The Dalmore Highland Single Malt Scotch Whisky has unveiled two new limited editions from the Vintage collection, The Dalmore 2003 Vintage and The Dalmore 2007 Vintage.

Created by pioneering Master Whisky Maker Gregg Glass and Master Distiller Richard Paterson OBE, The Dalmore Vintage collection showcases exceptional whiskies of distinguished character, each hand-selected in November, following a five decades-old Dalmore tradition.

Once a year, The Dalmore whisky makers visit the distillery to reacquaint themselves with their rare casks laid to mature in their historic warehouses, on the banks of Scotland’s great natural waterway, the Cromarty Firth in the Scottish Highlands.

November marks the optimum time for The Dalmore whisky makers to return to the distillery to assess their rare casks and the whiskies laid maturing within, as the cooling climate allows their potential to truly shine. Only the most exceptional whiskies reviewed during this special time and considered to have distinguished character are chosen to become a Dalmore Vintage.

The Dalmore 2003 Vintage offers on the nose – Manuka Honey, dark toffee, aged vanilla-pods; on the palate – warm honey, maple syrup and spiced dark fruits; and finishing notes of antique honey, old English marmalade and sweet spice. This elegant whisky was first matured in ex-Bourbon American oak casks, then enhanced through a carefully balanced recipe of hand-selected casks; Rivesaltes sweet wine casks, rare Matusalem and Amoroso sherry casks and small-batch Bourbon barrels.

The Dalmore 2007 Vintage offers on the nose – Honey, fresh baked brioche and ice ginger cake; on the palate – orange blossom honey, spices and mandarins; and finishing notes of patisserie sugars, ginger snaps and cinnamon. The antique qualities of this whisky are created through an initial maturation in ex-Bourbon American white oak barrels, then enhanced with a harmony of rare-hand-selected aged casks – Matusalem, Apostoles and Amoroso sherry, alongside sweet Marsala wine barrels.

CASKSHARE LISTS RARE THE MACALLAN 30YO SINGLE CASK

– Ballot Open Until Sunday 11th December for £2,850 Bottles –

Hot on the heels of a ballot sale for a cask of Springbank 30YO, which saw over 600 people sign up to buy one of 135 £1.6k bottles, Caskshare has released a ballot for a single cask malt that is set to be even hotter property: The Macallan 30YO.

One hundred and eighty bottles of the rare malt are now on sale at £2,850 each.  Maturing in a first-fill Sherry cask, the 30 year-old expression is due to be bottled in May 2023, bearing one of the highest single-cask ABVs on the market at 51.5%.

According to a recent report by investment bank Noble & Co, The Macallan, produced by Famous Grouse owner Edrington, is the number one brand for both volume and value in the secondary market. Using data collected from over 580,000 whisky auction transactions over the last decade, the report also shows a 21% increase in the value of fine and rare single malts in 2022, with the volume of bottles sold increasing by 23%. In October, a single bottle of The Macallan 80YO sold at auction in Sotheby’s for £300,000.

John Robertson, MD of Caskshare, said: “The Macallan is undoubtedly one of the most aspirational single malt whiskies, with a global reputation for quality and provenance.  It’s really not often that a cask of such rarity comes up and we’re expecting it to be hugely sought-after by both connoisseurs and collectors.”

The ballot is open to UK and international customers and closes at midday on Sunday 11th December.

In cooperation with the start-up Authena, Appenzell-based Brauerei Locher presents a Swiss first: Authena provides the “Karl Locher’s 60th – Founder’s Anniversary Reserve”, a 60-bottle limited edition of the Swiss Säntis Malt whisky, with both physical and Blockchain-based protection in the Metaverse. Thanks to NFT digital rights, each bottle becomes a unique collector’s item, with NFC tags making it counterfeit-proof. The renowned Appenzell artist, Martin Fuchs, has created an exclusive painting for this special edition, depicting 60 select scenes from the Appenzell region and showcasing the beauty of the Appenzellerland, home to the Säntis Malt whisky and founder Karl Locher. Buyers of an anniversary-edition whisky also obtain a corresponding NFT image which forms an integral part of the bottle and can only be traded freely in connection with it.

This special bottling by Brauerei Locher is offered as an exclusive, limited, and numbered edition of 60 bottles and is dedicated to Karl Locher himself, who turned 60 and initiated this project. The distillate from eight different exclusive casks, matured in the largest whisky cellars in Switzerland, was combined to produce an exquisite Single Malt whisky. Amongst other distillates, the “Karl Locher’s 60th Founder’s Anniversary Reserve” contains the very first Swiss single malt whisky. The new make spirit matured on the premises for at least two years in 80- to 140-year-old beer casks soaking up a fascinating history of our ancestors. Afterwards they get the second maturation in carefully selected cask of different origins, giving the whisky its distinctive flavour and colour. A personal statement by Karl Locher, the 60 whisky bottles tell company and family history in their own unique and authentic way.

Bottle and image belong inseparably together

“Innovation always starts in the mind with a bold idea and the courage to take risks. The idea for this limited edition arose in a conversation with Authena about novel technical possibilities of an NFT insert, in which real objects can be secured and inseparably encoded with virtual images. The picture accompanying the whisky shows an Appenzell landscape, where essential raw materials for the production of these exclusive whiskies come from,” says Karl Locher, owner of Brauerei Locher and founder of the renowned Säntis Malt. Karl Locher collaborates with 40 Swiss farmers who grow two-row barley in Appenzell’s and the Bündnerland region’s highlands (1100–1400 masl), which is used in the whisky alongside Alpstein spring water.

First Swiss whisky on the Blockchain

Information about the individual whisky bottles can be accessed at any time by using a smartphone to read the NFC tag applied to the bottle. At the heart of the system is Authena’s blockchain-based technology, which makes it virtually impossible to counterfeit exclusive bottles by protecting each individual unit with an NFC physical-digital. As soon as the bottle is opened and thus the seal is damaged, a corresponding message appears the next time the NFC tag is read by any user via smartphone.

This technical solution offers the greatest security to the clientele and at the same time enables permanent interaction between the involved parties and the final product. “This new crypto technology promises a new level of security for top global products. Our blockchain-based technology combined with physical-digital seals make product counterfeiting economically non-scalable and therefore unprofitable worldwide,” says Matteo Panzavolta, CEO of Authena AG.

Each of the special-edition bottles of the Karl Locher’s 60th Founder’s Anniversary Reserve”, strictly limited to 60, corresponds to an NFT. In this particular case, the NFT is proof of authenticity and ownership in the form of 1/60 of the 60-part Appenzell art piece by Martin Fuchs.

Each NFT image corresponds to a specific bottle and cannot be separated from it. As exclusive property of the owner of the respective bottle, it is recorded in a crypto wallet, making counterfeiting impossible. The production of high-proof beverages from grains or potatoes (staple foods) was illegal in Switzerland up until 1999. This law was repealed on July 1, 1999. Under the strict supervision of the Swiss Alcohol Board, Brauerei Locher had started producing the Appenzeller Säntis Malt whisky a year earlier and launched it in 2002. Both grains grown in the Swiss mountains and Alpstein spring water are used to produce this whisky. It is the only whisky worldwide that matures in beer casks that are up to 150 years old, embodying decades of brewery and tap tradition from over 100 breweries in Continental Europe. Legendary Kentucky Bourbon Trail® Program Seeking Proposals for Brand Refresh, Digital Platform

FRANKFORT, Ky. – The Kentucky Distillers’ Association today announced it is seeking proposals to refresh branding assets for its world-famous Kentucky Bourbon Trail® tourism attraction and develop a digital platform for the exceedingly successful Passport program.

The KDA created the Kentucky Bourbon Trail® tour in 1999 to welcome visitors with a behind-the-scenes look at the world’s most iconic Bourbon brands. The Kentucky Bourbon Trail Craft Tour® was born in 2012 to showcase the burgeoning craft distilling movement.

Mandy Ryan, the KDA’s Director of Kentucky Bourbon Trail® Experiences, said the last branding project happened in 2009 when only a handful of distilleries participated. “It’s been incredible to witness how much the tour has grown and evolved in the last 13 years,” she said.

“As we near the KBT’s 25th anniversary in 2024, we need a refreshed look, feel and voice reflecting today’s Kentucky Bourbon culture and the affluent and diverse visitors making their way to the birthplace of Bourbon.”

Additionally, the KDA is looking to develop a digital Passport program to meet modern visitors’ needs. The KDA created the Passport program in 2007 to encourage guests to explore multiple distilleries, with a free T-shirt as a reward for visiting them all.

Currently, visitors can purchase a physical Bourbon Trail™ Passport & Field Guide book containing information about KBT® and Craft Tour distillery attractions. Passport holders are able to “unlock” items and experiences that only they can purchase or enjoy.

“In 2007, smart phones had just come out so there wasn’t much need for digital assets. But with 42 distilleries to tour next year, people rely on digital platforms to plan their trip and navigate the Commonwealth’s scenic backroads.”

THE MACALLAN UNVEILS NEW GUEST RELEASE FOR THE RED COLLECTION

An expression of the brand’s rich history and heritage

The Macallan has introduced an exceptional new single malt whisky into The Red Collection – The Macallan 77 Years Old.

The Red Collection is a range of distinguished and rare single malt Scotch whiskies which captures The Macallan’s respect for tradition and craftsmanship. Inspired by the significance of the colour red throughout the history of the brand, it features a carefully curated selection of ongoing aged expressions and occasional high aged guest releases.

The Macallan 77 Years Old is an extraordinary, high aged single malt and the first guest release to be inaugurated into the collection since the launch of the range in 2020. An incredibly rare whisky dating back to 1945, it is among the world’s oldest Scotch whiskies and is one of the oldest bottlings ever released by the brand.

At the heart of The Red Collection is The Macallan 40 Years Old, The Macallan 50 Years Old and The Macallan 60 Years Old. Available in limited quantities globally, they are the oldest ongoing expressions ever offered by The Macallan. From time to time they are joined by special high aged guest releases, which commenced with The Macallan 71 Years Old, The Macallan 74 Years Old and The Macallan 78 Years Old in 2020 and are now followed by The Macallan 77 Years Old.

Together the revered bottlings reflect the pursuit of uncompromised excellence which has driven The Macallan since 1824.  The colour red has deep and long-standing significance for The Macallan. The red thread begins with Alexander Reid, the farmer and teacher who founded The Macallan in 1824. His surname means ‘the red one’ in Scots and was originally associated with red hair.

In 1903, owner Roderick Kemp launched The Macallan Choice Old range, reportedly shipped in cases labelled with distinctive red print to distinguish it from the brand’s existing whiskies, which featured black labelling. And in 1980, red featured strongly again in the release of The Macallan’s then oldest vintages as Allan Shiach, chairman at that time, tied a red ribbon around them to denote their age and value.

Distilled decades ago, in The Macallan’s signature curiously small copper stills, the ‘new make’ spirit was laid down in hand-picked oak casks and left to mature for 77 years. Over time, the carefully selected wood has shaped the unique character of the whisky, delivering the natural colour, distinctive aromas and full flavours of this aged single malt.

A beautiful balance of citrus fruits with hints of woodsmoke and antique oak open on the nose, paired with sweet notes of raisin and plump, chewy dates. Extremely rich and resinous, sumptuous baked custard, crystalised ginger, marmalade, sticky treacle and sweet smoke open on the palate, before moving into a medley of dried fruit. The finish is long with sweet woodsmoke, with the traditional flavour of Cherry Bakewell and the linger of tropical fruits.

In keeping with previous releases in the collection, the new expression is encased in a handcrafted oak presentation box, created in the UK, using the same sustainable European oak used to craft The Macallan’s oak casks. The box has been upholstered with sustainably sourced, soft red Scottish leather from Bridge of Weir Leather. The bottle itself has been hand finished and signed by The Macallan Master Whisky Maker, Kirsteen Campbell.

Kirsteen said: “The Macallan 77 Years Old is an incredible new high aged guest expression for The Red Collection, which has been crafted from some of the world’s oldest and rarest casks. It is a peerless single malt whisky that has slowly matured over seven extraordinary decades until it reached peak perfection.

“This exquisite release reveals The Macallan’s legacy of incomparable craftsmanship, knowledge and skills nurtured by The Macallan’s master whisky makers, past and present. It is a great privilege to play a role in crafting the remarkable single malts which form The Red Collection today.”

A new animated film and series of illustrations have been created, depicting The Macallan Red Collection transcending from the past to the present, in collaboration with renowned Spanish painter and artist Javi Aznarez. The Spanish creator is acclaimed for his striking graphic art which has featured in several Hollywood films, including respected director Wes Anderson’s recent feature, The French Dispatch.

The Macallan 77 Years Old has an RRSP of US$87,000 / £65,500 for the 70cl bottle and will be available from The Macallan Estate Boutique and The Macallan’s global network of domestic and travel retail outlets and in countries around the world from November 2022. Veteran Community Action Grants award $75,000 to nonprofits that serve the veteran community

BARDSTOWN, Ky. – Evan Williams Kentucky Straight Bourbon Whiskey announced today 15 recipients of the American-Made Heroes Foundation Fund grants. The 2022 Veteran Community Action Grants awarded $75,000 across projects that make a meaningful difference in the enjoyment and quality of life for veterans. From training service dogs to professional development and therapy, each program supports giving back to those who served.

As an American-made and owned Bourbon, Evan Williams is proud to support U.S. military veterans through the American-Made Heroes Foundation Fund. First established in 2020, the fund continues the brand’s support of veteran communities since launching the Evan Williams American-Made Heroes program and limited-edition label in 2015. To date, Evan Williams has recognized 48 veteran heroes on its American Hero Edition bottles and donated more than $500,000 to nonprofits.

The new song, featuring Scotland’s Admiral Fallow, is part of The Cairn Distillery’s goal to inspire visitors to pursue long-held ambitions

Three musical artists, Admiral Fallow from Scotland, Madeleine Roger from Canada, and Yu Tsan Pin from Taiwan, have fulfilled a shared ambition to collaborate with other artists internationally. The new song is inspired by a visit to The Cairn Distillery and its surrounding location in the Cairngorms National Park.

The Cairn Distillery, which opened its doors in October, is the first new distillery to be built in the Cairngorms National Park for more than a century. Its owners, Moray-based family business, Gordon & MacPhail, aims to build on their 127-year heritage of producing exceptional Scotch whisky and creating legacies that inspire future generations.

Cairns have inspired people to explore and discover new paths for millennia. To reflect that tradition, The Cairn Distillery aims to inspire – and facilitate – visitors to pursue a path they have always wanted to explore. To launch the initiative, The Cairn has worked with three artists who shared a goal to collaborate internationally and create a new track. The result is a song written by Admiral Fallow and Madeleine Roger, appropriately called The Cairn, which has been remixed by the founder of the Kind of Blue record label, Taiwan’s Yu Tsan Pin.

Admiral Fallow, Madeleine Roger, and Yu Tsan Pin met for the first time when they visited The Cairn when construction was near completion. Nestled on the banks of the river Spey on the northern frontier of the Cairngorms National Park, the distillery has been designed to reflect and respect its environment; a modern home for the ancient craft of whisky-making. From its sedum roof which encourages insect life to thrive, to the Caithness stone pathways, every aspect is designed to respect the natural shapes and colours around it.

Before, during and after their visit to the Highlands, the artists worked together to create the track which was written by Admiral Fallow, with lyrics co-written by Madeleine Roger, a singer-songwriter who hails from Winnipeg, Canada.

Singer-songwriter Louis Abbott, who formed the Scottish musical group Admiral Fallow in 2007, commented on the collaboration: “I’ve always taken inspiration from the landscape around me. This is a very unique collaboration for us, given that there’s a brand-new voice coming into the sound of music that we make. To work with Madeleine and Yu Tsan and show them one of Scotland’s best sites and take in the views, sounds and flavours of the Cairngorms National Park, there was a lot of pride in that, and we’re really pleased with the end result.”

Canadian songwriter Madeleine Roger, commented on her visit to the new distillery: “Everything was so beautiful, and I really tried to get a sense of the landscape: the way the buildings are made, the vast openness and the rocky mountains, and the way of life there. We each had a lot of time to ruminate on our observations about the area and then find something meaningful in that – and I really hope that sense of curiosity comes across in the song.”

Ian Chapman, marketing director of Gordon & MacPhail explained: “Having secured such a beautiful and awe-inspiring location overlooking the river Spey, we wanted to ensure our new distillery complements the majesty of the landscape.  We are delighted with the result, and we hope visitors leave feeling inspired. With that in mind we are thrilled to have worked with three incredible artists to create a new track to celebrate the opening of the distillery doors. I believe the song perfectly showcases everything we want to achieve here.”

The Cairn is open seven days a week all year round, visitor experiences start at £25, with three options available. With magnificent views of its stunning location just outside Grantown-on-Spey, each immersive experience culminates in a whisky tasting in The Discovery Room. Oaky and malty aromas combine with hedgerow fruits, rich cacao and a subtle hint of toasted chestnuts on the nose. To taste there is sweet liquorice, notes of rich autumn leaves and tannin, and a nuttiness that transforms to oaky spice and a long, lingering sweet, dried fruit finish.

Independent distiller reveals its first collaborator, Bread Ahead, to showcase the influence of yeast in whisky making 

Loch Lomond Whiskies is bringing its innovative whisky making style to life with a series of new collaborations with Remarkable Makers.

Working with liked-minded passionate creators and artisan craftspeople from other industries, the campaign intends to lift the lid on the complex whisky making process by explaining the nuances of its approach and showcasing how the slightest variations in method make incredible differences.

Loch Lomond Whiskies’ ‘Remarkable Makers Series’ launches with its first collaborator, Bread Ahead, a popular London bakery chain, which was selected to show the parallels of whisky and bread making – two age old crafts that use simple ingredients to create maximum flavour.

By taking people on a journey into the world of bread, Loch Lomond Whiskies and Bread Ahead are helping to educate people on whisky, inspiring a new appreciation for ingredients and bringing to life the method in an innovative and simplified way.

Specifically, the collaboration explains the role of yeast in whisky and uncovers the story of Loch Lomond Whiskies’ new Distillery Edition, that has been crafted using chardonnay wine yeast, an unusual ingredient in whisky making. Chardonnay wine yeast creates an intense zesty fruit and citrus flavour when added to whisky, and a fresher, sweeter flavour when added to bread.

The first in a new series of distillery editions, the single-malt perfectly captures Loch Lomond Distillery’s innovative approach to whisky making, underpinned by its use of its unique Straight Neck Stills. The only distiller in Scotland to use the Straight Neck Stills, Loch Lomond Whiskies is able to carefully manipulate the flavour at the point of distillation creating a lighter and distinctively fruit single malt, which is characterised by notes of citrus and orchard. When combined with the chardonnay wine yeast, the fruit flavours become supercharged creating an incredibly intense whisky that appeals to a broad range of whisky lovers.

Michael Henry, Loch Lomond Whiskies’ Master Blender, said: “There is a certain mystery to whisky-making, which is often seen as an infinitely complex form of science and art.

“While there are just three ingredients in whisky making – water, barley and yeast – there are endless possibilities to explore, with the most subtle changes in method creating distinctive differences in flavour, colour and alcohol concentration.

“Recognising that most people don’t have the desire to delve into the highly technical details, we are setting out to work with a collection of Remarkable Makers from other industries who exude the same passion and innovation in their fields, as we do in ours.

“By doing so, we hope to lift the curtain on whisky making, educating consumers in a new way, simplifying the process and taking them into our world through that of other creators.”

The new Loch Lomond Distillery Edition, a 9 Year Old Single Cask Malt, was first distilled in 2010. With only 270 bottles worldwide, it is an exclusive and rare expression, and crafted using chardonnay wine yeast in the fermentation process, which supercharges the citrus and orchard notes already amplified through the straight neck stills.

Loch Lomond Distillery Edition opens with freshly grated lemon peel, pear and white peach with vanilla and icing sugar. On the palate, there is creamy vanilla with a honey sweetness, grapefruit and tangy pineapple before a long finish of mouth-watering citrus, elderflower and gentle cinnamon spice.

Michael Henry continued: “At Loch Lomond Whiskies we are fuelled by an eternal spirit of exploration and are always seeking to experiment with what is possible.

“Loch Lomond Distillery Edition intimately showcases our distillery’s innovation and capabilities in whisky making, and perfectly highlights the role of our unique straight neck stills.

“Very few distilleries use chardonnay wine yeast in the fermentation process. The result is an exceptional single malt characterised by a distinctive zesty flavour, with intense notes of orchard and citrus, which truly reflects what we are capable of.”

The collaboration with Bread Ahead will see the creation of educational video content that brings consumers into the method. Master bakers from Bread Ahead have also created a distinctive Loch Lomond Whiskies ciabatta made using chardonnay wine and chardonnay wine yeast, which will be available to consumers in the new year.

Reece Collier, Bakery Director, from Bread Ahead said: “On the surface these two crafts feel worlds apart, but whisky and bread making share many similarities. Using simple ingredients – yeast, water, salt and flour – we can create incredible flavours and hundreds of variations in products from sourdough to focaccia, brioche and ciabatta. While in whisky you use yeast and water, along with barley, to experiment with single malts, single grain whisky and blends to create a vast spectrum of flavour possibilities.

“Like Loch Lomond Whiskies, we are driven to explore new flavours, using quality ingredients in an innovative way to create something memorable.

“This was as educational and inspiring a process for us as it will be for consumers, helping us to better understand the art of whisky making and encouraging us to look beyond the usual boundaries in bread making.

“Inspired by Loch Lomond Whiskies’ innovative approach, we have created a new ciabatta crafted using chardonnay yeast and chardonnay wine. When added to the bread, chardonnay wine yeast gives it a new lease of life and it becomes much sweeter.”

Loch Lomond Distillery can trace its roots back to the Littlemill distillery, which was established in 1772 and is the oldest licensed distillery in the world. Its current malt and grain distilleries, in Alexandria, Dunbartonshire, close to the banks of Loch Lomond, were commissioned in 1964 with first distillation in 1966.   

The synergies in whisky and bread making

  • Like bread, a fine whisky is the product of just a few simple ingredients. However, the way in which the ingredients are married together can have an incredible impact on the final flavour, colour, quality, smoothness and texture.
  • The slightest variation to ingredients and to the method will deliver distinctive differences in the end product.
  • Once all the ingredients have been mixed the dough goes through the kneading and resting stages, the whisky equivalent of distillation. While quite different processes, both have the effect of helping the flavours to develop.
  • Loch Lomond Whiskies uses its unique straight neck stills during the distillation, giving it greater control over the spirit than is traditionally achievable through a swan neck still.
  • The final step in the journey is in the baking process itself, which in whisky making is known as maturation.
  • The oven creates the same effect as a whisky cask, baking the dough over a certain amount of time, bringing it to life and transforming it from a mixture into something that can be consumed and enjoyed. It is the cask, as it is the oven, that also create the final colour, with the wood imparting certain aromas and contributing to the flavour profile.

About Glen Scotia: 

Distiller Glen Scotia has been producing single malt whisky in Campbeltown since 1832 and is one of three surviving distilleries in Campbeltown. The distillery still maintains much of its original design, including the fermenters, the stillroom, and the dunnage warehouse dating from the 1830s.To this day, the distillery team follow in the footsteps of their founders, using traditional methods, carefully creating the unique Campbeltown maritime style the brand has become world-famous for.

In 2021, Glen Scotia’s 25-Year-Old Single Malt Scotch whisky was awarded ‘Best In Show Whisky’ at the San Francisco World Spirits Competition. Over 3,800 entries across 31 categories were judged with Glen Scotia being awarded the overall winner across all countries and styles, making it ‘Best Whisky in the World’.
