Glenglassaugh Distillery is a Highland malt whisky distillery situated at Sandend Bay near Portsoy on the Banffshire coast with views north over the Moray Firth and the North Sea and is one of just a very few truly coastal Highland malt whisky distilleries. Glenglassaugh Distillery was established by James Moir and opened in 1875 on a site between the remains of Glassaugh windmill constructed in 1762 and the Craig Corn Mills. In an ideal location with barley and soft Speyside water to hand and sea breezes to pervade the distillery’s warehouses. When Glassaugh Station opened on the Moray Coastal Railway in 1884 Glenglassaugh Distillery gained speedy access the whisky blenders down south. This distillery was substantially re-built in 1959 and re-opened in 1960 only to closed in 1986. Glenglassaugh Distillery was purchased by the Scaent Group and back in production in December 2008. Visitors are welcomed at Glenglassaugh Distillery and tours are available by appointment.

Hooray for Virginia: Cocktails Now Being Served!

Virginia’s new law takes effect today, which means we can now serve full-sized cocktails at the Visitors Center. This is in light of a new law that increases the tasting limit to 3 ounces per person, per day. We’re adding a full-sized version of our seasonal, the Shenandoah Peach.

We’ve put a summertime twist on the classic whisky sour by adding a hint of peach, the perfect use for all of the delicious local peaches coming from Chiles Family Orchard. Better start planning your trip!

If you can’t make it in to see us, try the recipe at home. It is sure to please friends and family, just in time for the holiday weekend.

This recipe makes one cocktail: 1.5 ounces of Virginia Highland Malt 1 ounce of lime juice 1 ounce of lemon juice 1 ounce of peach simple syrup (see recipe below) Slice of fresh peach from a place like Chiles Family Orchards and a sprig of mint to garnish Combine the ingredients in a glass. Fill the glass with ice and stir. Garnish with a peach slice and mint sprig. Sit back and enjoy! To make peach simple syrup: Bring 3 cups distilled water to a boil in a 2 to 3 quart heavy saucepan over moderately high heat. Add 3 cups of sugar and stir until dissolved. Remove from heat and add 4 peach tea bags. Let steep for 20 minutes and then remove the tea bags. You may put leftover simple syrup into a container and refrigerate for up to two weeks.

Today, we introduce a slightly modified tour schedule. Tours will run daily at 11:30AM (except for Sundays), 1:30PM and 3:30PM. On Fridays, Saturdays and Sundays, we’ve added a 4:30PM tour. Starting July 17th, we’ll be opening the Visitors Center at 12PM on Sundays. That’s an extra hour to enjoy Virginia Highland Malt!

There will be local food, beer, wine, spirits and vendors on hand.

Wintergreen Summer Music Series,  July 26, 7 – 8:30PM, RVCC: Bring a blanket and a picnic dinner, and enjoy the festive sounds of Albemarle Pipes and Drums, a traditional Scottish and British Isles-style pipe and drum corps from Charlottesville, Virginia for “No Plaid Required”. We’ll be serving our Virginia Highland Malt Whisky from 7PM-8:30PM to top off this Scottish-themed event, one of several included in the Wintergreen Summer Music Series. Donations will be shared between Wintergreen Performing Art’s and Albemarle Pipes’ educational initiatives and Rockfish Valley Community Center’s community work.

Veritas Wine and Whisky Dinner, at the Farmhouse, July 29: Join Virginia Distillery Company along with the team at  Veritas for a fun and delicious evening of  wine and whisky. The dinner will be at the Farmhouse at Veritas, and each course will be paired with a Veritas wine or a Virginia Highland Malt cocktail, or poured neat. Barrels, Bottles & Casks, July 29 & 30, Thomas Jefferson’s Poplar Forest: We’re venturing to Popular Forest’s Barrels, Bottles, and Casks for a second time this year by popular demand! This event returns with a focus on the beverages and spirits Thomas Jefferson and the plantation’s enslaved community consumed during the hot summer months. These guided tours begin in Jefferson’s kitchen and progress through the house with stops along the way to sample different 19th century beverages and share insights into the types of foods enjoyed on the plantation during Jefferson’s time. We will be serving up our version of the historic Cherry Bounce, a favorite cocktail among our founding fathers.  Tours are available Friday, July 29 and Saturday, July 30 at 6:00 and 7:00 p.m. each night. Admission is $25 per person and can be purchased here or by calling the Museum Shop at 434.534.8120.

What is bourbon? A guide from The Whisky Exchange

What is bourbon? That’s Jack Daniel’s, right? Whiskey? Something to do with rye? Well, yes to all three, actually. Very simply, bourbon is a mixture of grains, ground up, mixed with water and heated, fermented with the help of yeast, distilled, then aged in oak barrels.

All very simple. But are bourbon and American whiskey the same thing? No. One way to remember is that all bourbons are whiskeys, but not all whiskeys are bourbons. American whiskey includes sub-categories including bourbon, straight bourbon, rye, wheat, malt, rye malt and corn, each with its own set of rules. For example, corn whiskey must be made with at least 80% corn; the grain mixture (‘mash bill’) for rye whiskey must be a minimum of 51% rye, and so on. But all American whiskeys have the following in common:

  • they must be distilled at no higher than 80% ABV
  • they must be matured in charred, new oak containers (with the exception of corn whiskey, which can be stored in used or uncharred barrels)
  • the ABV of the whiskey must be 62.5% ABV or lower when it enters the cask.

Corn The main ingredient in bourbon, corn must make up at least 51% of bourbon mash bills; in practice, it makes up about 70%. When the spirit is very young, the corn flavour is very noticeable, but mellows with age, although the sweetness will persist.

Rye Delivering peppery spice and power, rye is the most characterful of all grains used in bourbon production. Typically, rye normally makes up 10% of the mash bill, but ‘high-rye’ bourbons, such as Four Roses Single Barrel, are higher, up to about 35% rye.

Barley Used primarily because it is so effective at converting fermentable starches to sugar, barley is the workhorse ingredient, and usually makes up 10-15% of the mash bill.

Wheat The opposite of rye, the addition of wheat will make the resultant spirit softer and smoother, and – because wheat’s inclusion will usually be at the expense of rye – sweeter. In practice, wheat rarely makes up more than 10% of the mash bill.

How is bourbon made?

The grains are ground up then added to a large ‘mash cooker’ along with water and cooked for 30 minutes, to break down the starch into fermentable sugars.

The mash is then transferred to a fermentation tank along with a small proportion of ‘sour mash’, spent mash from a previous distillation which helps get fermentation going, a similar effect to a yeast ‘starter’ used when making sourdough bread. The finished product is a beer-like substance with an ABV of around 6-8%.

The liquid is then distilled twice; the first time in a column still to approximately 50-60% ABV, then a second time, this time in a copper pot still, up to roughly 70% ABV. The new-make spirit, known as ‘white dog’, is transferred to new, charred, white-oak barrels (almost always American, but French is also permitted).

Bourbon categories

Straight bourbon If you see the term ‘straight bourbon’ on your bottle, you know that the liquid has been aged in new oak for a minimum of two years.

Single barrel Single-barrel bourbons are always worth trying, given that the vast majority of bourbons are made by mixing (or ‘vatting’) dozens or even hundreds of barrels to ensure consistency of flavour.

Small batch Any bourbon bearing the words ‘small batch’ on the label could be a batch of 10 barrels or 10,000. In practice, the vast majority of small-batch bourbons will not be a marriage of hundreds of barrels, and more importantly, the reality is that extra care and attention is placed on these bottlings.

You will often hear people tell you that Jack Daniel’s is not a bourbon, as it undergoes the Lincoln County Process – that is, filtered through maple charcoal, which actually removes flavour rather than adding it, so technically it is allowed to be called ‘bourbon’. You won’t find the word anywhere on the label, though, as the company chooses to describe it as Tennessee whiskey.

How do you drink bourbon?

Bourbon is a highly versatile spirit, and can be drunk neat, mixed and served long. There are also a number of iconic bourbon cocktails, such as the Manhattan, Old Fashioned and Whiskey Sour – so it’s a great idea to have a bottle in your drinks cupboard. Oh, and despite some of the headlines you might see, there’s no such thing as the best bourbon – it’s all down to your personal taste. So, if you find an entry-level bourbon you prefer to one twice the price, no problem!

  • the first-ever single-barrel example was Blanton’s bourbon, released in 1984

  • 95% of US bourbon is made in Kentucky.
