Glengoyne has always been rooted in nature. From malted barley and pure water to the land that sustains us, every drop of whisky begins with care. When year-round production challenged traditional practices, we found a beautifully simple solution: the Glengoyne Wetlands.

Twelve wetland chambers transform spent our spent lees into pure water that flows back to Loch Lomond, creating a thriving ecosystem of sedges, willows, dragonflies, bees, and birds.

Our commitment goes further. We support the Wildfowl & Wetlands Trust at Caerlaverock, restoring hides in one of Scotland’s best places to see geese – a fitting tribute to our name, Valley of the Wild Geese. And through Plan Bee, two hives which are home to 80,000 bees grace our distillery grounds, boosting biodiversity and producing a few pots of honey along the way.

Our efforts have earned Green Tourism’s top award for three consecutive years, but more importantly, we’ve created a sanctuary for wildlife and a cleaner future for whisky-making.

A remarkable 16-year-old whisky celebrating our partnership with the Wildfowl & Wetlands Trust (WWT). Proceeds from sales are being donated to further support WWT’s conservation work, helping to sustain ongoing projects and preserve wetlands that are integral to the geese in our glen and beyond. The latest expression from Master Distiller & Blender Kimio Yonezawa fuses world whisky tradition with Japanese craftsmanship, joining Hatozaki’s core range blended at the Kaikyō Distillery in southern Japan.

Hatozaki Whisky today announces the launch of its newest expression, Hatozaki Triple Cask Reserve, as a permanent addition to the brand’s portfolio. This latest expression showcases a rare finishing technique, Umeshu plum liqueur casks – a method rarely seen in the whisky world and uniquely rooted in Japan.

Hatozaki Triple Cask Reserve embodies Master Distiller Kimio Yonezawa’s vision of a delicate yet beautifully crafted “world whisky,” shaped by generations of Japanese craftsmanship.

A blend of hand-selected malt whiskies, Hatozaki Triple Cask Reserve is first aged in ex-Bourbon and ex-Sherry barrels, then finished for six months in superior Umeshu plum liqueur casks. Known in Japan as ume, Umeshu is a traditional liqueur made by steeping local green plums in alcohol. This additional maturation imparts delicate layers of zesty citrus, tea-like herbal notes, and a subtle plum sweetness, resulting in a complex flavour profile that sets this whisky apart.

Umeshu cask finishing is rarely seen in whisky production, highlighting Hatozaki’s innovative approach to blending whisky whilst rooting the product in Japanese culture and heritage.

“Finishing a whisky in Umeshu casks is rare in the whisky world, and I was eager to see how the Japanese plum liqueur’s flavours would transform the blend,” notes Master Distiller Kimio Yonezawa. “The umeshu influence adds an extra layer of depth and gentle sweetness that truly sets Triple Cask Reserve apart from more traditional whiskies.”

NOVEMBER 2025 AUCTION IN FULL SWING!

Our November 2025 Auction is well and truly in full swing, so it’s a great time to take a look at some of the old, rare and limited bottlings on offer this month, including this full set of Macallan Editions 1-6. First launched in 2015, the Macallan Edition Series expressions were intended to showcase Macallan’s diverse Oak Cask styles and their approach to whisky making. The series focuses on the different characteristics of the Oak Casks used in Macallan’s whisky maturation.  This set of six bottles includes Edition 1, presented in the extremely rare wooden box, rather than the standard brown box.

Distilled at Oban Distillery, this 16 Years Old was aged in Sherry Casks and bottled at Cask Strength in 1991 to mark the 200th anniversary of the distillery as part of the hugely popular Manager’s Dram series.

This expression of Laphroaig was bottled in honour of Bessie Williamson, who began her career at Laphroaig as a typist in 1934, before eventually becoming the first female distillery manager and owner in the 20th Century, making the distillery a global success. This well-aged limited edition expression was matured in American Oak hogsheads and refill Casks and is presented in a wonderfully crafted display box, giving it the appearance of a book.

Linn House whisky refers to a series of exclusive, limited-edition blended Scotch whiskies from Chivas Brothers, named after Linn House – the company’s private guest manor near the Strathisla Distillery. These whiskies are bottled at cask strength and are made from high-aged malt and grain whiskies, originally reserved for honoured guests but now also available to the public through the brand’s luxury experiences. Although there is no distillation date, the age of the whisky suggests that it would have been distilled at the latest in 1970, aged for 35 years and then bottled at Cask Strength in 2005.

I finally got the chance to taste one of the most ‘if I could, I would’ bottles in the world. Does it live up to its hype, or is it just a rich person’s everyday liquid?

There’s no doubt that Macallan has spent the time and money on making a great product. From the facilitating and building of a brand new distillery, one of the biggest in the world of single malt, to securing cooperages in both The US and Spain for maximum control over their barrel sourcing processes. So we’ve got a distillery making great spirit and sourcing some of the best wood from America and Europe. A big question, though, why is it all so expensive?

Even with all of this process and spending, is it that different to how many other distilleries spend countless time and money on sourcing casks? Yes, 90%+ of Macallan’s stock is all about sherry seasoning, but even so, does this warrant a double cost to the consumer for this process? So many questions.

Jumping into the whisky, Macallan 25 Year Old, matured in ex-sherry and ex-sherry seasoned casks, mostly European oak with perhaps a smattering of American oak running around in there. Bottled at 43%, natural colour, some chill filtration for consistency, as you would expect at £2,000 a bottle.

Eden Mill has cut the ribbon on its landmark new distillery and visitor centre on the banks of the Eden Estuary, just outside the historic Home of Golf. The multi-million-pound site combines modern sustainability with Scotland’s rich distilling tradition to create a new, world-class destination for both local and international visitors.

Guests can enjoy immersive whisky tours, shop exclusive bottlings in the retail space, and take in panoramic views from The Lookout – a top floor cocktail bar with views across the water towards the St Andrews skyline. The distillery, powered entirely by renewable energy, even boasts a state-of-the-art golf simulator for guests to use.

Euan Kinninmonth, Brand Home Manager at Eden Mill, said: “The vision was to create a distillery and visitor centre that would celebrate the town’s rich distilling heritage, highlighting St Andrews as a must-visit destination for spirits tourism. I’m delighted to say that this vision is now a reality. It’s a landmark moment – not just for Eden Mill, but for St Andrews as a whole.  

On a personal level, I will become the fourth generation of my family to work on the site of the old paper mill which is a real source of pride given I was born and raised in the area.

Creating 18 new jobs in the local area, the striking new venue offers a rich blend of tradition, innovation and hospitality. Immersive whisky experiences will allow visitors to explore the history and taste Eden Mill’s signature range and discover the stories behind their award-winning spirits.

For whisky aficionados, the Cask Mastery Whisky Experience will offer a chauffeur transfer to and from St Andrews, a journey through Eden Mill’s most premium collection of malts, and a behind the scenes visit to the ‘Distiller’s Lab’ and on-site cask warehouse.

The distillery also boasts a bright and contemporary retail space with an expansive offering. Eden Mill’s full range of whiskies are stocked, as well as distillery exclusive bottlings and locally sourced gifts such as prints, chocolates, and reclaimed whisky wood products.

At the top of the distillery, with panoramic views across the Eden Estuary, is ‘The Lookout’ – a 40-seat bar serving an eclectic list of classic and contemporary cocktails. Available for bookings and walk-ins from midday until 10pm all week long, the venue’s extensive drinks list is complemented by cheese and charcuterie boards sourced from a local deli.

As a nod to the brand’s provenance, Eden Mill has honoured the town’s affinity with golf by installing a professional golf simulator. The set up will allow golf fans to play The Old Course, as well as a number of famous Scottish and international courses, with a G&T in hand.

To mark the momentous opening, Eden Mill is releasing a single cask sherry matured whisky exclusively available to purchase from the distillery’s retail space. The Oloroso hogshead, which was originally filled in 2016, contained just 279 bottles, making this a truly rare and memorable release and it follows their other single cask expressions which have each sold out in a matter of hours.

Eden Mill distillery, established in 2012 on the banks of the Eden Estuary in St Andrews, was the first distillery to make spirits in the region in over 150 years.
