Bimber has developed such a good reputation in such a quick fashion from alot of people I respect in the YouTube world. However, I’m yet to really understand what it is they’re trying to do and who they’re directly appealing to with these releases.

This is part of The Undeground series, referencing the tube stations throughout London. Kings Cross St. Pancras is a tube station I’ve been through after a drunken Saturday night, prior to COVID. And I must say that watching numerous people throw up and sit dazed on a bench made more sense than this whisky

The quality inside the bottle is poor, let’s keep it simple. But these bottles are being encouraged to be opened…but are mostly being sold through auction buy flippers or being held onto in order to develop a full collection. So who is this aimed at, Bimber? Are you wanting everyone to open it and enjoy? If so, what’s going on with the flavour, and indeed the price? Or is it purely for the collectors market to fund the distillery? Because if it is the latter, it doesn’t bother me, but atleast be honest about it.

Now I haven’t tried the rest of the collection, and this is of course a personal opinion, maybe I got the worst one of the four? Maybe I’m right? Let’s see.

Happy September. I hope you had a wonderful summer, and that this finds you and yours well!

The last few months have been a very busy time here at KWM. We have been hard at work getting our new website ready to launch, which finally went live last week. In addition to a new, modern look, it is also more streamlined and even more secure. We also now have the ability to add content for Distilleries, Independent Bottlers, and Wineries to product descriptions. We are really excited about it and hope you love it as much as we do.

Though it is up and running, it is still far from complete. Who would have thought it would take so long to re-photograph more than 4000 products and update all their descriptions… We are also still finding and working out bugs as we go. Thank you for your continued patience while we continue to polish it up!

While the weather is still fine, at least in this part of the woods, there is that unmistakable chill in the air which is a reminder that there are cooler months ahead. Whether you like it or not, winter is coming…

Truth be told, I love winter in Calgary. Sure it can get cold, but if you accept and embrace it there is much to love. Skiing, skating, snowshoeing, fat biking, and sitting by the fire enjoying a good book or sharing drams with friends. December may be the darkest and one of the coldest months of the year, but it also gives us Christmas, Hanukah, Festivus, New Year’s, and Whisky Advent to look forward to… which brings me to the reason I’m writing you today.

The design of the KWM 2021 Whisky Calendar will be revealed in late September!

The KWM Whisky Calendar, aka “25 Days of Dram Fine Whisky”, is back for the 8th straight year. Once again the calendar will have a fresh new look, which we will reveal in late September. This year’s calendar includes 24 50ml premium whiskies, a custom logo Glencairn glass, and a 100ml Scotch Malt Whisky Society whisky for Christmas Day. You can follow along on the KWM Blog starting December 1, or one of our various social media channels as we introduce and discuss each day’s whisky. And there is more…

Last year, inspired by Covid and the rise of Zoom events, we held 5 Whisky Calendar Recap Tastings throughout the month of December. They were such a big hit, that we knew we’d have to bring them back again this year. Accordingly, we will hold tastings for participants on December 5, 10, 15, 20, and after Christmas on 29th. Each of them will cover the 5 prior day’s whiskies in the Calendar.

The whiskies this year include 3 KWM exclusive casks, a number of whiskies in their 20s, and more than a dozen distilleries and producers never before featured in any of our prior Whisky Calendars. We also worked hard to keep the pricing as reasonable as we possibly could this year, which wasn’t easy. Prices have been rising across the board, and supply chain issues have affected everything from the availability of glass and cardboard to delays in shipping and bottling. Never the less we are confident that we have put together another amazing product this year, and we know you are going to love it!

Best of all, if you select the pre-pay preorder option, you will save $60. This option was very popular last year, and completely sold out 2020’s original production in just 2 weeks!

We anticipate the KWM 2021 Whisky Advent Calendars should be ready for pick up in early November. That is, as long as everything goes as planned… which in the Covid Era you can never be 100% sure of. But we’ve planned accordingly and ordered early from all of our suppliers!

Irish and US distilleries collaborate on transatlantic project to explore role climate plays on whiskey taste

A major transatlantic project is underway to study how weather and climate conditions affect the taste of whiskey matured 7,000km apart.

An Irish distillery has teamed up with a family-run operation in Colorado, US, in a move which saw both simultaneously fill a total of 14 casks due to mature in 2026.

Boann in Co Meath and Talnua in the Centennial State are using exactly the same recipe, containing ingredients from their respective localities.

The unique initiative will examine how the Irish and American climates will influence the finished, single pot still whiskey once it is botted in five years’ time.

“This is much more about experimentation than a commercial enterprise,” said Peter Cooney, co-founder of Boann, whose World’s Best mashbill recipe is being used by both distilleries.

“We are sharing exactly the same recipe and types of barrels. But Colorado has a dry climate in a high-altitude, desert environment with low humidity, as opposed to our more stable mild, wet climate.

“The maturation conditions will be very different so we want to see exactly how that will influence the flavours in five years’ time.”

Talnua (an abbreviation of the Irish ‘Talamh Nua’ or new land), is steeped in Irish heritage – husband and wife owners Patrick and Meagan Miller fell in love with single pot still whiskey after tasting it in a Galway pub during their honeymoon in 2011.

Seven years later, they set up the first distillery exclusively making it in the US.

A relationship between both operations was formed when Boann’s Global Export Sales Manager, Matt Healy, met and interviewed the Millers in Arvada, Colorado, while on business in the US.

Both distilleries kept in touch – and earlier this month, at exactly the same time, they filled their casks with spirit containing 40% malt, 55% unmalted barley, 3.75% oats and 1.25% rye.

“These kind of projects are what distillers really get excited over,” said Patrick Miller.

“A collaboration bringing a Single Pot Still Whiskey project across the Atlantic showcasing the difference in flavour profiles between Ireland and Colorado is truly special. It’s an amazing project that highlights the Irish-American bond.”

Last year, Irish whiskey sales in the US generated almost €1billion worth of revenue for distillers here.

Data shows more than five million nine-litre cases of Irish whiskey were sold across the States.

During the Boann-Talnua project earlier this month, the Meath distillery filled six 200-litre casks at their plant outside Drogheda, but to account for evaporative differences, Talnua filled eight, meaning around 2,800 litres will be available by the autumn of 2026.

By then, whiskey enthusiasts will be able to buy two 375ml bottles – one each of the American and Irish-distilled, paired together in one pack.

Tasting sessions in the US and in Ireland are also planned after maturation.

Craft Whisky Club – Rare Ohishi Box For US Members – Japanese Whisky News

Popular whisky subscription service Craft Whisky Club has just teamed up with Japanese whisky brand Ohishi on an exclusive offering, which is bringing whisky from Japan finished in Banyuls casks to the US shores for the first time.

Unique provenance, local ingredients, and profound savoir-faire, Ohishi is a relatively unknown distillery to even the dearest whiskey fans. Banyuls is a French appellation d’origine contrôlée fortified dessert wine made from old vines. Although the use of fortified wines to mature whisky has a long and celebrated history, including Sherry and Port casks, to see a whisky finished in a Banyuls cask is a rarity indeed. This gives this unique Japanese whisky a rounded, fruity profile with notes of jam and candy.

The release is so limited that each bottle has been hand labeled.The Ohishi Distillery was founded in 1872 and is currently operated by 6th Generation Master Distiller Kazunori Oishi. The distillery is located in the south of Japan in a small village called Mizukami-Mura in the Kuma-Gun region of Kumamoto. It is only in operation about 8 months out of the year when temperatures are right for the best fermentation.

From casks to pairings, locally-produced to the exotic, learning and exploring the world of whisky is a fundamental part of the whisky experience. Every 2 months resident experts at the Craft Whisky Club carefully select exciting and innovative distillers from across the world.
