First 200 casks from new Caithness whisky distillery available in exclusive sale

Whisky fans will soon have the chance to own a piece of liquid history as Whisky Hammer prepares to exclusively sell casks containing the first drops of Dunnet Bay Distillers’ Stannergill Whisky.

The Caithness-based distillery, which produces the internationally renowned Rock Rose Gin and Holy Grass Vodka, has just announced a £4m expansion into whisky, partnering with Ellon-based Whisky Hammer for an early bird investment opportunity.

Just 200 casks are available, with investors able to pre-order a 250-litre cask for £4,750. The sale will go live at 12pm (GMT) on Monday 7 November, with Whisky Hammer expecting it to attract buyers from around the world.

This is the second time Whisky Hammer has exclusively sold casks to raise capital for a new distillery. In 2020, its first cask sale for 8 Doors Distillery in John O’Groats saw all 200 casks sell in less than 48-hours.

Daniel Milne, co-founder and managing director of Whisky Hammer, said: “Dunnet Bay Distillers is known for producing high-quality spirits, so we’re extremely proud to be representing the first casks of what we’re certain will develop into an incredible dram.

“Cask investment continues to grow in popularity, with those who purchase a cask of Stannergill Whisky able to see their whisky reach different milestones and develop its character and personality. It’s an exciting process to be part of.

“Our sale represents the only time the Stannergill Whisky casks will be available at this price, so we’re expecting there to be a lot of interest.”

Following purchase, buyers will be able to chart the progression of their cask as it matures into single malt whisky in a dunnage warehouse, where the fresh sea air blowing from Dunnet Bay will contribute to the creation of a smooth, mellow spirit.

Dunnet Bay Distillers expects the whisky to be lighter and fruitier than many traditional Scottish whiskies, influenced by the distinctive coastal location of the distillery.

Scottish distiller, Glen Scotia, has partnered with London’s first dedicated sherry bar, Bar Pepito, to launch its new 12-year-old Seasonal Release (£80, 53.3% ABV), and explore the flavours of Andalusia featured in the dram.

Inspired by a winter’s day in Glen Scotia’s home, Campbeltown, the latest unpeated, cask strength, natural coloured release, available now, has been matured in first-fill bourbon barrels before a final twelve-month finish in Amontillado Sherry casks, which hail from the Montilla region of southern Spain.

Amontillado sherry starts as a Fino sherry before an ageing period of around ten years, which dissipates the ‘flor’, and through wood exposure and oxidation, produces a nutty, dry, and beautifully amber liquid.

The result for the Seasonal Release 2022 is a warm, nutty dram with lingering vanilla notes and a mildly dry finish. Subtle maritime nuances on the nose and palate are synonymous with the iconic Campbeltown malt style.

Working alongside Bar Pepito’s owner, Richard Bigg, and its Executive Chef, Nacho del Campo, Glen Scotia has explored the character of sherry and its exquisite flavour profile to craft a list of food accompaniments to enjoy alongside its latest expression.

Bar Pepito is the sister restaurant to Camino, also King’s Cross, which was borne after owner, Richard Bigg, travelled around Spain in his traditional Mini in the summer of 1984. The culture, people, and food & drink made an everlasting impression and a desire to create a piece of España back in the UK.

Chef Nacho del Campo joined Camino in 2008, and they opened Bar Pepito in 2010, after a career spanning 24 years working in Catalunya, Madrid, and Exeter. His passion for gastronomy paired with a love of sherry has accelerated the establishment to become one of the most sought-after authentic Spanish dining experiences in London.

Perfectly marrying Spanish cuisine with the unique new offering from Campbeltown, chef Nacho’s accompaniments include a variety of dishes using the Seasonal Release 2022, and items that can be gathered from any traditional Spanish deli:

  • Whisky-marinated gordal olives with orange and cumin – Nacho advises to first make an emulsion with a bit of mustard, cumin, orange zest, whiskey and extra virgin olive oil for marinading
  • Sliced Iberico de bellota ham
  • Cheese selection – Nacho recommends well-cured cheese like Manchego or parmesan to go well with Glen Scotia. Alternatively, blue cheese like Valdeón, Stilton or Roquefort. Smoked cheese also works well.
  • Luxury dark chocolate slices – Nacho says dark chocolate around 64% works well, he previously created a ganache with the Glen Scotia liquid and pistachio.
  • Grilled tendersterm broccoli with almond Ajo Blanco sauce and sliced grapes
  • Grilled Andalusian chicken with Mojo Picón sauce
  • Grilled octopus tentacle with roasted beetroot hummus
  • Rare fillet steak of Ibérico pork (grilled) with baba ghanoush
  • Dark chocolate and Glen Scotia ganache with raspberries and pistachios

Chef Nacho del Campo said: “Spanish cooking is all about quality ingredients, very simply made, but always flavourful and fresh. The Glen Scotia Seasonal Release 2022 has a well-rounded profile that fits perfectly with Spanish cuisine. Whisky can add a real extra dynamic to food, so paired together they work very well.

“These dishes were created to enhance to experience, giving a touch of the Spanish way of life, with a twist from Scotland. Importantly, many can be recreated at home with a visit to one of the many Spanish delis around the country.”

Master Distiller, Iain McAllister and his team are behind the latest release from Scotland’s smallest whisky-making region.

Glen Scotia has been producing single malt whisky in Campbeltown since 1832. The small town on the Kintyre peninsula on the west coast is one of the officially recognised and protected whisky regions of Scotland. Once home to over thirty whisky producers, and with a distillery on every corner, it was known as “the Victorian Whisky Capital of the World”. Only a few distilleries endured to the present day, and Glen Scotia stands proudly among the last of the many.

In 2021, Glen Scotia’s 25-Year-Old Single Malt Scotch whisky was awarded ‘Best In Show Whisky’ at the San Francisco World Spirits Competition. Later that year, Glen Scotia was named Scottish Whisky Distillery of the Year at the Scottish Whisky Awards. It is the first time a whisky distillery has received both accolades.

In 2022, Glen Scotia’s Victoriana won Best In Class in the Distillers’ Single Malt Scotch – No Age Statement category at the San Francisco World Spirits Competition.

Samuel Gelston’s to Strike Gold with New Campaign

Samuel Gelston’s is bringing some gilded glamour to the UK this season with a series of exciting collaborations that explore the golden roots of its Irish Whiskey.

Award-winning Belfast-based mixologist Emily Doherty and leading gold prospector Vince Thurkettle will be fronting the new Gelston’s Gold Rush campaign, which will unveil gold inspired cocktail recipes, a gold panning event in the home of the brand and an exploration into Ireland’s prospecting past. Wild gold expert and jewellery maker Mark Bell will also be on hand to add some seasonal sparkle by creating a showstopping gold bottle of Samuel Gelston’s whiskey, which will be revealed in a festive competition this December.

Established in Belfast in the 1830s, Samuel Gelston’s was purchased by daring young Irishman Harry Neill in 1869 who made his fortune in Australia’s spectacular 1851 Gold Rush. Upon returning to Belfast, Harry used his new found wealth to rebuild the Gelston’s business and export his ‘liquid gold’ for the world to enjoy.

Vince explains: “I love all the gold rush stories and have prospected out in Australia in the area where the 1850s gold rush took place, and Harry made his fortune. I have recovered gold and treasure from a tragic shipwreck from that time, the ‘Royal Charter’ which was bringing gold miners and their families home – and carried about 150 million Euros worth of gold.  If Harry had been on that ship we wouldn’t now have these fabulous whiskeys.

“Whiskey and gold, two key ingredients to all the great gold rushes – I am so pleased that they are being brought together again, and absolutely delighted to be a part of this Gelston’s adventure.”

Mixologist Emily looked to the past to re-create a classic cocktail for today’s whiskey enthusiasts. She explains:

“My inspiration behind this drink was to take the classic ‘gold rush’ cocktail and put a modern twist on it. Hot honey is something that became very popular this year and there is a good reason, you get the sweetness and floral notes coming from the honey with the light spice and black pepper from the chilli. The other ingredients in this cocktail are the type of ingredients you see in a Margarita but they work incredibly well with whiskey, the orange juice opens up the sweet notes in the spirit and the salt rim balances out the sweetness.”

The Gelston’s Gold Rush

50ml Samuel Gelston’s Blended Irish whiskey

20ml Lime juice

30ml Fresh orange juice

10ml Hot honey *

Shake all ingredients over ice and strain into an iced punch or rocks glass, with a salt rim, and a burnt orange slice as garnish. *To make the hot honey, pick your favourite honey and add two hot chillies, or add in two teaspoons of dried chilli flakes, leave for two days then strain.

Samuel Gelston’s Spiced Star

Emily’s inspiration behind this drink is the iconic golden star on the Gelston’s bottle. And with the festive season fast approaching, she created this drink to enjoy on a cold winter day. She explains: “Samuel Gelstons Irish Cream Liqueur is a warm hug in a glass, it’s smooth, creamy and sweet, and perfect with hot coffee and spiced brown sugar syrup.”

50ml Samuel Gelstons Irish Cream Liqueur

10ml Spiced brown sugar syrup *

60ml Americano coffee

Double cream to top

Pour all ingredients into a steamed Irish coffee glass and layer your thick cream on top with a spoon. Garnish with the star anise. *To make your own spiced syrup mix one cup of brown sugar and one cup of hot water with your favourite spices, Emily’s are cinnamon, cloves and star anise.

Ireland has a glittering history when it comes to gold. Prospector Vince Thurkettle reveals:

  • The Irish took part in all of the world’s great gold rushes. Two of the very few Irish adventurers who came home rich, are Gelston’s Harry Neill and Micheal MacGowan – who took eight years to walk to the Yukon gold rush, struck gold, and bought a farm when he returned home. 
  • Ireland may be called the ‘Emerald Isle’, but it is certainly a ‘Golden Isle’. Natural gold has been found across the whole island, from ancient times right up to the present day.
  • More Bronze Age hoards of gold items have been found in Ireland than anywhere else in Europe. A horde of 150 golden objects, weighing over 5 kg, were found in County Clare in 1854. Whilst the golden bog of Cullen was an absolute treasure trove of Bronze Age objects – tragically almost all of which were melted down for bullion.
  • The Great Irish Gold Rush started in 1795 near Avoca, in the Wicklow mountains south of Dublin! But it is unlikely that this location was known to the Bronze Age people as over 9,000 ounces of gold was found, including large nuggets, in relatively easily worked ground. One of these huge nuggets has survived as it was made into a snuffbox for King George III.
  • Croagh Patrick the holy mountain in County Mayo is known to be riddled with gold veins. Could this be why the mountain became sacred in ancient times? The mountain is much-loved and respected, attempts to mine it in the 1980s were soon stopped by the local people.
  • There is currently huge interest in finding and recovering natural Irish gold.

The hobby of recreational gold panning is becoming increasingly popular, and several gold mining companies are working hard to develop commercial mines in Ireland.

Samuel Gelston’s Old Irish whiskey was founded in 1830 by Samuel Gelston. It was a time when Irish whiskey was famous around the world.

Samuel, a wine and whiskey merchant from Belfast, made it his mission to source, blend and bottle the best Irish whiskey from across Ireland. At the time there were 88 licensed distilleries on the island, and Samuel selected the very highest quality liquids for each bottle.

Johnny and well-known master distiller Frank McHardy made it their mission to journey across Ireland again to source, bottle and blend the best liquids they could find and Samuel Gelston’s Old Irish Whiskey was reborn.

HARD TRUTH PUMPKIN MAPLE MARTINI

INGREDIENTS:
3 oz. Hard Truth Maple Bourbon Cream; 3 bar spoons of pumpkin pie filling
1 Tbsp. Granulated sugar
1⁄2 Tbsp. Cinnamon
1⁄4 Tbsp. Pumpkin pie spice

CRAFT:

Mix cinnamon, sugar and pumpkin pie spice together, then use the mixture to rim a coupe glass. Set aside.

Add Maple Bourbon Cream and pumpkin pie filling to bar shaker, then top with ice. Cover, and shake to chill.

Single strain into prepared glass, then sprinkle a pinch of the spice mixture over the top of the drink to garnish.

HARD TRUTH MAPLE BOURBON BALL MARTINI

INGREDIENTS:
4 oz. Hard Truth Maple Bourbon Cream; 2 bar spoons chocolate syrup; chocolate syrup drizzle

CRAFT:

Drizzle inside of a coupe glass with chocolate syrup. Set aside.

Add Hard Truth Maple Bourbon Cream and chocolate syrup to ice-filled bar shaker. Cover, and shake to chill.

Strain into prepared coupe glass and serve.

CRAFT:

 George T. Stagg Returns to the Lineup and Showing Up Strong at 138.7 proof!  

FRANKFORT, Franklin County, Ky (Oct. 26, 2022) Fans of extra aged and uncut, unfiltered whiskies will be excited to see Buffalo Trace Distillery is releasing its full lineup of Buffalo Trace Antique Collection (BTAC) this fall, including perennial favorite George T. Stagg.

Last year, Buffalo Trace opted not to release its uncut, unfiltered 15-year-old George T. Stagg Bourbon because it did not meet the Distillery’s standards for the Stagg brand.  This year, the team is happy to report that the 2007 Stagg barrels showed up with their classic Stagg presence, full of maturity, balance, and flavor, with a hefty proof at 138.7, its highest proof since 2016.

The five ensemble members of the Antique Collection are George T. Stagg Bourbon, William Larue Weller Bourbon, Thomas H. Handy Sazerac Rye Whiskey, Eagle Rare 17-Year-Old Bourbon and Sazerac Rye 18-Year-Old Whiskey. These whiskies utilize three distinct mash bills, or recipes, from Buffalo Trace Distillery: rye mash bill #1, wheat mash bill and straight rye mash bill.  Aged and proofed at the pinnacle of their taste profile set by the distilling and lab team experts at Buffalo Trace, this collection is sold separately and only available once a year.  Bottles should be available at retail starting early to mid-November.  Suggested retail pricing is $99 each, state taxes will vary per market.  Here are details of each expression in the collection:

George T. Stagg Bourbon

Created in 2002 at the request of a fan for a well-aged and barrel strength whiskey, George T. Stagg bourbon is well respected amongst bourbon connoisseurs and spirit judges. This year’s offering was distilled in the spring of 2007, making it 15 years and 5 months old at bottling.  The proof is 138.7, the highest proof for this whiskey in the past six years.  This year’s barrels were aged in warehouse K.  Tasting notes for this bourbon call out toasted pecan and chocolate sauce on the nose, a rich blend of baking spice, vanilla and cherry pie on the palate, and a robust finish of black coffee, molasses and oak.

William Larue Weller Bourbon

The Antique Collection’s uncut, unfiltered, wheated recipe bourbon is William Larue Weller. The previous release of this wheated bourbon was honored with a Double Gold medal at the 2022 San Francisco World Spirits Competition.  The 2022 release was distilled in the spring of 2010 and barrels were aged in warehouses C, K and N.  This bourbon registers at 124.7 proof.  A nose of toasted coconut, butterscotch and caramel, followed by a touch of mint, dark cherry and molasses on the palate and a full-bodied finish with hints of leather, nutmeg, toffee and vanilla can be found in this year’s offering.

Thomas H. Handy Sazerac Rye Whiskey

Thomas H. Handy is the uncut and unfiltered straight rye whiskey. Last year’s release earned 97 points and was named in the top 100 spirits by judges at the 2022 Ultimate Spirits Challenge.  This year’s Handy was distilled in the spring of 2016; aged in warehouses I, L and M and weighs in at a hearty 130.9 proof, the highest proof for this whiskey since 2012.  The flavor profile includes a nose with floral notes, anise, marmalade and meringue, followed by a palate with baking spice, a burst of orange peel and subtle dark chocolate, and a long finish of cinnamon, praline and candied orange.

Eagle Rare 17-Year-Old Bourbon

This 101-proof whiskey was distilled in the spring of 2005 and barrels were aged in warehouses H, K and L.  The 2021 Eagle Rare release was honored with the Chairman’s Trophy at the 2022 Ultimate Spirits Challenge.  This bourbon has a nose with a hint of tobacco, chocolate covered cherries and a touch of oak, followed by caramel, vanilla bean, dark chocolate and oak on the palate and a full-bodied finish with baking spice, vanilla and butterscotch.

Sazerac Rye 18-Year-Old Whiskey

Previous releases of Sazerac Rye 18-Year-Old were named in the top three finest whiskeys in the world by the “Whisky Bible.”  This 2022 straight rye whiskey release has a nose of orange peel, lemon zest and molasses, a palate with a bold blend of black pepper, coriander seeds and maple syrup, and a well-rounded finish with mint, tobacco leaf and oak.  The barrels for this whiskey were filled in the spring of 2003 and 2004 and rested in warehouses K, M and P.  It is bottled at 90 proof.

Benromach Distillery in Speyside has launched a new small batch single malt, ‘Benromach Triple Distilled’, into its ‘Contrasts’ range.

This limited-edition expression was created in a style which is deliberately different in character to its signature 10-Year-Old single malt. For this unique release, the spirit has been triple distilled, passing through the wash still and then twice through the spirit still, giving a lighter and fruiter style of spirit that complements its maturation in first-fill bourbon barrels.

Bottled at 46% ABV, the non chill-filtered whisky has a long, medium-bodied finish with citrus zest and a hint of soft smoke.

Keith Cruickshank, Distillery Manager at Benromach, said: “We triple-distilled a small batch of this spirit in 2011 and after a little more than a decade, we are ready to share it. Benromach Triple Distilled retains our customary, subtle smokiness but the extra distillation, combined with a bourbon cask delivers a slightly sweeter single malt with tropical fruit notes such as pineapple, banana and coconut.

“And, like all of our whiskies, our small team of distillers created this expression by hand to produce a malt with genuine character.”

2 November 2022: Today, Diageo announces it has acquired Balcones Distilling (‘Balcones’), a Texas craft distiller and one of the leading producers of American Single Malt Whisky in the United States.

Founded in Waco, Texas in 2008, Balcones is a celebrated player in the emerging whisk(e)y movement in Texas, with a diverse portfolio of award-winning super premium and above whiskies, including Texas “1” American Single Malt, Lineage American Single Malt and Baby Blue Corn Whisky. Balcones embraces Texas’ intense heat as well as its temperature fluctuations to create whiskies with differentiated flavours. THE MACALLAN REVEALS A NEW EDITION OF THE HARMONY COLLECTION CELEBRATING THE WORLD OF COFFEE 

The Macallan has unveiled the new expressions that form the second edition of The Harmony Collection, a limited annual release series driven by the brand’s inherent curiosity and its innovative and creative mindset.

A collection exploring The Macallan’s future packaging journey, each release features distinctive packaging that incorporates organic by-products and gives them new life.

The new single malt whiskies – The Macallan Harmony Collection Inspired by Intense Arabica for domestic markets and Smooth Arabica for global travel retail – celebrate the world of coffee and have been inspired by the Ethiopian Arabica coffee bean. Their hybrid packaging was created using repurposed and recycled materials including discarded coffee bean husks.

The Macallan Whisky Maker Steven Bremner has created the intensely flavoured whiskies to pair with coffee. He immersed himself in the art of coffee by hosting a masterclass with world renowned coffee experts at The Macallan Estate. He explored the journey from field to cup, uncovering the unique process and distinct flavour profiles at each stage.

Among the coffee masters who shared their knowledge with Steven were Ethiopian coffee grower Kenean Asefa Dukamo, whose family works with the Arabica variety showcased by the whiskies; Scottish coffee roaster Lisa Lawson, a pioneer of speciality coffee in Scotland acclaimed for her roasting techniques; and award-winning American barista Andrea Allen, renowned for creating incredible coffee experiences. UK-based coffee artist Dhan Tamang crafted a range of coffee art, sharing his knowledge on the art of the perfect coffee serve and sensory perceptions, while leading coffee historian Professor Jonathan Morris provided an insight into the roots of coffee and how it has become the global phenomenon it is today.

Drawing inspiration from the Arabica coffee bean from Ethiopia, renowned as the birthplace of coffee, Steven selected a combination of American and European oak casks to achieve the distinctive notes offered by the single malts. Inspired by Intense Arabica is reminiscent of a sweet yet strong espresso coffee and has a higher ABV of 44%, while Smooth Arabica conveys the flavours of a gently spiced and soft americano which come through at an ABV of 40%. Both can be paired with coffee to provide a new way to savour The Macallan.

There are many parallels between the approach to creating incomparable whisky and coffee. Each requires unique skills and craftsmanship to achieve depth and complexity of taste and both worlds aim to deliver an extraordinary consumption experience.

“To create the coffee-inspired second edition of The Harmony Collection, I sought out intense notes in The Macallan’s traditional sherry seasoned European oak casks that would offer the rich and satisfying elements of coffee, with the influence of sherry seasoned American oak casks adding sweeter and softer vanilla notes for a balanced and rounded experience.

“Each expression has been paired with two different variations of Ethiopian coffee, which accentuate the unique tasting notes within the whisky when enjoyed side by side, creating a new sensorial experience of The Macallan.” 

The expressions are presented in a presentation box, which incorporates repurposed coffee bean husks, a by-product in the coffee-making process. Paper expert Michele Posocco from Italian paper mill Favini worked with The Macallan to create the innovative packaging. The rich red pantone colour on the Inspired by Intense Arabica pack reflects the coffee fruit, while the vibrant green on the Smooth Arabica pack represents the unroasted coffee bean.

The Harmony Collection commenced with the release of Rich Cacao last year, followed by Fine Cacao earlier this year, which both incorporated discarded husks from cacao pods in their packaging and offered chocolate flavour profiles.

The Macallan Harmony Collection Inspired by Intense Arabica and Smooth Arabica have an RRSP of US$185 / £140 / €165. Inspired by Intense Arabica will be available at The Macallan Estate Bar, The Macallan Online Boutique and in premium retailers, bars and restaurants around the world from October 2022. The name 1872 pays homage to March 1, 1872 when President Ulysses S. Grant signed the Yellowstone National Park Protection Act into law, which has protected one of the most unique natural environments on earth for the last 150 years.
