Tasting Notes

Nose: Soft, ripe red apples intertwined with baked almonds. Mellow floral notes crescendo into a zesty flourish.
Taste: A soft, smooth, creaminess gradually develops until the whisky hints at chewy, sticky toffee. A delicate floral note creeps in, which lingers tantalisingly until a final burst of Seville orange rounds it off.
Finish: Long, sweet and very slightly dry.

Speyside, Spey

The nose had lots to offer – sultanas, figs, sweet tobacco, coconut oil, vanilla, pineapple, banana bread and butterscotch bumped up against leather, slate, sea salt and Fisherman’s Friends. The palate was also very attractive, with marmalade, blossom honey, golden syrup on buttered toast, crêpes with Cointreau, geraniums, beer and tobacco (‘like a window box outside a pub’ someone said). On the reduced nose, a laundry basket appeared, along with white chocolate and jellied orange sweets. The mouth-feel turned slightly fizzy and developed new flavours of biscuits, linseed oil and slippery elm. The distillery still-house looks out over the Rothes graveyard.

Drinking tip: A dram for those with a sweet tooth – and water doesn’t do much for it

Islay

A polite and somewhat reserved example of what used to be known as Islay’s most pungent malt – a mild nose-feel, then ‘fresh linen on a clothes line’ and sweet short-crust pastry (even hints of tablet), with antiseptic cream and coal smoke in the distance. The taste is sweet and very salty, with clean smoke and a floral aftertaste. Water takes us to a rock pool, then public swimming pools and foot-baths – with plastic water-wings and beach-balls bobbing in the background. The taste remains sweet and salty, with a peppery finish and ash in the aftertaste, with traces of Coal Tar soap.

Drinking tip: On a warm machair beach

Remarkable for its age, the nose suggested unripe green fruits, stewed rhubarb, lemon bonbons, mint, golden syrup and Werther’s butterscotch. It reminded us of grappa, tequila, pear schnapps etc. The substantial palate delivered apple sours, lime fruit pastilles and red cola – a caustic/sweet combination so juicy it had us slavering like Boss Nass berating Jar Jar Binks. The reduced nose had apples sautéed in butter and raspberry jam pips – and woody, earthy, floral notes inspired the gardeners among us. The palate now had tart toffee apples and Key lime pie – very interesting indeed. The distillery was built by James Buchanan.

Drinking tip: To accompany light gardening or an episode of Star Wars

A land of sweet and spicy fragrance

Speyside, Deveron

Our panellists found the nose attractive, though quietly assertive – beyond a freshly-painted dentist’s waiting room, was a land of sweet and spicy fragrance – ginger, nutmeg and clove, toffee, raisins and croissants, banana, orange, balsamico, cigars and cognac. Water added apple cider, fresh laundry, lemon balm and lemon barley water. The palate bestowed superb, exquisite sweetness, like heavily honeyed Lindisfarne mead, but also some lively taste impressions of salted beef, pretzels and grappa. With water, sweetness persisted, but we now discovered spearmint and lemony hot toddy with liquorice allsorts on the finish – very quaffable indeed. The distillery name means ‘big stream’.

Drinking tip: A pleasant summertime, ‘déjeuner sur l’herbe’ kind of dram

This is the first ever Talisker release which has been double matured in ruby port casks. This unique expression is named after the main trading port on Skye and combines Talisker’s powerful maritime character with succulent sweet notes of rich berry fruits for a superb contrasting taste experience.

Smooth and cooling at first; rapidly developing across the palate. Earthy South American cocoa notes – perhaps in a tarte au chocolat – are balanced by a fruity, cherry acidity; then a wave of softly drying sulphurous smoke and coal tar notes; and later, superb, chewy, brewers’ chocolate-malt. Very soft and cooling with water. Rounded and gently minty with resinous notes just ahead of a sublime, smoky, tarry development. Growing sweetly fiery and aromatic (burning beech wood logs at a Bavarian smokehouse).

Made from 100% Canadian two-row malted barley in small batches in a custom built copper pot still, it is bottled exclusively as single cask offerings in individually numbered bottles. We never chill-filter or add aritificial colouring. Quantities are limited and we are sorry that we cannot take advance orders or reservations.

Ka Va Lan Whisky in Canada – arriving in BC!

Sitting on the east coast, Ka Va Lan is the largest single malt whisky distillery in Taiwan. (See Mark Gillespie’s Whisky Cast on Ka Va Lan: http://youtu.be/WVIHFPFONB0). The Ka Va Lan Distillery is owned by one of the largest food group “King Car” in Taiwan. With the ambition to craft the best whisky from Taiwan, the whisky team spent one month in 2003 in Scotland in search of the perfect distill shape and variation in whisky making.

Ka Va Lan obtained consultation from Dr. Jim Swan on crafting the whisky flavours fitting for a hot and humid tropical weather in Taiwan. They utilized the bio-chemical lab King Car company owns to produce a special yeast that will yield tropical flavours. To date, there are four single casks variation and four core range malts. In addition, there are mystery casks such as ex-Laphroaig casks, peated malt, etc. aging in the warehouse. Since 2011, single cask purchases are being offered to the public.

The whisky distillery was built in 2005 with a purpose to be a tourism destination. The current visitor center can easily accommodate two thousand people, and a cafeteria serving their award winning coffee, snacks and delicious hot lunches. There is also an in-house shop showcasing the King Car group variety of products. Currently there are 45,000 barrels in the aging process, separately housed in two warehouses.

TALISKER INTRODUCES NEW PORT-FINISHED SINGLE MALT WHISKY

Following the successful launch of TALISKER STORM™ in March, the famous Single Malt Scotch Whisky from the Isle of Skye is now acquiring another new family member, this time enriched by double maturation in port cask wood.

It has been named TALISKER PORT RUIGHE™, after the principal town and port on the Isle of Skye, and as a tribute to the great Scottish trading-houses such as the Cockburns, Grahams and Symingtons who braved the high seas and were instrumental in the creation and global growth of the port wine trade.

TALISKER PORT RUIGHE combines the powerful smoky maritime character of Talisker with succulent sweet notes of rich berry fruits for a superb contrasting taste experience. (Full tasting notes)

Like the recently released Talisker Storm, TALISKER PORT RUIGHE is a permanent addition to the current core range of Talisker single malt whiskies. It is being introduced to offer Talisker consumers a further intriguing flavour dimension of this celebrated and distinctive island single malt whisky.

It will be available from mid-April 2013 in whisky specialist retailers in Western European markets. Talisker Port Ruighe will have a Recommended Retail Price at a premium of 20/25% to the price of Talisker 10 year old. It is bottled at the traditional Talisker strength of 45.8% ABV, without an age statement.

Master Blender Maureen Robinson explained:

“Talisker Port Ruighe is a combination of spirit that has been matured in American Oak and European Oak refill casks in the traditional manner along with spirit that has been filled into specially conditioned deeply charred casks.  The spirit is then finished in casks that have previously held Port Wine which  endows it with spicy fruit notes. These bond elegantly with that clean, fresh smokiness that signals its essential Talisker character.”

Talisker Distiller Manager Mark Lochhead added:

“Talisker lovers are getting spoiled this spring! After Talisker Storm, which has been very well received, we’re now offering a contrasting taste experience that will intrigue whisky drinkers who enjoy a hint of aromatic fruit and richness with their Talisker smoke. It’s still very much a true Talisker, but from a different, memorable angle.”

TALISKER PORT RUIGHE – TASTING NOTES

Appearance: Dark, rich amber gold.

Nose: Sweet smokiness of a fading wood fire with the fruity richness of ripe plums. The smoke soon parts to reveal a layer of honeyed malt and creamy toffee. Further in, there’s a subtle medley of cedar-wood,  menthol  and refreshing red  fruit, gently edged by dark chocolate and vanilla. It’s softer with water, but still sweet, with smoke and maritime notes. Ripe red fruit emerges on a bed of rich, sweet toffee, while the smoke recedes in favour of floral notes on a buttery biscuit base, still with hints of menthol and cedar.

Body: Medium. Softly textured.

Palate: Smooth and mouth-coating: the spicy pepper on the tongue rapidly grows into peatiness with a difference, as a creamy smokiness mingles with spice and dark fruits. The earthy, soft notes found in a fine chocolate tart are balanced by the bite of red fruit, cherry or plum; then a wave of softly drying volcanic smoke introduces superb, mouth-filling  malt.  It’s softer and sweeter with water; rounded and minty, with that spicy wood leading a sublime, smoky-savoury and sweetly aromatic flavour development.

Finish: Long, memorable and mouth-filling, leaving on the tongue an appealing and intense cocoa-rich drying smokiness.
