BUFFALO TRACE DISTILLERY RELEASES FRENCH OAK BOURBON AS PART OF ITS OLD CHARTER OAK BRAND – American Whiskey News

BUFFALO TRACE DISTILLERY RELEASES FRENCH OAK BOURBON AS PART OF ITS OLD CHARTER OAK BRAND

The Old Charter Oak Brand is dedicated to the Role Oak Plays

in Whiskey Making

FRANKFORT, Franklin County, Ky (Nov. 3, 2021) – Old Charter Oak French Oak is the latest release from Buffalo Trace Distillery as it continues to showcase oak tree varietals through its Old Charter Oak brand.

First revealed in 2018, Buffalo Trace’s Old Charter Oak brand showcases the diverse taste profiles of barrels obtained from trees grown in different countries, climates and soil. The oak trees used for the barrels that are dedicated to this brand vary by country of origin, or species, or U.S. state. Some barrels are even made from century oaks, 100-, 200- or 300-year-old oak trees.

For the latest release, Buffalo Trace is revisiting its successful French Oak series, with a new release available beginning in late November.  In 2013, Buffalo Trace obtained a small number of barrels from France, filled them with its Mash #1, the same mashbill used to make Buffalo Trace, Eagle Rare and other bourbons from the Distillery.

“We first experimented with French Oak barrels in 1995,” said Master Distiller Harlen Wheatley.  “We released our first experiment with French Oak in 2006, and we were so pleased with the results we bought more barrels from France and put more bourbon up to age.  Over time, this has become one of our favorite bourbons and it’s always a treat when we’ve got some that are ready to bottle. It’s power packed with sweetness, sourced from the vanilla, caramel and wood sugars while balanced with the French Oak tannins.  With the French Oak barrels, we are exploring how the flavors are delivered at different levels.  It speaks to the regionality of wood and how it can impact the flavor of the bourbon whiskey.”

By Federal standards, bourbon is required to be aged in a new, charred oak container. But there is no specification it must be American white oak, it’s just that nearly all bourbons made today are aged in American white oak.

Old Charter is a brand that has always celebrated the central role that oak plays in making great whiskey, given its namesake. The brand dates back to 1874, when Adam and Ben Chapeze created the bourbon, naming it in honor of the Charter Oak tree, a famous symbol of American independence and free spirit, which grew in Connecticut in the 12th or 13th century until it fell in a storm in 1856.

This is the third release of Old Charter Oak French Oak, and the sixth release overall for the Old Charter Oak brand.  Past releases include Mongolian Oak, Canadian Oak, and Chinkapin Oak.   Old Charter Oak Bourbon will be releasing many different oak expressions in the future, with its next release planned for 2022.  Subsequent releases are planned each year.

The suggested retail pricing for the French Oak is $69.99.   Like the previous releases in the Old Charter Oak series, supplies will be limited. The Old Charter Oak French Oak Bourbon is 92 proof.

Sounds delicious – New bold whisky launches with world’s first ‘sonic seasoning’ playlist – Scotch Whisky News

Sounds delicious – New bold whisky launches with world’s first ‘sonic seasoning’ playlist

– Black Bottle Whisky is taking the term ‘eating with your eyes’ to a new level by teaming up with Oxford University Experimental Psychologist, Charles Spence, to release the world’s first collection of audio tracks that alter and heighten sensory perceptions when drinking whisky

– The playlist, which is available on AlchemySeries.co.uk, was created to mark the launch of Black Bottle’s Alchemy Series

– This is the first experiment to combine ‘sonic seasoning and real world sounds’ to change the way food tastes

Spirits meet science today as Black Bottle Whisky takes the term ‘eating with your eyes’ to a new level. The brand has teamed up with leading Experimental Psychologist Oxford Professor, Charles Spence to release the world’s first collection of audio tracks, that are specifically created to alter and heighten sensory perceptions when drinking whisky.

The experiment marks the launch of Black Bottle’s new limited edition Alchemy Series, which with its fearless flovour and bold taste goes beyond the limits of traditional whisky, and is the first of its kind to combine ‘sonic seasoning’ and real world sounds. Professor Spence worked alongside Black Bottle’s Master Distiller to take on the brands mission of pushing the boundaries of taste even further by designing a special playlist that takes whisky drinkers on a journey of sensory discovery, altering the perceptions of taste based on the sounds played.

Sonic seasoning is the growing scientific field that uses sounds to change the way in which you taste food, for example, high-frequency sounds enhance the sweetness in food, while low frequencies bring out the bitterness.

Professor Spence said: “I am fascinated by how our brains process the information from each of our different senses to form the extraordinarily rich multisensory experiences that fill our daily lives.

Whisky has a distinctive taste and smell which produces a very specific multisensory reaction for drinkers. When Black Bottle approached me to partner on this experiment, I thought it would be really exciting to see how we could heighten our bodies reaction to the new Alchemy Series.”

The unique experiment was initially previewed at a series of online events, hosted by Professor Spence, but now whisky fans around the world can experience the phenomenon themselves at home, by listening to the sonic tastings playlist on Spotify and downloading a how-to guide on the Black Bottle website.

Craig Black, Global Brand Manager for Black Bottle, said: “Black Bottle has a long heritage of experimentation through our expressions and partnerships. It has been fascinating working with Professor Spence on the impact that sound have on our tastebuds.

The reactions that we had from the initial tastings was great and now we can’t wait to bring the experience to whisky drinkers everywhere. The sonic seasoning playlist will give whisky drinkers a truly personal experience, whilst also showcasing the layers of complex flavours within the spirit.”

Black Bottle’s Alchemy Series launches with a Double Cask and an Island Smoke. The Double Cask a full-bodied expression created using Spanish casks. A raucous sherry red colour, on the nose the expression shows off notes of charred citrus, wood, wine and warming spices. Whisky drinkers can enjoy a blast of berries and a delicious sweetness of Spanish sherry on the palate, before a long, luxurious finish with notes of toffee, walnuts and robust red wines.

Reminiscent of the beach on a stormy day, Island Smoke is an intense whisky that encapsulates the power of the sea. A blended malt that perfectly balances both unpeated and peated grain, this expression nods to notes of chilli, cardamom and the familiar saltiness of the sea. Burnished gold in colour, on the nose the expression is smoky and offers a surge of exotic spices. Flavours of salt and black pepper crash onto sweet cereal, making way for a blast of citrus sweetness and vanilla. The finish is wonderfully spicy, with a hint of dry sea salt.

Learning About Whisky from the Best – Canadian Whisky News

Learning About Whisky from the Best

TORONTO, November 1, 2021 – Whisky is Canada’s most popular spirit; according to Statistics Canada, one of every three bottles of spirits sold in this country is a bottle of whisky.

But it is such a broad category that can be confusing — just in Canadian whisky alone there are roughly 140 different varieties from which to choose. And that says nothing about the American bourbon, Irish whiskey and Scotch (to name but a few whiskies from around the world) rounding out the choices.

To help people navigate through this complex maze, J.P. Wiser’s Master Blender Dr. Don Livermore has launched The Canadian Whisky Master Class, a series of books to shed some light on the rich history of distilling whisky in Canada. The first two volumes in the series — The Keeper of History and Blending 101 — have been released simultaneously and are currently available online at the Shop on the J.P. Wiser’s website.

The Keeper of History

Offering an inside look at the history of the Hiram Walker and Sons distillery in Walkerville, Ont. (today part of Windsor, Ont.), one of Canada’s oldest and largest whisky distilleries, and producer of many of Corby Spirit and Wine’s award-winning whiskies including J.P. Wiser’s and Lot 40. The book charts the lives of early Canadian whisky barons, industry consolidation during the wild Prohibition years and the industrialization and modernization of Canadian whisky post-Prohibition.

Meticulously researched and lushly illustrated, this book highlights Dr. Don’s 25-year contribution to the Canadian whisky industry, including how he has helped reshape early 21st century whisky production.

Filled with personal insights, Dr. Don also explains the rigid distilling and blending processes to ensure the final products are unique, exceptional and pleasing.

The book also explains – in layman’s terms – how a Master Blender designs new styles of whisky and ensures it maintains its unique characteristics, from batch to batch.

Blending 101

Whisky connoisseurs and amateur enthusiasts are constantly seeking ways to better understand the many differences between Canadian, Scotch, Irish and American whiskies.

J.P. Wiser’s launched “Blend Your Own” whisky classes to help consumers better understand the distinctive characteristics of more than 140 different styles of Canadian whisky. During these sessions, participants also have an opportunity to blend whisky to their tastes. “Blending 101 – The Canadian Whisky Master Class” is a compendium of these sessions.

This book introduces Dr. Don’s innovative Canadian Whisky Flavour wheel, illustrating how grain, fermentation and aging in wood casks contributes to unique whisky flavour profiles. Next, it examines the importance of the distillation process and its impact on whisky. Lastly, it explores various blending methods, which brings everything together to create unique Canadian whiskies.

This tome also charts Canadian whisky-making practices from the mid-1800s through the 21st century, including the evolution of the science and precision required to develop consistent, high-quality Canadian whisky.

The Canadian Whisky Master Class pairs perfectly with J.P. Wiser’s Blend Your Own Whisky kits, a unique idea that gives whisky lovers the chance to play the role of the Master Blender. Each kit includes five 200mL bottles of different whiskies to blend and create their own whisky to enjoy at home, an empty 375mL bottle to fill with your own concoction, a graduated cylinder and pipette and Dr. Don’s Master Blending Guide.

A limited number of the kits are available this holiday season online, at LCBO outlets across Ontario by early November and in BCLS stores in British Columbia by November 13th.

Kentucky Distillers Association Statement On Removal Of European Union Tariffs On Bourbon – American Whiskey News

KDA Statement On Removal Of European Union Tariffs On Bourbon

After three long years, it’s time to raise a glass.

The Kentucky Distillers’ Association and its 51 member companies are thrilled at the announcement that the U.S. and the E.U. have agreed to remove retaliatory tariffs on Kentucky Bourbon and American Whiskey. And it couldn’t have come at a better time: the 25% tariff was set to double on Dec. 1.

These unfortunate tariffs have slashed exports of Kentucky Bourbon by 50% to the E.U. and the United Kingdom, costing distillers, industry partners and farm families hundreds of millions of dollars. Kentucky Bourbon exports had enjoyed double-digit growth for a decade before the tariffs were imposed in 2018.

Bourbon is one of Kentucky’s most historic and treasured industries, a $8.6 billion economic and tourism engine that generates more than 20,000 good-paying jobs each year with a $1 billion payroll and welcomes nearly two million people a year to the KDA’s world-famous Kentucky Bourbon Trail® experiences.

Kentucky distillers also are in the middle of a $5.1 billion building spree to meet the growing global thirst for America’s only native spirit. There are now a record 10.3 million barrels of Bourbon aging in Kentucky, the most in the Commonwealth’s 200-year distilling history.

The KDA thanks the steadfast leadership of the Biden Administration, Kentucky Gov. Andy Beshear, Congressman John Yarmuth and officials in Europe for their tireless efforts to resolve this ongoing trade dispute and to restore fairness in overseas markets for Kentucky’s signature distilled spirits industry.

With the suspension of the E.U. tariffs, we urge leaders from both the U.S. and U.K. to resolve their own tariff dispute so our legendary distillers can return at long last to doing what they do best – crafting the finest Bourbon for all the world to enjoy.

KDA President Eric Gregory

JACK DANIEL DISTILLERY ANNOUNCES 2021 SINGLE BARREL SPECIAL RELEASE: COY HILL HIGH PROOF
Limited release hits shelves in November for whiskey drinkers looking for a bolder, higher proof Tennessee Whiskey

LYNCHBURG, Tenn. (November 2, 2021) –Today, Jack Daniel’s announces the release of the 2021 Single Barrel Special Release, Coy Hill High Proof. This high-proof Tennessee Whiskey was aged on the top ricks of the oldest barrel houses on Coy Hill, the highest hill on the Jack Daniel Distillery property in Lynchburg, Tennessee.

The limited offering whiskey is bottled at proof points ranging from 137.4 up to 148.3 and marks the highest proof whiskey ever released from the Jack Daniel Distillery. The Coy Hill High Proof gives an aroma of seared oak and dark brown sugar with flavors of bold baking spices and a lingering finish of toffee, smoke and rich leather.

Coy Hill High Proof is made from Jack Daniel’s classic 80% corn, 12% malted barley and 8% rye grain bill. The whiskey is mellowed drop by drop through 10-feet of sugar maple charcoal before entering barrels located within Coy Hill barrel houses #8 and #13. The whiskey is then matured until it is later bottled, uncut, from those single barrels.

“The Coy Hill High Proof is all about pushing the limit for single barrel maturation to create one of our boldest, most innovative whiskeys we have ever released,” says Jack Daniel’s Master Distiller Chris Fletcher. “It highlights one of the unique attributes of the Jack Daniel Distillery – the dry air of the highest floors of the barrel houses – and the amazing impact it has on whiskey making.”

Each single barrel annual expression highlights the craftsmanship and innovation mindset in whiskey-making at the Jack Daniel Distillery. The Jack Daniel’s Single Barrel annual special release is hand-selected from the highest parts of our barrel houses and bottled from single barrels just like the Jack Daniel’s Single Barrel Select, Rye & Barrel-Proof collection.

The limited-edition Coy Hill High Proof bottle is bottled at barrel strength and will hit shelves starting in November, available in a 750ml size with a suggested retail price of $70.00. NEW BATCH OF GLENALLACHIE SINGLE CASKS ROLL OUT TO UK – Scotch Whisky News

NEW BATCH OF GLENALLACHIE SINGLE CASKS

ROLL OUT TO UK

The Scotch whisky distillery, led by iconic Master Distiller Billy Walker, reveals

latest single cask bottlings for UK

The multi-award-winning Speyside distillery behind the World’s Best Single Malt (World Whiskies Awards, 2021) today reveals its Autumn release of GlenAllachie Single Cask expressions bottled exclusively for the UK market.

The next batch of bottlings consists of six cask strength single malts, all specially selected by hailed Master Distiller Billy Walker from among the 50,000 casks held on-site at the distillery’s warehouses in Aberlour.

The single cask bottlings include:

  • An antique 32-year-old Pedro Ximénez sherry puncheon (RRSP £625, 55.8% ABV) which delivers sophisticated notes of dark chocolate tart, ripe figs, treacle and eucalyptus.
  • A 15-year-old Rioja barrique (RRSP £115, 60.5% ABV) hailing from Spain’s most renowned wine-producing region, resulting in a whisky brimming with raspberry coulis, sugared almonds and nutmeg.
  • A 15-year-old Tawny Port pipe (RRSP £115, 60.7% ABV) which enriches GlenAllachie’s classic heather honey charm with full-bodied, fruity tones.
  • A rich 14-year-old Pedro Ximénez hogshead (RRSP £110, 60.3% ABV) which has imparted an indulgent mocha depth, alongside sweet cinnamon and subtle ginger.
  • A Chinquapin virgin oak barrel (RRSP £105, 58.3% ABV) sourced from Missouri and air-dried for nearly four years, this 13-year-old single malt reveals orchard fruits, stem ginger and lemon meringue pie.
  • A vibrant 12-year-old Marsala barrel (RRSP £99, 58.0% ABV) which previously held sweet dessert wine from the ancient Sicilian city of Marsala, bestowing tropical fruits and salted caramel notes upon the bronze malt.

All the bottles are hand-numbered, and offered at cask strength, natural colour and are non chill filtered.

Each single cask whisky showcases Walker’s renowned expertise in wood management, steering the unique interaction of wood, spirit and subsequent flavour development, which has been gained during his almost 50-year-long career in the whisky industry.

Commenting on the single cask releases, Walker said:

“We’ve curated these special Single Casks exclusively for our valued UK retail partners and consumers. Exploring the unique interaction between the GlenAllachie spirit and different types of oak cask, each expression has its own incredibly unique DNA.

“The journey from the depth and refinement of the vintage 1989 Pedro Ximénez puncheon, with its glazed fig and mocha elegance, to the rare 2009 Marsala barrel, which reveals ripe mango, demerara sugar and grapefruit peel is incredibly powerful. The wonder of wood never ceases to fascinate!”

This passion for exploring innovative cask types is also reflected in the distillery’s brand-new single cask bottling produced for the Spirit of Speyside Festival 2021, which is running from the 3rd to the 8th of November. The fifteen-year-old single malt began its maturation journey in a fresh ex-Bourbon cask, before being re-racked into a first-fill Sherry hogshead, then finally into an American oak cask which previously held peated whisky distilled at The GlenAllachie, bestowing an intriguing twist on the classic GlenAllachie style. This experimental expression is available now, exclusively from the distillery’s on-site shop.

The GlenAllachie’s collection of UK Single Casks is available from specialist retailers across the country now.

ABOUT GLENALLACHIE:

One of Scotland’s few independently owned and managed distilleries, The GlenAllachie is led by industry veteran, Billy Walker, who boasts an almost 50-year tenure in whisky. With an emphasis on wood policy, The GlenAllachie’s cask budget for 2021 stands at an eye-watering £1m/$1.2m. With 16 on-site warehouses holding over 50,000 casks, we have complete control of the end-to-end maturation process.

The GlenAllachie focusses on quality over quantity, which is why we chose to reduce our production capacity from 4m to 500,000 Litres of Alcohol, and increase our fermentation period to 160 hours for an ester rich, fruity spirit.

We believe age and integrity matter, which is why all our whiskies carry an age statement, and are bottled at a minimum of 46% ABV, natural colour and non-chill filtered for maximum flavour experience.

Our other brands are MacNair’s Boutique House of Spirits, encompassing Lum Reek Blended Malt Scotch Whisky and Exploration Rum, and White Heather Blended Scotch Whisky.

Today we broke ground on the site of our first malt whisky distillery in China.

Located in Eryuan County in Yunnan Province, the Diageo Eryuan Malt Whisky Distillery will produce our first China-origin, single malt whisky. Details of the US$75 million investment were officially unveiled at a special ceremony today in Eryuan, attended by provincial and local government officials, industry representatives, and the local community.

“China is the world’s largest beverage alcohol market(1) and the demand for whisky is growing rapidly among middle-class consumers who are keen to further discover and enjoy fine whiskies. Today we celebrate another significant step forward, and one which builds upon our local insights and combines those with Diageo’s global whisky expertise in order to delight the next generation of Chinese whisky consumers.”

“The natural surroundings and the Eryuan landscape will allow us to craft a world-class, China-origin, single malt whisky that will capture the imagination of premium whisky lovers in China.”

Sam FischerPresident, Diageo Asia Pacific and Global Travel

Our ‘Society 2030: Spirit of Progress’ sustainability action plan will shape the design and development of the distillery. Renewable and clean technologies will be used in the distillery to ensure it is carbon neutral, recycles all the water it uses, and is a zero-waste site.

The site will feature an immersive and interactive visitor centre that will attract whisky enthusiasts and boost the local cultural tourism industry. The sustainable and innovative design of both the distillery and the visitor center will incorporate local cultural elements and embrace the region’s natural landscape.

Construction is expected to begin in early 2022.

As part of its 2030 action plan, Diageo is developing site-by-site roadmaps and is also working to achieve net-zero carbon across the entire supply chain by 2050 or sooner, with an interim milestone to achieve a 50% reduction by 2030. Building on a long track-record of environmental, social and governance (ESG) progress globally, Diageo is now in the top 1000 companies in the world taking action to address climate change in a science-led and systemic way. The company’s goals in this space have been calculated in accordance with the principles of Science Based Targets Initiative (SBTi) and recently validated as meeting the criteria for the 1.5°C pathway.

Diageo is also part of a pioneering group of organizations that are championing a green recovery and supporting the Sustainable Development Goals, through membership of the United Nations Global Compact, We Mean Business Coalition and other key global advocacy organizations. As a signatory to RE100, Diageo aims to source 100% of its electricity from renewable sources by 2030. In addition, Diageo has signed onto the global Race to Zero campaign, a commitment to achieving net-zero carbon emissions by 2050 or earlier.

Cradle Mountain “THE TALE OF TWO WHISKIES” – Tasmanian Whisky News

THE TALE OF TWO WHISKIES

If you love a good Single Malt Whisky, you will want to read this story of the “Tale of Two Whiskies”

This maybe the first time in history where we have a rare and unique opportunity to taste the same whisky one twin was aged for 21 years in Scotland and the other aged 21 years in Australia at Cradle Mountain Whisky.

Due to the ageing the two whiskies present quite differently. The twin whiskies will be offered through a ballot to give a few lucky people an opportunity to own and taste test these treasures of whisky history.

OUR STORY

Our story begins in 1989, when the founders of Cradle Mountain Whisky recognised that the rich volcanic soil of Northern Tasmania gave a particular life to the quality of the grain found in the region. By combining the local grains with the water collected from the foothills of the Tasmanian Highlands, the founders discovered that they were able to produce an exceptionally fine single malt whisky.

TO SCOTLAND – TASMANIA

In the early 1990s, our previous Director Andrew Morrison travelled to Scotland with a sample of Cradle Mountain Whisky, determined to measure the quality of his new drop against the finest whiskies in the world.

Andrew took his sample to the independent bottlers at the Springbank Distillery and sought their first impressions. Springbank ordered seven barrels on the spot — an enormous vote of confidence for the emerging company and the Tasmanian whisky industry. While a number of barrels went to age in Campbeltown in Scotland, a number of barrels were also aged in Tasmania, Australia

The same whisky matured in two different climates will develop unique characteristics.

CAMPBELTOWN, SCOTLAND

The Campbeltown climate tends to be steady with high and low temperatures fluctuating by an average 4.2 degrees Celsius in a month. Summer temperatures sit around 17 degrees.

NORTHERN TASMANIA, AUSTRALIA

Tasmanian weather fluctuates with a high and low variance of 11.3 degrees and summer temperatures of 25 degrees. We experience about half as much rainfall as in Scotland.

The Angel’s Share losses in Tasmania can be as high as 70 per cent over the full term of the ageing of our spirits, which highlights the increase in maturation activity in the barrel.  This is a stark contrast to Scotland, with a quoted Angel’s Share of around 2 per cent each year – around 40 per cent over the term of 21 years.

The Angel’s Share is the liquid lost to evaporation when whisky is aged in oak barrels.

“While accountants try to figure out ways to stop Angel’s Share, the artisan celebrates it. How else are we going to get a great whisky?” JOE LAHRA, CRADLE MOUNTAIN WHISKY

TASTING NOTES – The 21 Year Old’s
