We’ve been exploring Scotland and its 120-plus distilleries for the last decade, and part of that journey is finding new and interesting bottlings to offer our customers. However, sometimes you have to step back and appreciate the pillars of an industry for what they are. Not only is Talisker one of the most recognizable single malts in the world, but it’s widely considered one of the very best distilleries of any kind anywhere in the world. While only a small fraction of the malt distilled will ever be sold as a single malt, the distillery’s releases are roundly lauded as the highest quality.

Today’s featured bottling wonderfully captures all the best characteristics of this cherished distillery. Having bottled a few casks over the years, we’re starting to get a sense of the potential of this incredible whisky. At around the eight-year mark, the spirit takes on a new complexity that the younger versions lacked. Adding to the deep briny Talisker character, expect rich, fresh whole grain bread, roasted lemons, almond butter, camphor, raw honey, and freshly shucked oyster. While Talisker is not the peatiest whisky in Scotland, it does offer the most authentic “Island” experience available, transporting its drinkers directly to the Isle of Skye without the hard edge smoke of the south coast Islay distillers. Of all the incredible casks we’ve sold this year, this might be the most interesting. A truly eye-opening offering from one of Scotland’s true “Grand Cru” distillers.

2009 Talisker 8 Year Old “Old Particular – K&L Exclusive” Single Barrel Cask Strength Single Malt Scotch Whisky (750ml) ($72.99)

Talisker has sort of this mythical quality in the pantheon of great malts. The majestic distillery on the banks of Loch Harport has long been a staple of any good Scotch selection thanks to its inclusion in the original “Classic Malt” line-up. While it was always one of the more available high quality malts on the market, Talisker was almost NEVER bottled by independents. Word was that Diageo prohibited the sale of casks to blenders under that name, but a special few bottlers, like Gordon & Macphail, had access to filling contracts which allowed them to use the name. Needless to say, the mark was exquisitely rare and we had never tasted a single cask until our friends at Douglas Laing offered one up a few years back. We’ve since bottled a few of these, but have yet to find one as special as this one. While Talisker is moderately peated (circa 22ppm) it has an ocean quality that is almost unmistakable. It’s difficult to pinpoint just where these mindblowing flavors come from, but it must be some combination of the peat and the unusual five still set up. The extreme saltiness makes you believe it’s peatier than it is, but actually it’s the bold malt that is coming through more than the peat.

There’s always a risk when you pick rare casks from a blue chip distillery. Not to mention the fact that you’ll need to pay a bit of a premium, but also these sorts of casks receive an extra dose of scrutiny from our discerning customers. It’s not enough to put out a cask of Talisker just because you can. It needs to be special. We’ve done it a few times in the past and while all those casks were good, none broke the threshold for true greatness like this one has. The 8 year age statement from Talisker is a historical one and the distillery has an incredibly rare LE making the rounds in Europe right now. So we thought we’d have a crack at filling the void that product has left for lovers of the old still on Skye. Here is what to expect. The nose is all salt and lemons. Touches of sourdough and pumpernickel. Not at all as spirity as past barrels have been. We’ve really turned a corner here in terms of maturity. Some big salted orchard fruit chopped and wrapped in nori. On the palate, big ripe Meyer lemons and salty smoke. Tons of grip and bold peat. It’s always surprising that Tali shows so much intensity of smoke and salt when the peat levels are only around 16-20 ppm (half of the big boys on Islay). Savory herbs, fennel, lovage, coriander, but very clean and pointed. With water, the brine fully takes over. For those who like ’em salty, you’ve found your malt. Basically seawater. Easily one of the best young Taliskers I’ve ever had.

While independent casks of Tali are indeed rare, this bottling is perhaps as classic as Talisker gets. Until 1998, Talisker’s predominantly available malt was 8 years of age. Check. The remote distillery on the Isle of Skye with a very long history has always been unique. Its five still setup really utilizes the wash stills’ unique shape to produce a huge amount of reflux without a ton of copper contact. This contributes to the fruity, yet full bodied and peppery nature of the house. Add to that the peat smoke and saline environs and you have a splendid combination that defines the malts of Talisker. All of that is on full display here. Check, check. It’s like sucking down a fresh oyster while sitting on a beach with a blazing fire keeping you warm. Add to that some salty snacks and you have yourself a Talisker afternoon. The malt carries through in a big way here, there is tons of rich cereal to stand up to that incredible and unwavering salinity. Add to that a chance to enjoy it at full proof and you’ve got the real deal.

From my experience young Talisker selections are really good. They are lively, expressive and delicious. This Old Particular that was distilled in 2009 is no exception. Without the addition of water the nose is smoke and sea and the mouth is sweet and round. It is the addition of water that makes this product shine. The smoke and sea aromas open up and become more pronounced. The flavors are more open to taste with sweet malt, salt and a kiss of smoke coming through.

Step forward and give yourself to the embrace of the ocean. Shake hands and mingle with Leviathans, Krakens and Cthulus, while you share in this mystically wonderful sea-sprayed scotch. The nose of the 8 Year Old Particular Talisker Single Barrel is a powerful melding of seaweed and pepper, with some rich, smoked fish pâté both on the nose and the edges of the palate. Touches of candied citrus rind (more bitter than sweet), with another big dose of smashed peppercorn on the finish. I love Talisker, and found this to be a serious treat, not to mention a re-affirmation of the truly special quality on display at this distillery.

The first sniffs of this bottling remind me of going to the deli and getting cured, pepper-crusted meats. This is Talisker at its full robustness – it’s bold, brash, and unflinching. Because of the young age, the peat feels fully present and this quality pairs perfectly with Talisker’s core characteristics of black pepper spice and sea salt brine. But underneath all that power, there’s a delicacy here as well. There’s soft vanilla notes and some honey sweetness, and there’s scents and flavors of candied tropical fruits and dehydrated pineapple. The more I nose my glass, the more prominently these fruity dessert elements come out. The palate reverses this power-to-delicacy dynamic with the initial flavors focusing on those tropical fruit notes before the spice and smoke come out and build. As the finish comes on, the spice warms the entire mouth and leaves me with the flavors of ash and smoldering campfire embers.

“There is not perhaps a distillery in Scotland that has so many private customers as Mortlach from whisky spirits are sent not only over the three kingdom’s to families, but to America, India, China and Australia, in all of whisky Mr. Cowie has customers that prefer his distillation to others.” Elgin Current 1868

Mortlach Distillery dates from 1823, But it was not till railroad surveyer George Cowie came in 1853 that its reputation began to soar. He became sole owner in 1867, and began a tradition that continues to this day. George’s son Alexander took over in 1897 after studying at the University Aberdeen and medical service in Vienna and Hong Kong. Working with distillery architect Charles Doig he expanded the distillery expanded and and put the 2.81 distillation process in place.

The distillery is in Dufftown, the first of seven in that highland town.

Mortlach Distillery is special as is the whisky, good portion of which goes into Johnnie Walker.

They use worm tubs for body and distill the whiskey 2.81 times. A smaller still is called The Wee Witchie .

s nice to see that they are releasing so very nice bottling. You will not go wrong with any of them. 

The 12 Y.O. is a wonderful sherried single malt is called The Wee Witchie good balance, nice all around, very nice finish. Has a little heat but a few drops of water puts it in a very nice place. Also Good Price.

The 16 Y.O. The Distiller’s Dram – Is going to be the sweet spot, it is the heaviest on the sherry, it has the heat as well, not in a bad way,and adding a little water really opens it up, nice balance, the finish is long and inviting, sit back for the ride. – A Cracker

The 20 Y.O. Cowie’s Blue Seal – 1973 Glenrinnes Lodge,                  This is an intricate whisky, recreating Dr. Alexander Cowie’s Private Stock, 12 bottles of a deliciously complex dram dating back to 1909 that his daughter found hidden when his house was renovated .

I have a feeling that there are single malts in this bottling older than the 20 Y.O. Statement maybe by 3-5 yrs., maybe even by 5 – 10 years. Could this blend contain whisky up to 30 Y.O.? – I am not sure.

I am sure that all 3 of this distilleries bottling are Very Good – Very Good All Around . You will not regret any of them. I will recommend to you what you will appreciate the most. You would regret having to wait for the next shipment to arrive.

TOBERMORY DISTILLERY CELEBRATES RELAUNCH WITH NEW SIGNATURE EXPRESSION

One of Scotland’s oldest distilleries, Tobermory, is celebrating its return to production following a 24 month intermission during which time the distillery team have been obsessively perfecting and crafting a new signature expression – Tobermory 12 Year Old.

During the past two years, the Hebridean distillery has been on a journey of self-discovery taking inspiration from the town and its colourful houses along the harbour. Tobermory has always sat at the centre of a vibrant and artistic community, which has shaped its expressive style. Today, this is borne-out with a bold, new confidence that is reflective of the creative and artistic talent across the Isle of Mull, as Tobermory showcases its craft and skill at distilling more than just memorable malts.

To celebrate the reawakening of Tobermory Distillery and the launch of its new 12 Year Old expression, two gallery unveiling events are being held in the UK. The first will take place in London on 27th March with the second event being hosted in Glasgow on 3rd April. They will reveal the vibrant new packaging, which is reflective of the distillery’s colourful Hebridean home, as well as offer the first tastings of Tobermory 12 Year Old.

An expression of the iconic coloured houses that sit on the harbour at Tobermory, the distinctive new 12 Year Old liquid is vibrant on the palette. Using non-peated barley and water from the distillery’s private source, the whisky is created using tried and tested methods that allow the art of the Hebridean distiller to shine through.

Guests will also have a unique opportunity to view two original pieces of art donated to the distillery by Catherine Ross, who completed the first Artist in Residence programme at Tobermory last year. Her works will be supported by photographer Euan Miles who has successfully captured the essence of the distillery and the island on camera, which in turn has been used to create standout packaging across all the spirits produced at the Hebridean Distillery.

Tobermory distillery has consistently been innovative and unusual, its lone existence on the Isle of Mull has nurtured an artisanal approach to whisky production over the centuries, operating two production cycles during the year. One to produce an unpeated malt, Tobermory while the other creates a peated version, Ledaig. This Spring will not only mark the return of whisky production, but it will also see the distillery venture into new spirits too and guests attending the two events will have an advance preview of what’s in the pipeline for 2019.

The shuttererd Cambus distillery had a spectacular history in the development of modern whisky and has had an equally important, albeit shorter and more recent, history in K&L’s direct import program. At the dawn of the 20th century not everyone was in agreement that grain whisky produced on a Coffey still could actually be considered whisky. The extraordinary quality of Cambus was a key component in establishing that precedent which is a huge part of today’s whisky trade. In fact, for many years, Cambus formed a large portion of Johnnie Walker Blue. Unfortunately for whisky fans everywhere, Cambus was closed by Diageo in 1993. As a result, every dram is a piece of history and one step closer to the extinction of a classic. With stocks dwindling, we are thrilled that we have yet again been able to grab a cask for your and our drinking pleasure. Nearly 30 years in barrel has resulted in this grain whisky being devilishly smooth. The soft fruit and surprisingly subtle barrel influence goes down much too easy.

Raasay Distillery Launches Bespoke 30 Litre Casks

Proud to chart its own course, Raasay Distillery has today (Wednesday 6th February) launched its bespoke 30 litre casks of Raasay Single Malt.

The new 30 litre ex-Speyside Scotch whisky oak casks are now available to purchase on Raasay Distillery’s website and in person at the distillery.

The smaller casks make the island’s first expression more accessible to whisky lovers and will sit proudly alongside the 190 litre first-fill ex-American whiskey casks currently offered by Raasay Distillery and maturing in the island warehouse. Wood from ex-Speyside casks has been carefully chosen for the smaller casks to ensure the flavours of the final whisky are finely balanced.

All Raasay spirit is produced and distilled on the island, using only Scottish barley, distillers’ yeast and mineral-rich water sourced and filtered directly from a Celtic well on site. A long fermentation period brings a rich, characterful flavour to the Raasay spirit before it even touches the oak of a cask. Once the spirit is ready, both large and small casks are filled by the distillery team and left to age into the first ever Raasay Single Malt.

Distillery Co-founder Alasdair Day said:

“We wanted to make our first single malt more accessible in these new smaller casks. Depending on the angels’ share, after three years we expect to get around 40 bottles from the 30 litre casks, each offering a distinctly different character of Raasay whisky to our other bottlings.”

The 30L casks are small enough to make a perfect present for a loved one or for a special event, while bars or hotels can opt to co-brand their cask and display it on the bar. While the whisky matures, cask owners can come and visit their cask, staying in Raasay Distillery’s four-star accommodation: Borodale House. After the whisky is bottled, owners can also keep their empty cask as a treasured memento.

In February 2019, the casks are currently filled with unpeated spirit at an alcoholic strength of 63.4% and the distillery will then move to heavily peated spirit later in the year.

Raasay Distillery:

Isle of Raasay Distillery opened in September 2017 and became the first “legal” distillery on the beautiful Hebridean island. Co-founded by Scottish entrepreneurs Bill Dobbie and Alasdair Day, Raasay Distillery is designed to produce a contemporary Scottish island malt and catapult Raasay into the global market as Scotland’s newest whisky producing island.

Raasay Distillery is proud to be one of the few 100% Scottish-owned Scotch whisky businesses in Scotland. On the site of the Victorian-era Borodale House, formerly the Isle of Raasay Hotel, is a state-of-the-art modern distillery, offering year-round tours and luxury accommodation, with, arguably, the best view of any distillery in Scotland. Isle of Raasay Single Malt will be lightly peated and fruity, utilising the best of the island’s natural elements and reflecting Raasay’s rugged natural beauty. Raasay Distillery uses water from an ancient Celtic well located behind Borodale House at every stage of production, from mashing to fermentation, to cask and bottling strength reduction, to retain natural flavours in the final whisky.

Working with local crofters, Raasay Distillery has successfully grown and harvested barley in a nearby field, the first time that barley has been grown on Raasay in over 40 years. In August 2018, the team produced spirit from the 2017 batch of Raasay barley crop, which will mature into the first ever single malt produced from Raasay-grown barley in 2021.

Raasay While We Wait is an independently bottled single malt – which has been crafted as an accurate preview of Raasay Distillery’s future core style. Designed as a peaty and fruity single malt, each iteration of Raasay While We Wait has been crafted through the vatting of two malts from a single Highland distillery – heavily peated at 45ppm and unpeated – matured in bourbon barrels and finished in Tuscan Montechiari wine casks.

Today (Thursday 14th February), Raasay Distillery will open up pre-orders for the first ever bottles of Isle of Raasay Single Malt in Scotch whisky history that will be shipped and delivered in time for Christmas 2020.

After a fantastic response from members of Raasay Distillery’s free to join Slàinte Club, the team are delighted to announce that the inaugural release is now publicly available to pre-order on Raasay Distillery’s website for £99.

Produced and distilled on the Isle of Raasay using only Scottish barley, distillers’ yeast, and mineral-rich water sourced and filtered directly from the distillery’s own well – the well of the pale cow/Tobar na Ba Bàine – this is a whisky with a truly Hebridean heart. A long fermentation period of up to 115 hours brings a rich, characterful flavour to this island malt spirit before it even touches the oak of the cask.

This first release of Raasay spirit has matured in first fill bourbon barrels at the distillery warehouse since 2017 and in its final year, it will be finished in Bordeaux red wine casks before being bottled at 46% ABV, non-chill filtered and naturally coloured.
