Tel Aviv – May 2021: M&H Distillery, Israel’s first whisky distillery, is proud to launch the Apex Series, an ongoing series of small-batch whiskies. For the inaugural release, M&H Distillery has unveiled four expressions from different unique cask types: Pomegranate Wine Cask, Chardonnay White Wine Cask,  French Limousin Cognac Cask and Fortified Red wine Cask.

This past year’s successful launch of M&H’s first core range of single malt whiskies resulted in prestigious honors including “Craft Producer of the Year” in Whisky Magazine’s 2021 Icons of Whisky (Rest of World) and Whisky Advocate’s “Top 20 Whiskies of the Year 2020” for the Classic Edition.

The Apex Series come to reinforce M&H’s continued commitment to experimentation and innovation without compromising craftsmanship and tradition. Matured under the unique Mediterranean climate at the Tel Aviv-based distillery and crafted by Head Distiller Tomer Goren, the Apex Series is the result of years of meticulous experimentation with special casks and celebrates Israel’s forward-thinking ingenuity, rich terroir and unique climate.

Apex’s first series includes a local Chardonnay Wine Cask from the renowned Castel Winery which brings forward earthy and grassy flavors; a Pomegranate Wine Cask, the first and only single malt whisky in the world aged in a rare variety of pomegranate wine casks, that was already awarded Category Winner at World Whiskies Awards 2021. The third offering, Cognac Cask, comes to reveal the finest flavors of French Limousin oak casks, and the last batch showcases a single malt whisky aged in a Fortified Red Wine cask.

The first markets to receive the Apex Series include the Netherlands, Germany, France, UK and the U.S.

SUNSHINE IN A GLASS – THE HIVE AND CLOUDY LEMONADE

Summer signifies long evenings and long drinks. Whisky highballs such as The Hive and Cloudy Lemonade make the perfect summer sippers, showcasing the brilliance of blended malt in mixed drinks. Here, we take a look at the art of blending and the beauty of a blended whisky highball 

Blending whisky is an art – and it is a big part of Scotch’s history. The practice was introduced in the 1860s by the ‘godfather’ of blended whisky, Andrew Usher in Edinburgh, and blending helped to put Scotch whisky on the world stage. Today, the biggest Scotch whisky brands on the planet are blends – and they date back to the same era.

Blended malt is just that: a blend of single malt Scotch whiskies from more than one distillery. And the beauty of a blend is that a skilled blender can accentuate certain notes, adding all kinds of nuanced flavours to create a whisky that is versatile. This makes blends a great bet for all kinds of drinks – from sophisticated solo sippers, right through to even the most complex cocktails.

Vibrant blend The Hive’s recipe is divided into three segments: the base, support and signature malts – and the whisky is created using all Speyside malts. Steven Shand, blender at Wemyss Malts explains that the region has a vast amount of single malt variety, including light, nutty, spicy, oily, light fruit, rich fruit, meaty and even smoky characteristics.

“The base of the Hive is made from a variety of Speyside malts to provide a malty, cereal-rich and sweet foundation to the smooth, medium-bodied blend,” he explains. “The support Speyside is richer, with dried fruit flavours and this adds some depth to the blend.”

Lastly, he says that the signature malt is an ester-rich malt with lots of citrus fruits and floral character, thanks to long fermentation times, clear wort, shell and tube condensation and the early cut point of the new make distillation.

“The combination of all of these variations of Speyside whisky lead to a sweetness that we describe as ‘sweet as honey’, as it has depth, richness and both floral and fruity notes,” he says.

At Wemyss, the blended malts are primarily aged in refill casks that showcase the fruity quality of Speyside. This helps with the consistency of the liquid from one year to the next. And it is also part of the fun of blending – first-fill casks, for example, can provide a range of intensity of flavours such as vanilla, coconut and spice. So, it really depends on what a blender is trying to achieve.

When it comes to using a blend like The Hive in mixed drinks,  Shand says the aim should be to use a soft drink that matches the sweetness and approachability of the whisky.

“Soda would have diluted and dried out the whisky and ginger beer worked OK, but overwhelmed the whisky,” he says. “A good quality cloudy lemonade really enhances the floral and fruity flavours in the whisky, while matching the same amount of sweetness.”

THE THREE CASKS UP FOR AUCTION ARE TOTALLY UNIQUE FROM HOLYROOD DISTILLERY’S PUBLIC CASK PROGRAMME MAKING EACH A VALUABLE COLLECTOR’S ITEM

Holyrood Distillery, Edinburgh’s first single malt distillery in almost a century, has partnered with Whisky Auctioneer to offer three “extra special” whisky casks up for charity auction.

Matured in ex-bourbon barrels, this is an excellent opportunity for whisky enthusiasts to get their hands on three rare casks as they are completely distinctive from Holyrood Distillery’s current ‘Made by Edinburgh’ cask programme, which is offered exclusively in a selection of sherry casks.

All proceeds from the sale of the casks will be split between Edinburgh charities Vintage Vibes, tackling social isolation in the community; Edinburgh Food Project, a local food bank charity; and The Drinks  Trust’s covid relief fund for the hospitality industry.

Whisky Auctioneer has agreed to waive selling fees and will donate the 10% buyer’s commission to the total hammer price raised for the three charities.

Each 200 litre cask will be filled with ‘Made by Edinburgh’ new make spirit, at an ABV of 60% and matured in a first-fill American ex-bourbon barrel.

As the public ‘Made by Edinburgh’ cask offering comes exclusively in a selection of sherry casks, the ex-bourbon maturation makes the charity auction casks a truly unique collectable. Having been distilled using single-origin barley from a Lothian-based farm and a proportion of crystal and chocolate malt, the casks offer full traceability from field to barrel.

A proprietary mash bill containing roasted and specialty grains and single estate Lothian farm barley, fermented with the iconic “Edinburgh Ale yeast” combine to create an entirely new spirit style, worthy of the city that inspires Holyrood Distillery.

With all auction proceeds flowing directly into three important local causes, the auction offers an exciting opportunity for whisky fans to get hold of these iconic casks, as well as the spirit of giving.

The Master Blenders’ Edition features Heaven’s Door 10-year aged Straight Bourbon finished in Redbreast’s signature Single Pot Still Casks for 15 months, extracting flavor from single pot Irish whiskey and formerly Spanish sherry. The end result is a taste profile unlike any American whiskey and delivers prominent notes of nuts, spice and leather, as well as the influence of sherry, citrus, dark fruit, and a subtle sweetness of Yellow Man from the Redbreast casks.

In-person teaching returns

We’re looking forward to getting back to Arniston House next month as our in-person whisky diploma courses resume for the first time since September. There are a few spaces available on the Diploma in Single Malt Whisky (Thursday 17 & Friday 18 June) and Diploma in the Art of Tasting Whisky (9 July), with further availability from September onwards.

We do hope to make more places available on all courses as the requirements for physical distancing are relaxed, so do keep an eye out for updates on our website and social media channels. We also have a full diary of dates for 2022, so, if you’re planning to join us in the future, let’s make it a date!
