WhistlePig Rye

WhistlePig Straight Rye Whiskey is a 100 proof, 100 percent rye whiskey, aged for a minimum of ten years in oak barrels. The whiskey was discovered by Master Distiller Dave Pickerell, who spent over a year on an exhaustive search of North America for the best rye whiskey, and he believes that it embodies the perfect combination of
proof, percent, and age — hitting what he calls “the sweet spot” in all three categories. WhistlePig Straight Rye Whiskey is hand bottled at the WhistlePig Farm Distillery in Shoreham, Vermont and is available in a limited initial offering of only 1000  cases.

Maker’s Mark 46*

To make “46”  fully matured Maker’s Mark is removed from its barrel. Top hoops are removed from the barrel, and the barrel head is pulled. Ten wooden seared staves  are then affixed to the inside of that barrel. Searing the staves caramelizes the sugars in the wood, adding a unique flavor that finishes on the front of the tongue.

The fully matured Maker’s Mark is then put back in the barrel and aged several more months. When it tastes exactly right, Maker’s 46 is removed from the barrel, bottled, corked and dipped.

The taste is rich, creamy with seared-oak flavors; caramel and vanilla notes linger on the front of the palate, but it is still soft enough to hold on the tongue even at 94 proof.

* 46 was the profile number assigned by barrel maker Brad Boswell to the process  used to sear the oak staves that proved successful in creating the taste profile that Master Distiller Kevin and Brad had been working to achieve.

Slane Castle Irish Whiskey

This unique Whiskey blend has been distilled by the nearby Cooley Distillery, which won the European and World Distiller of the Year at the 2008 International Wine and Spirit Competition.  It is a well balanced blend of malt and grain Irish Whiskey which has been aged and matured for at least four years in American oak barrels that previously matured Bourbon. In the traditional Irish style, the malt whiskey is distilled in copper pot stills and no peated malt is used. The whiskey was recently given a four star rating by the leading American sprit critic F. Paul Paucult of  The Spirit Journal who stated that the Slane Castle Irish Whiskey ‘builds nicely and steadily in the glass with time, providing the drinker with whiskey of substance, gravitas and multi-layered aroma and taste.’

Jack Daniels: American Forests

Jack Daniel’s Tennessee Whiskey is partnering with the non-profit organization American Forests to release a limited Edition collectible bottle in conjunction with a tree-planting effort. American Forests, a world leader in planting trees for environmental restoration, will plant a tree with the purchase of each collectible Jack Daniel’s bottle. The whiskey is bottled at 90 proof which is higher than the black label’s 80. Consumers who register the special collectible bottle at www.jackdaniels.com will also receive a free copy of the award-winning American Forests magazine.

A bottle of Ballantine’s 30 Year Old whisky was presented to Edoardo Molinari in recognition of his Barclays Scottish Open victory on Sunday 11 July.  The Italian champion left an impression by securing his first career European Tour crown, winning by three shots at Loch Lomond.

Molinari, who first hit the headlines by winning the US Amateur title five years ago, is now ranked 19th in the world after his 2010 Barclays Scottish Open win.

Ballantine’s was a sponsor of The Omega Mission Hills World Cup, held in China, which Edoardo Molinari won in 2009 alongside his brother, Francesco.

Fitzpatrick Kaiapoi Single Malt Whisky

Malted and Distilled in the true traditional style, this Whisky has a subtle nose that almost hides the rich depth of malt that covers the palate and warms the soul.  Incredibly smooth, oak characters perfectly balanced with deep malted body.  Long seemingly endless finish, rich and deep, leaving a warm glow and dancing malted after.

Fitzpatrick Kaiapoi Single Malt Whisky is truly something very special.  Distilled in New Zealand at  Kaiapoi Distillery, using  a 140 year old John Dore  Pot Still (known as the Rolls Royce of stills)   This is a true flavour Still that achieves a depth of Malt Flavour, while separating a purity of spirit, until now unseen outside the Highlands of Scotland.

This triumphant first release of 2000 bottles makes this Whisky very rare and sort after.

It has taken my family Three-generations working towards our first release of single Malt Whisky.  With a benchmark of quality that has required much patience, distilling technology that requires a depth of precise knowledge dating back to 16th Century, and a love of Whisky in its purist sense. The techniques of Distilling was passed to us by the the great master distiller, Ernest Bangs. Master distiller to the company J & W Nicholson of London, established in 1736.

Due to the limited edition nature of this product we have no hope of supplying the demand for this Whisky, but aim to provide allocations to those in deserving markets.

A lightly peated English whisky from St George’s distillery ‘down south’. Bottled May 2010 – a mix of just four first-fill ex-bourbon barrels distilled May 2007 and bottled June 2010.

Opened at the end of 2006 and the only registered distillery in England producing malt whisky. Situated near Roundham between Cambridge and Norwich in Norfolk, south east England. Barley grown locally and water from deep beneath the distillery. Two small stills producing around thirteen barrels of spirit per week, just one more than one of the smallest distilleries in Scotland.

New 2010 release. Tremendous value distillery botlling of the sherry matured Speyside single malt. This 40yo is a truly amazing whisky, so fresh and vibrant for an old whisky.

Founded 1836 and purchased by John Grant and his son George in 1865. Ace sherry casks underpin the ethos of Glenfarclas, having released its first cask strength single malt way back in 1968.

Tasting Notes

Nose: Reminiscent of relaxing in an old leather armchair while eating walnuts and chocolate covered raisins. Palate: A sweet initial taste, orange segments dipped in liquid chocolate. Then a lovely flavour of burnt brown sugar at the back of the mouth. The dry finish oozes big tannins and more rich dark cocoa beans. Let the whisky breathe a little or add a drop or two of water to fully open up the dram.
