Subtle Spirits “STELLAR” Art by Kate Tova Straight Bourbon Whiskey – K&L American Whiskey News

Subtle Spirits “STELLAR” Art by Kate Tova Straight Bourbon Whiskey (750ml) $79.99 View

The intent behind STELLAR bourbon was simple; create an exceptional blend of bourbons in a larger volume than I had ever created before that would appease both the seasoned and new whiskey drinker alike. STELLAR Bourbon consists of a constellation of seven barrels. It is comprised of 6yr, 7yr, and 8yr straight bourbon whiskey, distilled from the two MGP rye-bourbon mash bills. 90% is made from ‘low-rye’ bourbon mash (75% Corn, 21% Rye, 4% Barley), and 10% from ‘high-rye’ bourbon mash (60% Corn, 36% Rye, 4% Barley). The seven barrels spent their life aging in new charred American oak from Speyside Cooperage, with a portion of the whiskey spending additional time in five different finishing casks. The final blend yielded roughly 288 gallons and went into a marriage tank at cask strength of 112.86 proof where it rested for two weeks before being cut to 100 proof. It spent an additional 6 weeks resting before being bottled without filtration. The precise make up looks like: 20% – 2 mos Fresh PlumpJack Estate Cabernet cask 20% – 3 mos Fresh Hanzell Estate Chardonnay cask 15% – 3 mos French Oak from Subtle Spirits, HODL #22 15% – 2 mos French Oak from Subtle Spirits, QUIXOTIC 15% – 2 mos European Oak from Subtle Spirits, Paper Trail 15% – New charred #4 Speyside Cooperage casks.

Black & White Scotch Whisky 1950 The Illustrated London News

When the blend was first made in 1879 was Initially known as Buchanan’s Blend and then House of Commons (after the British House of Commons), its nickname, referring to the black and white labelling, was eventually adopted as the official brand instead. The brand’s motif (featuring a black Scottish Terrier and a white West Highland White Terrier) was conceived by James Buchanan during the 1890s.

THE SECOND TOUR OF 2023 WITH MY PAL Ingvar Ronde – Malt Whisky Year Book News

THE SECOND TOUR OF 2023 WITH MY PAL Ingvar Ronde.

The last tour was back in April to Campbeltown, Arran and Islay. This one was Speyside again. Due to my ill health Marcus was driving both Ingvar and myself, made it easier to chat away as usual.

Ingvar arrived into Edinburgh late and stayed overnight, as did Marcus (ending another whisky tour) who met him 8am next day. They picked me up in Perth and we headed north, first stop Aberfeldy. Now I know quite a few folks there so no a new place to see.

INGVAR AT ABERFELDY DISTILLERY

Ingvar did his usual and we had tea and biscuits. Next up The Cairn Distillery in Grantown. Once again Ingvar did his research, we took the drivers share (tea and coffee) but also were given wee drams to take away, including a 70 year old blend! Last of the day; Dunphail near Forres, interesting wee distillery here, we all had the tour and chat with the guys there, before heading to our digs in Dufftown.

Ingvar and Marc

Staying with a friend of Ingvar Marc Pendlebury of whiskybrother fame, what a nice man! I had had email contact with him some years back, so nice to meet him in person, all the way from South Africa. He has a superb whisky bar/restaurant there.

Tuesday; away to Glendullan, no been there before, grand stuff. Then the newly opened to the public Speyburn Distillery, this will be on our tour list next year to be sure. Enjoyed drams and chat here a wee look around, thanks Alec. Linkwood – where the boys went in whilst I took time off. Benriach completed a busy day, again the boys went around, I chatted to a nice young lady in the bar, enjoyed a dram or two and a cocktail before they came back.  Back to Dufftown.  Marc’s bar was heavily hit by three visitors tonight, including complimentary drams  – much appreciated.

THE 1970

Wednesday; Tamnavulin, a favourite dram of mine. Toured with manager Leon, what a nice fella, good sense of humour, Ingvar and myself had a dram; Tamnavulin 1970, delicious, while Marcus was given a 1973 dram to take away!

Ingvar and Leon at Tamanvulin Distillery

Loved that visit! They plan a visitor centre, maybe 2025/6? Next, to Tormore, never been here either.   Sam was very nice, Weegie girl with the Glasgow humour, liked that. A tour and chat and teas, interesting, they too plan a visitor centre, maybe 2025?  Finally, after lunch we dropped in on Sandy at Tamdhu, as usual great fun and a few drams for us Marcus taking his away. Big developments there, hope to be back soon. Staying overnight in Elgin amongst antiques and five star comfort.

TORMORE STILL ROOM

Thursday we headed off to Glen Moray, been here so often seems like home. Ingvar went around while I chatted to Emma in the visitor centre, Marcus joined me later. We headed to Glenlossie/Mannochmore but the road was closed due to the rain, we drove plan B via BenRiach. Ingvar did both, we settled in the car to wait. A free afternoon, unlike Ingvar tours, we took our time in the rain and headed to Tarland Aberdeenshire, where we stayed overnight, a nice wee hotel for db&b.  This was day one of the storm and rain, it flooded a great deal of Aberdeenshire and Angus, rained all night, Angus (Brechin) saw a month of rain in a day! The hotel bar and restaurant was excellent, many thanks to all there, we enjoyed drinks and fun!

Friday after breakfast we had planned three visits; Fettercairn, Kingsbarns and Inchdarnie Distillery. Ingvar had been in touch the night before, and this morning, we dropped all three due to the weather conditions sadly, and drove west past Braemar to Dunkeld, avoiding the worst of the storm. From here to Edinburgh. Ingvar stayed here three nights, we came home to a waterlogged Perth and Carnoustie.

Another good, long, educational tour with pals.  Ingvar and myself are good mates, we take the Mickey out of each other, have lots of laughs and arguments (the nice kind, history and whisky), we are still working on his next tour for 2025, updates when we know more.

Thanks Ingvar, another excellent trip. A few pix to remember the tour.

Maker’s Mark® Bourbon Advances its Pursuit of Flavor Through Nature With the Filling of its First Certified Regenified Barrel – AMerican Whiskey News

Maker’s Mark® Bourbon Advances its Pursuit of Flavor Through Nature With the Filling of its First Certified Regenified Barrel

Historic milestone recognizes the adoption of regenerative agriculture practices in grain production as Maker’s Mark continues on its mission to act as a force for good

Loretto, KY November 29, 2023 /PRNewswire/ — Maker’s Mark, the iconic handmade Kentucky bourbon, is proud to announce the filling of its first Certified Regenified barrel of Maker’s Mark whisky. It becomes the first spirits distillate to achieve this certification designated by Regenified, a leading third-party regenerative agricultural verification and supply chain-solution company. With this certification, the brand continues on its long-term mission to cultivate bourbon that betters the world, while crafting the most flavorful product possible.

This historic barrel filling was made possible by the strong partnership and shared vision between Maker’s Mark and its long-term partner farmers in the Kentucky community who supply its corn and distinctive flavoring grain of red winter wheat, which together make up 86% of the iconic Kentucky bourbon’s mashbill. To be Certified Regenified, more than 75% of the grains in the mashbill must be sourced from Certified Regenified farms that have demonstrated a commitment, like Maker’s Mark, to restoring and revitalizing our most precious resource – our soil – through regenerative agriculture practices. Each of the brand’s corn and wheat farm partners achieved Regenified certification this fall.

“Today, I am proud to say that the Maker’s Mark fans know and love is being crafted, in large part, using regenerative practices that give back to the land more than we take,” said Rob Samuels, 8th generation whisky maker and grandson of the founders at Maker’s Mark. “When we commit to these practices, we are rewarded with a healthier environment, higher quality ingredients and ultimately, a more flavorful whisky. I couldn’t be more grateful to our grain farmer partners who have shared our commitment from the beginning. It’s a proud moment to have our efforts, together, validated and recognized by an organization like Regenified.”

Regenified was founded in 2021 by a team of regenerative farming pioneers, experts and innovators to promote regenerative farming practices and combat the decline of soil health due to intensive and unsustainable agricultural practices. The organization works with farmers and ranchers alongside food manufacturers and retailers to repair, rebuild, revitalize and restore the function of the ecosystem and preserve the soil for future generations. Through the Regenified verified label and their proprietary 6-3-4™ Verification Standard, Regenified helps farmers and ranchers understand where their practices and lands are on the regenerative path.

“Maker’s Mark’s step with their first Certified Regenified whiskey is more than a milestone; it’s a story of dedication and partnership with their farmers and the environment,” said Salar Shemirani, chief executive officer at Regenified. “As one of the first companies of its size and scale to genuinely embrace regenerative practices, Maker’s Mark is setting a new industry standard for others to follow. Partnering with their farmers, they are committed to achieving measurable and continuous improvement above and below the ground, for generations to come.”

Since its founding, Maker’s Mark has been driven by a sense of responsibility towards its shared natural environment. In addition to advancing regenerative agriculture practices in its own production, other recent initiatives from the B Corp certified brand include the establishment of the world’s largest repository of American White Oak trees for research purposes; a first-of-its-kind genome mapping project of the American White Oak species; and the establishment of a 78-acre Natural Water Sanctuary on its distillery grounds to preserve and protect the land that filters its water source now and in the future. The brand has also introduced new guest experiences at its homepace of Star Hill Farm designed to provide a deeper understanding of the agricultural, research and flavor initiatives happening on the property.

About Maker’s Mark®
In 1953, in Loretto, Ky. Bill Samuels, Sr., fulfilled his dream to create a handmade and delicious bourbon. He decided to make his whisky in small batches, using soft red winter wheat to enhance the softness and sweetness. He then rotated each barrel by hand for consistency and, finally, aged each barrel to taste. While he developed the bourbon, his wife Margie Samuels ideated the bourbon’s name and label, standout bottle shape, iconic and signature look that still involves hand-dipping each bottle in red wax to this day. Together as co-founders, Bill and Margie transformed bourbon from a “commodity” into a premium handmade spirit, and today Maker’s Mark® Kentucky Straight Bourbon continues to be crafted in the same, purposeful way.

In recent years, Maker’s Mark has introduced thoughtful, super-premium innovations to its portfolio, including Maker’s Mark 46®, Maker’s Mark® Cask Strength, Maker’s Mark® Private Selection and Maker’s Mark® Cellar Aged. Today, Maker’s Mark is the largest bourbon distillery in the world to achieve B Corp Certification and the first distillery to achieve Regenified certification, a reflection of the brand’s dedication towards building a more inclusive and sustainable economy.
