Mark Dermul, Belgian whisky blogger, releases another malt under the MMM label. Glentauchers is a lesser-known Speysider – founded in 1897 – that mainly focuses on producing malt whisky for making blends with Ballantine’s being the best known. There are hardly any official bottlings, but through  independent bottlers you can occasionally taste it. Now Mark & Manny have found a fantastic cask – a sherry butt, by the way – with Glentauchers from 2009. It’s already their 26th release and we’re once again enjoying a beautiful label with the art of Ansgar Speller. The color palette also betrays their subtle support for the people of Ukraine.

A collaboration with the Roca brothers to capture the essence of the city 

The Macallan has released Distil Your World New York, an exceptional single malt whisky and documentary that capture the essence of one of the most iconic cities in the world.

Crafted by The Macallan Whisky Maker Polly Logan in collaboration with the Roca brothers, owners of El Celler de Can Roca, twice named Best Restaurant in the World, Distil Your World New York embodies and celebrates the city as a dynamic metropolis of art, creativity and visionary talent.

It marks the latest release in the series of limited edition single malt whiskies and gastronomic creations exploring leading locations around the globe.

To uncover the mastery behind New York, Polly and Joan Roca travelled to the city to spend time with the artists who fuel its vibrant culture; the visionaries driving its inimitable creativity; and the thinkers chronicling the city.

Their journey and the people they encountered, including globally acclaimed jazz musician Wynton Marsalis and legendary street artist Lady Pink, are featured in a new 30-minute documentary which premiered in New York before its release on Amazon Prime Video and YouTube in April 2022.

The Macallan Distil Your World New York A – Credit Christina Kernohan

Created from a combination of six European and American oak casks, the whisky reflects the distinctive artistic character of New York, its towering architecture, and the culinary eclecticism offered by its delis, diners and street food.

Building on the subtle apple notes already characteristic of The Macallan – a fitting flavour for the Big Apple – Distil Your World New York also offers the sweetness of classic American candy, with nods to peanut and chocolate. A whisp of sidewalks portrays the bustle of the city while uplifting citrus represents the skyscrapers that dominate the skyline.

The Macallan Whisky Maker Polly Logan said: “This project is a homage to the people of New York. The daring, creative and diverse characters we’ve met along the way. This whisky is bold, vibrant and uplifting – just like each of them.

“We really looked towards the quintessential tastes of New York – sweet candy, waffles, peanut brittle, chocolate, and pecans. The city’s thriving street food scene was a great source of inspiration.”

The Roca brothers also created a unique menu designed to take diners on a journey through New York. Their creations include a potato cronut with salsa brava, waffles with chicken pâté and sugar cane syrup and cured and smoked strip steak. The Big Apple, their masterpiece dessert, features a caramel apple filled with fresh apple purée and milk chocolate.

Joan Roca said: “The originality of New York is endless, it’s impossible to portray it with just one creation, so we needed to express it through an extended menu, where every dish tells a story. The city grabs hold of you instantly. Its energy pushed us to create a complex and daring menu, with ideas that we explored for the very first time.”

Distil Your World New York is housed in a white presentation box featuring an engraved aerial map of New York. Bold touches of blue on the box and bottle represent the water that surrounds the city and the buildings which reach into the sky. As well as the whisky, the box contains a book documenting the different inspirations behind this single malt, and the craftsmanship involved in its creation, alongside New York photography.

The Macallan Distil Your World New York is a limited-edition release with an RRSP of $4,200 for the 70cl bottle and $4,500 for the 75cl version.  It will be available at select The Macallan Boutiques around the world, in premium specialist retailers and in exclusive premium non-specialist retailers from April 2022.

Two exceptional names in their respective fields coming together in this extremely rare and unique offering. The Single Malt spirit was distilled on February 5th, 2009 and shipped to the Burgundian cellars carved in the rock in Bouze-les-beaune. There it was filled into 5 casks that had previously held the exquisite Vin Jaune from one of the Jura’s finest producers, Stephan Tissot. After decades being used for this unique wine, something in between grand cru Burgundy and fino sherry, the barrels are completely impregnated with the complex flavors of the special wine. The two producers traded barrels and there is indeed a small batch of Vin Jaune from Mr. Tissot that is aged in ex-whisky barrels from Couvreur’s cellar. But it seems that the whisky maker probably had the better deal, since these old casks are very hard to pry from the cellars of the Jura producers. After 10 full years maturing in the most humid part of Couvreur’s cellars this whisky is now brimming with the intense energy of the special wine that was once made in these barrels and the enigmatic man who made them. At full cask strength here with no additives of any kind except for 10 long years in Couvreur’s underground cellars. The whisky displays strong deposits (the lees and the voile) as the barrels were filled fresh without any intervention to remove the leftover wine deposits. This whisky loves a drop of water (just one) to open up the rich complexity and vibrant intensity.

From Euan, our spirits manager: There’s a beautiful balance to this, which was first matured in bourbon hogsheads before we transferred it to 125-litre oloroso quarter casks that were supplied to us by our partners in Jerez, José y Miguel Martin. After that, we put it back into second fill bourbon barrels that we’d recently emptied, giving it time to relax and marry before bottling. The result is a superb dram with the big, dark and intense flavours you would associate with oloroso sherry maturation, but with the lush tropical notes from the bourbon casks as well.

Dunkeld Distillery, Perthshire (Part 1 of 3) – Whisky Tour News

Dunkeld Distillery, Perthshire

A community led distillery with an immense respect for the place called home. Based in a converted farm steading, it’s not about disrupting the landscape but as much part of the landscape as the trees that surround the farm and it will stay that way. Dunkeld is but a wee drive from where I (PAUL MCLEAN) live in Perth, I couldn’t let this go un-noticed eh? So I chatted to them and drew my own conclusions and – history.

A wee bit of whisky history; DUNKELD DISTILLERY A distillery in Dunkeld, a small town and seat of a catholic bishopric beside the River Tay in Perthshire. Perthshire had a remarkably large number of ‘legal’ distilleries in an era when illicit distilling was rampant may be attributable in part to the Customs and Excise officers in the region being very efficient but also to the county’s landowners pushing any would be distillers to go legal, so as to avoid problems for themselves. Dunkeld Distillery was located in Atholl Street, which is the main street, with no burns or other water sources nearby. Perhaps it had water piped from the River Tay or took its’ water from a now lost stream, who knows? The distillery operated briefly twice over 12 years, first under James Duncan and Co. from 1825-26, then under Charles Douglas and Co. from 1834-37.  Then … Birnam Distillery (also known as Dunkeld) stood beside what was then the main road between Perth and Inverness – the A9, which now bypasses the town of Birnam. To the east of the old site is the Inchewan Burn, which flows eventually into the Tay. Water for the distillery would have been drawn from the burn via a lade. After tracing as much info as I could, some may feel this is a wee bit confusing.

Battle of Dunkeld – 17th century Scotland, at a time when King William was yet to wholly solidify his position on the British throne and on the back of a significant Jacobite victory at Killiecrankie. The Jacobites began an assault on the eastern end of the town. The defenders, not able to effectively hold such an open space, fired on the attackers and pulled back across the Market Cross to a barricade at the end of the street called Scots Raw, setting fire to houses as they withdrew. The Stewarts of Appin attacked the Cameronians that were holding the cathedral. Along the riverbank, the Stewarts stormed a row of houses and used them as fighting positions against the cathedral. The Jacobites were pressing in hard and the Cameronians, who were left holding only the cathedral, Dunkeld House, and a few houses, were running low on ammunition, and lead was stripped from roofs and melted down for musket balls. After four hours of fighting the battle had reached a stalemate.

The Jacobite casualties at the battle of Dunkeld were between 150-300 men killed with the same number wounded while the Cameronians (government) lost around 50 men killed and many more wounded. Only three houses survived the battle, with the rest of the town destroyed by fire. Lieutenant-Colonel William Cleland was later laid to rest in Dunkeld Cathedral. The Jacobites withdrew back to Blair Castle and the army soon dispersed to gather in the harvest.

I chatted to Phillip the Founder; “Whisky can be long in the making but even longer in the reawakening. After an absence of over 200 years, whisky making will be brought back to Dunkeld Distillery. With the revival led by myself and fuelled by community spirit, Philip, fuelled by community spirit, guided by micro provenance and inspired by its’ beautiful Highland Perthshire surroundings, exciting times lay ahead and more history awaits”.

It would be good would it not, to engineer that the first release from this new distillery could be called Jacobite, or have some relevance to the battle.

Whisky Charity Auction in Aid of Ukraine

Releasing Its Third Bourbon since the Company Brand Revival

LEXINGTON, KY— Kentucky Senator’s third Bourbon offering, the John G. Carlisle Release, is hitting shelves this summer. This highly-anticipated release is labeled after the esteemed U.S. Senator John G. Carlisle because he was a stabilizing force in the liquor industry and a leader of the Bourbon Democrats in Washington D.C. He was a major advocate for the Bottled-In-Bond Act of 1897, which is celebrating its 125th anniversary this year. Aged seven years in oak barrels, this pleasantly sweet Bourbon is 107 proof with a mash bill of 75% corn, 21% rye and 4% malted barley. The suggested retail price will be $119.99.

The limited edition release is available at liquor stores, bars and restaurants throughout Kentucky, with single barrel private selections at Liquor Barn, Party Mart and DEP retail outlets. The John G. Carlisle Release is also available online at www.BourbonOutfitter.com and will be featured at Jack Rose Dining Saloon in Washington, D.C. It has been distilled and aged in Kentucky, bottled at Bluegrass Distillers in Lexington and is being distributed by Kentucky Eagle Distributing.

“We’re proud to bring this third release of Kentucky Senator Bourbon to the marketplace,” said co-manager Andre Regard, “and in doing so honoring the father of the Bottled in Bond Act, Senator John G. Carlisle.”

“We are featuring the same mash bill as our second bottling, this time aged seven years,” said co-manager Damon Thayer. “As always, Kentucky Senator will be released at 107 proof. We continue our commitment to Kentucky’s fine Bourbon spirit and will continue to deliver superior taste and experience in each pour.”

The Kentucky Senator brand originated from Crigler and Crigler in northern Kentucky. The brand was later distilled and bottled by Double Springs Distillers, Inc. in Bardstown. Today, Kentucky Senator has been given a fresh look thanks to local managers Andre Regard and Damon Thayer. Kentucky Senator was featured last year in a Forbes article written by noted bourbon author, Fred Minnick. Minnick mentioned Kentucky Senator’s first release on his top 100 Whiskeys of 2021 and he named it the top-rated 15-year-old bourbon. Link to Article
