White wine cask finished Dailuaine?

It’s not a very typical sentence in the whisky world, but one we’re currently working with.

I bought this nearly a year ago on holiday. Buying whisky online whilst lounging the pool is quite a nice feeling. But, this one came with its quirks.

My first sip of it wasn’t my favourite. But overtime this has opened up into a very chocolate, fudget, nutty style of whisky – those notes alone aren’t very Dailuaine, but the pepper driven spice and dryness that comes out at the end of this liquid is something very different.

This was an impulse purchase, I don’t regret it. But I was hoping for a very different style of whisky to what I actually got.

The Dalmore Single Malt Whisky unveils The Distillery Select Series. 2024 marks the first of a new series of limited edition expressions. The collection features very rare parcels of spirit laid down in specific casks hand-selected by The Dalmore’s whisky makers. Each expression was selected to highlight how the casks enhance an element of The Dalmore’s signature house style. Each of the three whiskies is natural colour, non-chill filtered and bottled at specifically selected ABV.

The Dalmore Distillery Select 2009 Vintage Sherry Cask Finish (2024 Bottling), strictly limited to 2736 bottles only, RRP: £300. 

Aroma; Manuka honey, a hint of cinnamon, and banana bread

Tasting Notes; Orchard fruits, Golden Delicious apples, poached pears intertwined with Ogen melons

Finishing Notes; Sultanas, liquorice, mandarin orange and a touch of cacao

This 15 Year Old Single Malt is finished in exceptionally rare vintage sherry casks sourced exclusively from the finest wine makers of Spain, González Byass. Distilled in 2009 this rich whisky is bottled at 52.8% which allows the antique vintage sherry characteristics to shine.

The Dalmore Distillery Select 2007 Amarone and Port Cask finishes (2024 Bottling), strictly limited to 918 bottles only, RRP: £1,000

Aroma: Warm summer fruits, raspberry myrtle, succulent Victoria plums and maraschino cherry

Tasting Notes: Rich forest fruits interlaced with vanilla

Finishing Notes: Panna cotta, floral notes and a hint of violet 

This 17 Year Old Single Malt, distilled in 2007, is finished in a duo of casks, whose influence on the whisky fascinated The Dalmore’s whisky makers. Italian and Portuguese wine makers work hand in hand with nature to craft exceptional expressions of their estates. The marriage of each component creates a unique Single Malt Scotch whisky, an expression of Portuguese and Italian influences. Bottled at 45.8%, selected by the whisky makers to expose the complexity of flavour this expression offers.

The Dalmore Distillery Select 2000 Vintage Calvados Finish (2024 Bottling), strictly limited to 383 bottles only, RRP: £5,000.

Aroma; A dusting of sugared almonds, rich apple and plums

Tasting Notes; Red berries, freshly crushed apple and pears

Finishing Notes; Liquorice, antique wood spice and a touch of balsamic           

This 24 Year Old Single Malt Whisky, distilled in 2000, is bottled at 50.3% strength, selected to ensure the antique flavour characteristics of this very rare whisky shines. After an initial maturation in American white oak, allowing the spirit to settle and soften, this whisky is finished in hand-selected Vintage Calvados, sourced from the House of Drouin, France.

Chivas Brothers partners with Bairds Malt to establish sustainable programme with Scottish farmers

The Scotch whisky producer partners with Scottish barley growers, fostering sharing and collaboration to reduce its carbon footprint and help future-proof the industry

Glasgow, UK: Chivas Brothers, the Pernod Ricard business dedicated to Scotch whisky and makers of Chivas Regal and Aberlour, today announces a new agriculture programme supporting sustainable farming practices among Scottish barley growers represented by Bairds Malt and Scotgrain.

The pilot programme is a collaboration between Chivas Brothers, Bairds Malt, malt producer for the brewing and distilling industry in the UK and internationally, and Scotgrain, the leading Agricultural Merchant covering supply of arable inputs, agronomy, procurement & marketing of grains, oilseeds and pulses.

The partnership has been established with a view to working collaboratively to facilitate and further the continuous improvement on farm, and to help future-proof the livelihoods of farmers in regional Scottish communities. It is also intended to help secure the supply of barley – a critical ingredient in the whisky making process – and reduce Chivas Brothers’ indirect carbon footprint.

Roughly a third of Chivas Brothers’ carbon footprint comes from the growing and processing of its agricultural raw materials – including the manufacturing of fertiliser, production of barley and malting.

Chivas Brothers is one of the biggest purchasers of malted barley in Scotland – the majority of which it sources from Bairds Malt – underscoring the significance of this project and Chivas Brothers’ responsibility to the industry to invest in sustainability trials, research and information transfer.

The pilot programme, named the ‘Dalmunach Growers Pilot Group’, will run over a three to five-year period and is initially comprised of eight farmers who have voluntarily elected to be a part of the first on-farm trial. In addition to carbon emissions reduction, trials will cover various approaches both to improvements in soil health – to create a more resilient growing process – and biodiversity, from fertiliser use and cover-cropping to wildflower strips.

Ronald Daalmans, Environmental Sustainability Manager at Chivas Brothers commented, “Establishing partnerships with our growers represents a critical moment in Chivas Brothers’ sustainability journey. The ongoing impact of climate change means our growers are having to adapt their practices – and many are faced with tough decisions regarding sustainable practices because it is cost prohibitive to implement new techniques without certainty of how they’ll affect crops through the growing cycle. Working together makes us stronger – not only to reduce carbon emissions at pace, but also to provide invaluable insights that can benefit the farming community at large.”

Victoria Buxton, Agronomist and Farm Business Manager at Bairds Malt added, “We’re incredibly excited to have partnered with Chivas Brothers to establish a programme with our growers that looks at sustainable farming practices through on-farm carbon reduction, soil health and biodiversity. To have the support of Chivas Brothers reinforces that climate change is an issue that affects the whole supply chain and we’re all equally invested.”

Learnings and insights will be shared with the full cohort of roughly sixty farmers under the Bairds Malt and Scotgrain communities at regular Growers Group meetings, fostering knowledge-sharing for the betterment of the programme and each other’s operations.
