WORK BEGINS ON NEW SPEYSIDE BISTRO AT COLEBURN DISTILLERY SITE 

The owners of the historic Coleburn Distillery have broken ground this month with plans for first phase of Whisky Resort at Coleburn granted.

Moray Council has approved plans for an on-site bistro at Coleburn Distillery in Longmorn, Elgin, marking a significant milestone in the site’s wider master plan to create a world-class whisky and hospitality resort, anticipated to be the first of its kind globally.

With an opening targeted for late autumn this year, The Kitchery at Coleburn will be housed within the former Piggery building. Once used for livestock, the structure is being thoughtfully reimagined as a contemporary bistro showcasing food and drink rooted in locally sourced Scottish produce. The project carefully adapts the historic building for modern use while preserving its original character.

Developed in collaboration with award-winning design studio Significant Others, the project reflects a multi-million-pound investment in the famous whisky region. It is expected to create 15 direct jobs, alongside additional opportunities across the local economy, particularly in agriculture, logistics, and hospitality.

“Opening the space as an initial introduction to the site establishes it as an integral part of what will be a much larger offering, giving visitors the opportunity to return year-round, follow its progress, and enjoy the food and beverage experience. Central to the overall project is the sense of community and coming together, and we can’t wait to welcome people from both near and far to the new bistro in the heart of Speyside.”

The architectural approach to The Kitchery draws on traditional forms, thoughtfully balanced with contemporary interventions. New glazed façades will create  a warm and inviting arrival, drawing visitors into the space. The building’s elongated form has been used to choreograph a considered customer journey, with each stage offering a distinct and evolving experience, reinforcing a sense of quality and discovery throughout.

The experience will begin with a welcoming bar and retail space. From there, guests will move into a private dining and tasting room, divided by a bespoke stave wall that offers a sense of separation while still feeling connected. Beyond this, the space will open out into a relaxed bistro, with a mix of cosy booths and flexible seating for up to 62 guests. At its heart, a chef’s table-style finishing kitchen will add a touch of theatre, bringing energy and interaction to the dining experience.

Materiality will play a central role in shaping the interior atmosphere. Warm leathers, natural timbers, aged copper, and backlit rippled glass combine to create a rich, layered aesthetic rooted in the spirit of the distillery while delivering a fresh, contemporary feel.

Construction began on the site last month, with the installation of a biomass boiler implemented as part of a broader commitment to sustainability, in collaboration with Reheat.

“We’ve been working with the team at Coleburn on how best to underpin their operations with low carbon energy for some years now, and it’s fantastic to see this first practical step being taken on their journey to bring their plans to reality with the installation of a district heating network to meet the heating and hot water needs of multiple buildings on the site.”

“There are many more steps to follow, but their decision to opt for a biomass system underlines their commitment to the local economy, local sourcing, and doing things the right way from the off, plus a project combining listed buildings, district heating, a hospitality setting, and whisky is at the centre of our competence Venn diagram.”

At the end of last year, The Distillery at Coleburn unveiled its first collection of whisky bottlings, the ‘Local Heros’ collection, which brings together exceptional whiskies under a unifying vision, celebrating the makers, custodians, and enthusiasts whose passion continues to connect local heritage with a global whisky community.

The inaugural release introduced three blended malts bottled on-site in Speyside, comprising ‘Sweet Peat’, ‘Big Smoke’, and ‘Sherry Bomb’, each offering a distinct flavour profile.

Coleburn Distillery, located in the heart of Speyside, is being brought back to life as part of a landmark project to create a world-class whisky and hospitality destination. Once a working distillery, Coleburn is now being reinstated as a fully operational site, complete with a new distillery and visitor bistro in the first phase of development.

Future plans include whisky lodges, Pagoda penthouse and bistro, making Coleburn a true destination for whisky lovers and visitors from around the world. At its core, the project is about reviving the Coleburn spirit and offering a premium whisky experience rooted in heritage, craft, and place.

Tasting notes:

Nose: Rich and indulgent, the nose opens with honey-roasted cashew, cinnamon and milk chocolate-coated strawberry notes, alongside granola and marmalade on toast.

Palate: Nuttier than the nose, hazelnut and walnut notes emerge, alongside dried figs, apricots and raisins. There’s a smattering of baking spices, all set within a rich, creamy, vanilla-like texture.

Nose: Sweet Peat opens with traditional confectionery shop notes, backed by plums, orchard fruits, caramel and a subtly elegant earthy smoke.

Palate: Like a dessert trolley, fudge, honey and cake-like notes build on the palate, alongside marshmallow and gently floral incense. More of a bonfire-like smoke builds.

Glen Scotia to bring new whisky festival to Luss this spring 

Campbeltown distillery Glen Scotia is bringing the spirit of Scotland’s smallest whisky making region to Luss this spring with a new two-day whisky festival.

The ‘Glen Scotia Mini Malts Festival’ (16–17 May) is a smaller, more intimate counterpart to the distillery’s annual Campbeltown Malts Festival, a fixture in the global whisky calendar.

Attendees can enjoy Glen Scotia’s impressive portfolio of single malt whiskies while discovering how the distillery creates its signature character through a series of experimental tastings inspired by its latest releases.

Taking place at Luss Distillery – the newly opened state-of-the-art spirits destination of Loch Lomond Group (owners of Glen Scotia, Loch Lomond Whiskies and Ben Lomond Gin) – the event is a more accessible alternative for those unable to make the trip to the “wee toon”, being located under an hour from Glasgow.

The venue will be transformed to create a mini Campbeltown, with a Glen Scotia pop-up bar offering drams of this year’s Festival Edition bottling and a selection of exclusive single cask releases from the Campbeltown Malts Festival in recent years, which are highly limited and much-loved drams selected by Master Blender, Ashley Smith.

There will also be two unique tasting sessions:

  • A ‘Deconstructed Campbeltown Malts Festival Release 2026’ – an in-depth tasting exploring the individual components of the annual limited-edition festival release, unearthing its distinctive flavour profile and what makes it such a sought-after dram.
  • The ‘Big Campbeltown Character Tasting’ – a chance to discover Glen Scotia’s signature style through a guided tasting of its hero 12 Year Old expression, highlighting its characterful tropical fruit and coastal spray flavours, and exploring the elements that give it its distinctive oily texture.

Distiller Glen Scotia has been producing single malt whisky in Campbeltown since 1832 and is one of three surviving distilleries in Campbeltown. To this day, the distillery team follow in the footsteps of their founders, using traditional methods to create the subtly maritime style the brand has become world-famous for.

Recognition of Glen Scotia’s style and craftsmanship continues to be acknowledged globally.

  • In 2021, Glen Scotia’s 25-Year-Old single malt was awarded ‘Best In Show Whisky’ at the San Francisco World Spirits Competition. Over 3,800 entries across thirty-one categories were judged with Glen Scotia being awarded the overall winner across all countries and styles. Only seven months later, Glen Scotia was also named Scottish Whisky Distillery of the Year at the Scottish Whisky Awards 2021.

  • In 2024, Glen Scotia received a number of prestigious awards across its range of single malt whiskies, including Platinum titles at the San Francisco World Spirits Competition 2024 for both Glen Scotia Victoriana and Glen Scotia 25 Year Old.
  • In 2025, Glen Scotia was awarded several notable industry awards across its core range whiskies including Glen Scotia Double Cask Rum being named the best Campbeltown non-age statement whisky, as well as winning platinum accolades for Glen Scotia 15 and 25 Year Old, and gold for Glen Scotia Victoriana at the San Fransico World Spirits Competition 2025.
  • That same year, Glen Scotia 15 Year Old was also awarded gold at the International World Spirits Competition.
