL SINGLE MALT WHISKY will be released on Saturday, April 27, 2013, exclusively at Still Waters Distillery’s on-site distillery retail store.

All STALK & BARREL SINGLE MALT WHISKY will be bottled as single cask offerings in individually numbered bottles. The whisky is made by hand from 100% Canadian two-row malted barley in small batches in a custom built copper pot still. It is bottled with no chill-filtering or artificial colouring. The initial release will be from the first few casks of whisky made in 2009 and will be offered at full cask strength. A limited number of bottles will initially be available directly from the distillery, which will also start selling to Ontario residents online. However, the bulk of the product has already been allocated to markets outside the province, including the US and Sweden. Future casks will be bottled and offered for sale as they mature.

Distiller and company co-founder, Barry Bernstein, said, “We set out to restore the tradition of small batch craft distilling in Ontario that goes back centuries. This is the culmination of four years of hard work and patience.” Barry Stein, co-founder and fellow distiller remarked, “We are already seeing incredible interest for our single malt whisky and have increased our production to meet future demand”.

Still Waters Distillery is Ontario’s first grain-to-glass micro-distillery. Their focus is on handmade whiskies, with their STALK & BARREL SINGLE MALT WHISKY being the first release. A rye whisky will be released in the future to extend the product line. They also produce an award-winning blended Canadian whisky, an award-winning single malt vodka, and a brandy.

The Antagonist

Cask No. 76.85                                             $115

Speyside, Spey

The intriguing nose had candied fruit pieces, lemon, brown sugar and crushed mint leaves; also figs and dates, sultana cake. Lime and pickles, curry leaves and oxo cubes brought savoury contrasts. The neat palate was hot and sweet – treacle toffee and heather honey; Granny Smith apples brought freshness. With water, the nose became more floral; poppies, elderflower and plum, blackberry jam and maple syrup, banana and walnut oil. Also truffle oil and squash. The reduced palate brought thoughts of the vineyard – grape skins and must, Poire William eau de vie and black tea tannins drying out on the tongue. The distilling water comes from the Conval hills and cooling water from the river Dullan.

Drinking tip: Enjoy with good friends –preferably at a Society venue

Highland, Island

We found the nose curious – toasted pine nuts, toffee, marmite on toast, orange, lemon (squeezed over fish?) cider vinegar, forest floor after rain and muted wood smoke. Fruity aromas dominated with water – apricot jam, hard pears and apples – also refreshers, wet sails, oilskins and hemp rope – strangely maritime. The unreduced palate brought a wee tear to the eye with deep resonances of treacle toffee, charred wood, burnt heather sprigs, leather and oak (someone suggested ‘a cooper’s apron’). The reduced palate evoked tobacco, Balmoral sauce, heather, oily ropes and ‘smoked jelly babies’ – leaving pleasant tingles after. The distillery stands above Kirkwall.

Drinking tip: After gardening or before fishing

Passion-fruit scented candles

Highland, Northern

Complex, warmly inviting – the nose enveloped us in fresh grass, sea breezes, lemon, honey, white pepper, rosewater, jasmine and ‘passion-fruit scented candles in a wooden box’. The immediate taste had sweet, waxy, lemony, citric flavours, but hot and slightly bitter too, like star-fruit sprinkled with chilli. The nose turned fruitier with water – stewed apple, candied fruits, boiled sweets and ‘banana in a raincoat pocket’. The reduced palate seemed sweeter, with candy canes, fruit syrup, lemon meringue and sweet coconut; still with its refreshing side – green twigs, lime and aniseed tingles in the finish. The distillery name means ‘sloped garden’.

Drinking tip: Between courses at a special dinner

Speyside, Lossie

Scented face cream is soon succeeded by Murraymints, with more than a hint of fennel. The toffee note increases towards ‘glazed duck’, with orange cream dark chocolates. The taste is rich and sweet then dry (‘crispy duck skin’), with traces of tobacco in the lengthy finish. With water the nose becomes fattier (‘the duck has become a goose’), with scents of orange peel and fresh herbs – rosemary, basil, cardamom – now ‘duck a l’orange’? The texture is more viscous, and lightly mouth-cooling, with a sweet start and a bitter chocolate finish, with orange peel and tobacco in the aftertaste. This was the distillery where all the cobwebs were replaced after a still had been repaired.

Drinking tip: Watching cricket after lunch with a good cigar

Islay

He comes across a city in the desert; the tops of the skyscrapers are hidden in a cloud of sweet smelling smoke.  He’s had these trainers on a little too long. Steam rises from the streets, the rain has gone. Either side is packed with rundown shops: there’s a fruit stall hawking pineapples, peaches and passion fruits, all just the wrong side of ripe; a Chinese restaurant roasts ducks on a spit; a cart on the corner is piled high with salted cashews and an ice cream van is parked up, its jingle long silenced. He can taste it all. Our hero just puts some sweet tobacco in his mouth and keeps on walking…

Milroy’s of Soho have become famous for their single cask bottlings of rare and collectible spirits. This is thanks to a long tradition begun by brothers John and Wallace Milroy in the 1960s of travelling to Scotland, selecting choice casks from the distilleries themselves, and bottling under the Milroy’s of Soho name. We choose the casks with an aim to bottle unusual or particularly outstanding examples of single malt whisky for our discerning whisky lovers back home, and these have become rare collectibles in their own right.

For you this month we have five (5) new bottlings under the OLD MALT CASK label, together with two (2) DIRECTOR’S CUT and five (5) from the CLAN DENNY Grains.

OLD MALT CASK Tasting Notes:

OMC2249 Macallan 15 years

Nose: Honied – floral – spiced with sweet barley & light oaky tones.

Palate: Opens honey sweet – then vanilla toffee, soft camphor & citrus.

Finish: Softly spiced now – with that same toffee & cough drop style (F)

OMC2244 Caol Ila 16 years

Nose: Briny & peaty quality + beach bonfire ashes + smoked ham

Palate: Opens sweetly – develops to cigar smoke + dark chocolate

Finish: Long – still sweet & smoky character + soft, chewy tar (J)

OMC2248 Strathisla 21 years

Nose: Sweet & fresh – fragrantly spiced + honey & vanilla

Palate: Still sweet – honey on buttered toast + barley sugar

Finish: Medium long – sweet throughout – spicy + late oak (J)

OMC2246 Bunnahabhain 25 years

Nose: Opens with charred oak – soft leather + subtle smoke

Palate: Iodine – a sweet & smoky character + burnt orange zest

Finish: Long – still carrying a gentle smoke quality + lemon pith (J)

OMC2245 Ben Nevis 46 year old

Nose: Sweetly spiced + bees wax + creamy vanilla & caramelised orange

Palate: Milk chocolate + macerated fruit + a sweetly spiced toffee style

Finish: Medium long – still sweet + soft oak & a spicy, tangy quality (J)

DIRECTOR’S CUT Tasting Notes:

DIR0039 Macallan 20 year old

Nose: Honey outbids a floral tribute then barley and vanilla take over,.

Palate: More honey + syrup + spice selection + wholemeal toast and butter.

Finish: Soft and subtle, warming with a liqueur – and rather fruity – style. (F)

DIR0042 Longmorn 20 year old

Nose: Opens with a fruity & fresh quality – reminiscent of a candy shop with pear drops apparent

Palate: Sweet & vanilla’d – American Cream Soda style – runs to macerated summer fruits

Finish: Medium long – carrying a sweet malt quality + a chocolate and orange tang (J)

Tasting notes for CLAN DENNY Grains:

DEN0100 Girvan 21 year old

Clean and very sweet as the nose opens – warming to soft vanilla, sugar and aromatic spices. On the palate – detect a real big mouthcoating dulcet quality with a late corn and mild cough drop mix … all neatly replicated on the sugary – too short! – finish. (F)

DEN0104 Port Dundas 21 year old

Big and spiced on its candied nose initially – it warms to subtle spice suggestions plus powdered chocolate. The palate is massively sweet – lightly spiced – then mouthcoats in a honey, vanilla and Bourbon manner. The finish is fruity with the same flavours from the palate apparent. (F)

DEN0102 Cameronbridge 38year old

The nose opens sweetly and carries an oily, bees wax character that runs to an orange liqueur style. More orange flavours are apparent on the palate plus caramelised zest and barley sugar. This citric quality is replicated on the medium long finish but with a more tangy, still dulcet character. (J)

DEN0098 Strathclyde 38 year old

Opens with a distinct macerated dried fruit quality on the nose and develops to a honey and butterscotch character. The palate remains sweet and richly spiced carrying a milk chocolate and toffee style. The finish is surprisingly long for a Single Grain Whisky, still sweet plus cedar wood. (J)

DEN0103 Carsebridge 47 year old

Big – full – round and massively fructiferous initially on the nose – warming to subtle oak, spices and fruit boxes. The palate is wonderfully sweet then heads to crunched sugars – honey and late fruit toffee flavours. It finisheslightly oaked – still spiced with a hard candy style (F).

After 11-12 years of writing tasting notes for OMC, these are the last you will see for that brand from Fred and Jan (F & J) – but they indicate they will be back!
