We’ve teamed up with a collective of pioneering distilleries, each contributing their own unique character to a spirit that celebrates innovation, craftsmanship and the vibrant diversity of the English whisky scene, to create a blended whisky.

At the Cotswolds Distillery, we’ve always believed in setting new standards—from creating the first full-scale distillery in the Cotswolds to championing locally grown barley and traditional methods. Now, we’re excited to see our single malt play a key role in this delicious blend.

Crafted through collaboration and united by a commitment to quality, Pastures New is a bold step forward for English whisky. It’s a celebration of landscape, technique and shared passion—bottled.

BEHIND THE BLEND

EXPERIENCE N.22 // PASTURES NEW

This whisky was born in our London studio, tucked beneath the White Lyan pub on Hoxton Street. We opened the studio to build connections with distillers outside of Scotland, and through a series of events, we welcomed distilleries like Fielden, Cotswolds, and Thomson of New Zealand. As always, Pete being Pete, he couldn’t resist blending the samples they brought along.

English Whisky: An Exciting Evolution

English whisky is an exciting and diverse category. Without the constraints of tradition, distillers have the freedom to explore different grains, techniques, and styles—each aiming for the highest possible quality. The samples we tasted were filled with pride. The people behind them knew they were onto something big.

The idea to blend an English whisky was obvious. It’s what we do—every whisky we taste is immediately assessed for how it might work in a blend. And with the first samples—a combination of elegant Cotswolds, spicy Fielden, and others from distillers we admired—it was clear we were on to something special.

We didn’t realise the significance of what we were doing until someone asked, “Has anyone else done this?” After some research and input from the English Whisky Guild, we found that, to the best of our knowledge, no one had ever created a blended English whisky before. That’s when we knew we had something truly groundbreaking.

The Making of Pastures New

For our first attempt at this “world’s first,” we needed to ensure it lived up to the high standards of English craftsmanship. The English have set a benchmark for quality, and blending can sometimes be seen as reducing that quality. We had to find a way to surpass expectations—not just match them.

We sourced samples from four of England’s best distillers: Fielden, Cotswolds, Adnams, and Cooper King. Each brought its unique approach and flavour profile to the blend. The variety in grain, technique, and landscape is what makes this whisky so exciting.

A New Chapter for English Whisky

This is a special moment for English whisky, especially with the English Whisky Guild and their GI application for Single Malt. We’re honoured to have been trusted with these liquids, adding to the powerful narrative of English whisky. It’s a story of passion, patience, and commitment. But more than that, it’s a story of diversity—different places, different scales, different influences—all coming together in one bold, unified blend.

DECADENT DRAMS SMÖGEN – 8 YEAR OLD

The sibling bottling to our 10 year old 2014 Smögen, this is a 2016 that matured initially in two 1st fill oloroso sherry quarter casks, before being combined and re-racked into a 2nd fill sherry hogshead.

The resulting 8 year old has been bottled with a few degrees reduction to 57.1%. The result is a very sherried example of Smögen, where full sherry maturation has allowed maximum integration with the underlying heavy peat to make an amazingly intense, rich, umami and salty example with some really stunning sherry influence and power.

PalateOh boy! The most luxurious and sumptuous of Sherry bombs. This is so moreish you will need to hide the bottle. Sweet stewed dried fruit and nut, chocolate and ginger and cinnamon dance across the tastebuds. A touch of old leather and alcohol soaked prunes.

FinishThis is going to stay with you for an age! Delightful, playful and warming it’s way to the tip of your toes.

Orphan Barrel (Port Dundas) “Muckety-Muck” 26 Year Old Single Grain Scotch Whisky

Port Dundas closed in 2010, but small stocks still remain. The first single grain Scotch in the Orphan Barrel line, which seeks to highlight stocks of closed distilleries that remain in Diageo system. The distillery was established in 1810 and became a key component in the Johnnie Walker Blends for centuries. Per the producer: “The aroma starts with a burst of caramel and notes of baked sugar backed by the taste of crisp fruit and light toasted oak. The fruit forward flavor is blended with hints of butterscotch vanilla which carry through to the finish.”

The Hearach “Single Cask” No. 1050 K&L Exclusive First Fill Bourbon Barrel Cask Strength Isle of Harris Single Malt Whisky

The very first Hearach Single Cask ever to be released in the US and one of the first-ever bottled worldwide. If you haven’t been paying attention, the little distillery on the Isle of Harris is producing some of the finest whisky in Scotland. Produced in extremely small batches in and with a focus on quality and character overall. This single cask was filled into an extremely high-quality single bourbon barrel. Lightly peated, its ocean aging environment gives this whisky an incredibly depth, but its main focus is balance. The wispy smoke and rich toasty maltiness pair perfectly with the sweet vanilla and baked orchard fruit from the ex-bourbon barrels. Only 127 bottles were produced and bottled at a cask strength of 57.8% abv without coloring or chillfiltration whatsoever. This barrel, No. 1050, is sold exclusively at K&L Wine Merchants, but surely won’t be around for much longer as the little distillery’s reputation has grown steadily since their first release in 2023.

This single malt was distilled in 1998 at the Imperial Distillery, which was demolished to make way for the Dalmunach Distillery. It was aged for 25 years in a single barrel and bottled by The Single Cask without chill-filtration or artificial colouring.
