The Dalmore single malt is one of the most popular and iconic of all Scotch whiskies. Founded in 1839 by Alexander Matheson, the distillery sits by the banks of the Cromarty Firth, deep in the Scottish Highlands. Dalmore’s heritage dates back to 1263, when King Alexander III was saved from a charging stag. The Mackenzie clan, whose descendants owned the distillery from 1687 until 1960, were granted the right to use the twelve pointed Royal stag emblem on their coat of arms. The iconic silver stag now adorns every bottle of The Dalmore single malt.

The distillery has been led by a succession of influential craftsmen, setting standards throughout its 181 year history. The current Master Distiller is Richard Paterson, a pioneer in his field and one of the industry’s great communicators and ambassadors. He has been the creative force behind The Dalmore for nearly five decades.

The Dalmore single malt is typically rich and robust with flavours of dried fruit, almond, toffee, citrus, and spice. Maturation often takes place in ex-Solera Sherry casks that have been soaked in Oloroso and PX Sherry for decades. Port pipes (sourced from Graham’s) and red wine barriques are also widely used alongside traditional ex-Bourbon and ex-Sherry casks. Their range comprises traditional age statement whiskies, non-age statement specialities, and high end, small batch, luxury bottlings.

Hard To Find Whisky “Distillery Focus: Arran” – Scotch Whisky News

Known as “Scotland in miniature’ for its diverse environment and stunning scenery, The Isle of Arran has become one of Scotland’s most popular destinations for whisky enthusiasts. This remote island was once home to over 50 illicit distilleries that lay beyond the reach of the exciseman. The Island’s whisky industry was revived with the construction of the Arran Distillery (now being rebranded as The Lochranza Distillery) which officially opened in 1995.

Arran is one of Scotland’s last remaining independently owned distilleries, producing whisky that is typically unpeated, sweet, smooth and fruity. A diverse portfolio includes a wide range of cask finished whiskies, higher age statement bottlings, cask strength releases, and peated whisky bottled as Machrie Moor.

In 2019, Isle of Arran Distillers opened the Lagg Distillery which will focus on producing a heavily peated style of whisky, in contrast to the signature sweet, unpeated style produced at Lochranza.

Distillery Focus: Tomatin at Hard To Find Whisky – Scotch Whisky News

Founded in 1897, Tomatin grew to become the largest malt whisky distillery in Scotland supplying fine malt whisky to blenders across the country. Like many others, Tomatin fell victim to the whisky crash of the early 1980’s but was rescued by Japanese investors in 1986. Tomatin’s continued success today is down to a focus on their Single Malts rather than bulk production and also their use of high quality first fill American Oak and Sherry casks, giving subtlety and finesse to the high quality spirit.

Hard To Find Whisky “Distillery Focus: Glenmorangie” – Scotch Whisky News

 

Glenmorangie was founded in 1843 by William Matheson who converted the Morangie brewery in Tain into a distillery. The character of the whisky owes much to Glenmorangie’s distinctive long necked stills – the tallest in Scotland. Imported from a Gin distillery, these unusual stills produce a light, delicate, fruity spirit with dry, cereal undertones.The majority of the spirit is matured in American oak casks from Missouri that impart flavours of vanilla, tropical fruits, honey, crème brĂ»lĂ©e and, in older whiskies, chocolate.

Despite being one of the biggest single malt brands in the world (and the best selling in Scotland), Glenmorangie have always had an innovative approach to cask maturation. They pioneered the practice of “finishing” whiskies, where mature whisky is transferred to ex-wine casks, such as Port, Sherry, red wine, or dessert wine, to create new layers of flavour. Alongside the core range, Glenmorangie continue to release small batches of innovative whiskies matured in unusual casks, and have even experimented with chocolate malt, local barley and natural yeast strains.

With its remote location as Scotland’s most northerly distillery and close association with Nordic mythology, Highland Park has built a strong, cult following with it’s whiskies. Highland Park’s signature flavour is slightly smoky, aromatic and richly fruity. Founded in 1798 in Kirkwall on the Isle of Orkney, it wasn’t until the 1970’s that Highland Park Single Malt became available.

Fast forward to today and there is a core range of age stated whiskies known the world over. Add to that a range of limited releases that celebrate the distillery’s Orcadian history and Viking roots and you have one of the most visible and well known whisky brands in the world.
