While we love the feisty punch of youthful Caol Ila, this whisky blew us away with its grown-up fruitiness that was perfectly balanced by a big and smoky backbone – honey-glazed hams, poached pears and bonfire embers. A 2001 Caol Ila single malt from indie bottler Gordon & MacPhail, matured in a single first-fill bourbon barrel for 19 years, before being bottled in March 2021 exclusively for The Whisky Exchange. Aromas of honey-glazed ham, aniseed and poached pears fill the nose, complemented by notes of black pepper, green apples and smoking bonfire embers throughout the palate.

We’ve had a consistent run of excellent casks under the Hector Macbeth brand over the last few years. This lot of ’97 teaspooned hogsheads from the G*******h distillery have been consistently exceptional. Many people loved last years expression which had spent over three years in an old sherry barrel, but others missed the purity and malty complexity of the unadulterated Wardhead that we’d bottled each of the previous two campaigns. Those whiskies, sold to our bottler under the Wardhead brand, were all distilled in February of 1997 and declassified by the distiller to be sold off to blenders. The Scotch industry is full of these unusual quirks and part of the industry’s charm arm the complicated relationships between various distillers, blenders and bottlers. In the end, even a great brand like G*******h, the world’s best selling single malt, needs occasionally to generate cash flow in the moment. That’s why they’re willing to sell off tankers of their prized spirit under a different name, but we don’t really care what it’s called or that it’s listed as Blended Malt. All that matters to us is that it’s absolutely delicious. Expect a similar profile to previous casks in this lot, but here with more depth and richness. Expect orchard fruit, sweet malt, honeysuckle and pink peppercorn. Delicious and complex with a vivid delineated fruit that seems to be a hallmark of these gorgeous old ‘G*******hs.

NOSE: Ripe bananas, raisins, pineapple and hints of mocha.
TASTE: Brimming with raisins and almonds, followed by pineapple, mocha and cinnamon.

Glenallachie Distillery is a Speyside distillery sitting on the eastern edge of Ben Rinnes mountain where it is rather exposed to the elements and is often to be see sitting within the snowline. A modern building and its architect William Delmé-Evans created a distillery which is rather pleasing on the eye. Glenallachie was commissioned in 1967 with two stills which increased to four in 1989 in order to meet blenders ever increasing demand for Glenallachie malt whisky. Whilst official releases are few independent releases are more numerous with those from Signatory Vintage and Cadenheads proving popular.

BRUSH CREEK DISTILLERY EXPANDS FIRST LINE OF SPIRITS INTO TEXAS AND COLORADO

Four Ultra-Premium Products Introduce True Spirit of the American West to First Markets Outside of Wyoming

(Saratoga, Wyo.) – August X, 2021 – Brush Creek Distillery, a small-batch distiller set in the one-of-a-kind epicurean center of world-renowned Brush Creek Ranch, announced today the launch of its first line of Brush Creek spirits into Texas and Colorado – the first markets outside of the Distillery’s home state of Wyoming. The spirits are distilled and crafted on-site at The Farm at Brush Creek, embracing Wyoming’s local and natural resources and using the finest ingredients. The first batches of Brush Creek Straight Bourbon, Brush Creek Straight Rye can now be found in liquor stores, restaurants and bars across Texas and Colorado.

“The heart of our vision has always been to share the inspiration and pioneering spirit of the West with others,” said Andrew Wason, Managing Director of Brush Creek Distillery. “Due to the small-batch nature of our system, these spirits are very unique and exclusive, and we are elated to launch them in the first two markets outside of Wyoming.”

Wason helped launch Brush Creek Distillery in 2019, fulfilling a long-held vision to produce spirits at Brush Creek Ranch. Earlier this year, the Distillery appointed Philip Mundt as Head Distiller and Production Manager. A native of Colorado and previous Production Manager at Stranahan’s Colorado Whiskey, Mundt brings more than a decade of industry experience to Wyoming where he oversees all operations at the Distillery. Wason, meanwhile, will spearhead traditional product expansion in Indiana and Kentucky later this year with additional e-commerce market expansions in California, Florida, New York and Illinois.

The team at Brush Creek Distillery looks to their environment and the Western landscape for inspiration and collaborates with The Farm at Brush Creek to foster sustainability, promote innovation and produce spirits using mountain water and sustainable practices. Spent grains from the production of bourbon and rye are shared with local ranchers and Brush Creek Ranch where Executive Pastry and Bakery Chef, Keisha Sanderson, uses the grains in the creation of “Spent Grain Bread.” Empty barrel char is used in the cheese and ice cream making process at Medicine Bow Creamery.

The four ultra-premium products now available in Texas and Colorado include:

  • Brush Creek Straight Bourbon: A unique four-grain blend, showcasing the beauty of multiple straight bourbon whiskeys from storied programs born in Kentucky, Indiana and Tennessee, matured at high elevations under Wyoming’s bluebird skies. The product and its unique mash bill are the result of over two decades of industry experience, strong friendships, a passion for excellence and the pursuit to celebrate the American West.
    • Tasting Notes: Bold aromas of malt and dried cherries mingle with hints of new leather and thyme. A well-balanced combination of vanilla, fresh caramel, bakery spices and toasted oak delight on the palate. A long, rich finish with hints of cinnamon will call you back again and again.

Laphroaig 25 Year Old is a rare and desired annual release, from one of Scotland’s most iconic distilleries. With spirits aged in ex-bourbon casks, carefully matured for 25 years, this non-chill filtered malt is a subtle and elegant Whisky featuring notes of sweet vanilla, oak and signature Islay peat smoke. The exceptional character of this expression, intertwined with Laphroaig’s signature flavours, makes it truly one to savour.

NOSE

Sweet and floral with honey and pear drop. Bubble-gum and strong thyme fragrance linger on the nose. Pot-pourri and geranium with light carnation and white pepper, fresh peat, Islay seaweed with a hint of lemon complete this complex aroma.

PALATE

Sweet, herbal and medicinal with notes of heather honey and light wood smoke, lime, salt, iodine and black pepper marinade, spices. Also carnation, clementine zest and medicinal notes.

FINISH

The finish is dry with notes of spring flowers and a hint of sea salt.

SERVING SUGGESTION

Neat, or with a few drops of water and at least 45 minutes of your time in a comfy chair to be able to savor the last 25 years this liquid has been maturing patiently for.

It was distilled in 2017 and bottled this year after being matured in a refill American-oak bourbon barrel that used to hold smoky spirit from the south coast of Islay.
