168-Year-Old Brand Resurrected in Bardstown

FRANKFORT, KY.— The Kentucky Distillers’ Association today announced Bardstown’s Chicken Cock Whiskey as the newest member of the non-profit trade group that unites and leads Kentucky’s signature Bourbon and distilled spirits industry.

A historic brand dating back to 1856, CEO and Founder of Grain & Barrel Spirits, Matti Anttila, rediscovered the brand in 2012. It was fully revived in 2017 through a collaboration with Bardstown Bourbon Company.

The distillery opened in 2024 and is located at 103 East Stephen Foster Avenue just off the town square. Chicken Cock Whiskey proudly boasts a diverse portfolio of offerings, a brand home and micro-distillery named Circa 1856 in Bardstown, Ky., and a production operation. Circa 1856 showcases the brand’s portfolio through tastings, cocktails, and single pours.

Antilla said that joining the KDA is a milestone to celebrate.

“As we join the KDA, we join a network of distillers that have cherished and refined the traditions of Bourbon-making, just as we have with Chicken Cock Whiskey founder James A. Miller’s vision,” he said. “We look forward to building on our brand’s long history as we build up Kentucky Bourbon.”

A Class B licensed distiller, Circa 1856 can produce 2,000 gallons annually using a 30-gallon still. Its brands include a Kentucky straight rye, a small batch Bourbon, and a double oak whiskey, alongside annual and exclusive releases.

Nelson County boasts eight distilleries that create more than 4,600 Bourbon careers with $273 million in payroll. Each year, distilling in Bardstown generates about $2.8 billion in economic impact and more than $36 million in local and state taxes.

From a regional standpoint, Nelson and its surrounding counties have 13 distilleries responsible for nearly 8,000 jobs and a $470 million payroll. Bourbon brings to the area an annual economic impact of $5.2 billion and nearly $65 million in local and state tax revenue.

The Bourbon Capital region also welcomes more than 700,000 visitors to the KDA’s famous Kentucky Bourbon Trail® tour each year, pouring even more money into local hotels, restaurants, shops, and government coffers.

Bardstown is one of four official Gateway sponsors of the Kentucky Bourbon Trail®. There are six KBT® distilleries in Nelson County. As a KDA member, Chicken Cock Whiskey will be eligible to join the Bourbon Trail™.

Douglas Laing – independent Scotch Whisky Blenders, Bottlers and Distillers – is excited to announce their latest creation: a premium hand crafted, small batch cask aged cocktail, the ‘Big Peat Boulevardier’.

Building on the success of the renowned Big Peat Islay Blended Malt brand, the Big Peat Boulevardier promises to delight fans of both classic cocktails and Islay whiskies. This exceptional small batch creation bursts with smoky, sweet, and bitter notes, offering a unique twist take on the classic Boulevardier.

The Big Peat Boulevardier has been aged in a single ex-Big Peat Islay cask before being bottled at 29.5% ABV, with only 450 bottles available. This limited release showcases the classic Islay peat smoke and sweet Malt notes, perfectly balanced with rich spices, oak, and a touch of bitterness.

Created with providing an easy serve in mind, all that is required is to simply pour over ice, stir, garnish with an orange peel and enjoy our take on this iconic cocktail.

White Peak ramps up Wire Works Caduro with Cask Strength release


White Peak – Derbyshire’s award-winning distillery – is revealing a cask strength edition of one of its signature whiskies this autumn – Wire Works Caduro Cask Strength.

The latest Wire Works release – the name given to White Peak’s range of whiskies – is a limited-edition vatting of the Distillery’s lightly peated house style of single malt, matured in a combination of American first fill ex-bourbon casks and the distillery’s signature STR casks (re-conditioned wine barriques that have been shaved, toasted and re-charred). The vatted spirit has spent a further 18 months marrying, resulting in a rich and intricate harmony of Caduro’s cereal, fruit and honey flavours.

Bottled at a natural cask strength of 58.0% ABV, Caduro Cask Strength is only available in the UK direct from the Distillery and through select trade partners. For the gifting season this release marks a Wire Works first and will be available in a special re-cyclable presentation box.

The original award-winning Caduro was released in March 2023 and was the first permanent edition to the Wire Works Whisky range, named after the global cable brand that was once made onsite by Johnson & Nephew at the former Wire Works, the Distillery home since 2016.

Claire Vaughan, co-founder at White Peak, said: “It’s exciting for us to reveal a cask strength version of one of our signature whiskies. We’ve pushed our house flavour profile with this cask strength spirit, amplifying the fruit notes found in our main Caduro release to bring out more richness, complexity and depth of flavour and allowing the drinker the ability to find their own sweet spot. As with all of our Wire Works whiskies, nothing has been added during the process and there has been no chill-filtration.”

On the nose, pear drops, baked apple and banana notes, moving into more unctuous rich flavours on the palate: marmalade, treacle tart, milk chocolate and nutmeg, with a balance of grapefruit zest. And the finish delivers more sweetness with bonfire toffee, cinnamon and crème brulee, alongside a hint of smoke.

Caduro Cask Strength will be available from 1st November via the Distillery shop and online, as well as from trade partners, RRP: ÂŁ79 per 70cl.

Caduro Cask Strength tasting notes:

ABV: 58.0%

Overview: Orchard fruits, ripe banana and candied ginger on the nose. Marmalade, dried fruits, cereal and honey on the palate. Baking spices and bonfire toffee on the finish. Full mouthfeel, with a wisp of smoke.

Nose: Pear drops, baked apple, banana, orange zest, nutmeg, white chocolate, fudge, marshmallow, marzipan, popcorn, burnt sugar.

Palate: Marmalade, treacle tart, liquorice all-sorts, tobacco, milk chocolate, grapefruit zest, meringue, baklava.

Finish: Bonfire toffee, mace, citrus, cereal, allspice, cinnamon, crème brulee, and a wisp of smoke.

An Island Excursion with Chorlton Whisky – Island Scotch Whisky News

Off to the islands we go!

It’s Mull first for an 18-year-old Ledaig. Delighted to bottle another of these after a bit of a gap!

So, on the nose I find tarry peat smoke, vats of sea water, lanolin-heavy wool, black treacle, barbecued lemons … it’s Ledaig in other words! I also get a bit of coal tar, smoked almonds, waxed jackets and sweet BBQ sauce. These are all good things.

The palate feels sort of weighty and lively at the same time – salty and peaty, with lemon and lime syrup, shellfish stock and tar. Again, Ledaig! I also get some miso caramel, langoustines on the barby, kejap manis, and Fisherman’s Friends, before a long and very coastal finish.

These noughties batches of Ledaig are just impeccable spirit, and here it’s been matured for a decent time in a cask that’s done nothing more than add a thread of sweetness and allow some complexity to develop. Keeping it simple.

This ex-bourbon hogshead produced 239 bottles at a cask strength of 56.3% and they are available for ÂŁ145 each.

Next up it’s a 15-year-old Jura. This is sort of the opposite of the last bottle in that I’m a Ledaig fanboy and a card-carrying Jura-sceptic. This one won me over though!

One the nose it gives an impression of being waxy and oily, with custard creams, banana, salty sea air, limestone, and a bit of smoky grist. I also get some weissbier, serrano ham, white flowers, mango chutney and orange boiled sweets.

The palate starts sweet and citrussy, with an oily texture. I get spiced orange, herbs, rye and a touch of eucalyptus. The development is long, slightly smoky, lemony and really quite salty. The aftertaste is lovely, with sweet citrus and touches of Ricola sweets.

There’s lots of character here, and a proper maritime feeling, but packed into a dram that feels fun and easy-going. The strength is perfect for this too. If you generally like Jura then you can’t go wrong, and if not then it may convince you! I really like it.

This bourbon barrel produced just 201 bottles at a cask strength of 52.8% and they are available for ÂŁ82.50 each.
