It takes a minimum of three years of cask maturation for a whisky to be legally classified as Scotch. But at Diageo, we allow our whiskies to mature far longer than that, using patience and expertise to turn time into liquid gold.

We have always believed that the magic of Scotch whisky lies in its unique maturation process – a slow, transformative journey that takes place within the humble cask. For generations, our coopers, distillers, and blenders have relied on experience, intuition, and tradition to craft exceptional spirits.

The maturation journey

As whisky ages in oak casks, it transforms from a raw spirit into a complex, nuanced sip, extracting flavours and aromas from the wood and developing its signature character. The interaction between the spirit and cask impacts the whisky’s final flavour, making high quality oak casks essential to maturation. This process, often lasting decades, enriches the whisky’s profile and increases its market value.

At Diageo, we use oak casks which nurture and mature the spirit, adding sweetness, colour, and complexity. Most of our Scotch matures in former bourbon casks for vanilla and coconut notes, or seasoned European Oak and ex-sherry casks for richness. Cask selection, finishing, our investment in maturation technology, and the Master Blender’s expertise ensure each whisky reaches its full potential.

How do we use cutting-edge data and technology in Scotch production?

Producing a quality Scotch whisky is an art. The new Knowledge Transfer Partnership with Heriot-Watt and Diageo is particularly exciting because it combines traditional and novel methods to generate ‘big data’ that may be used to further understand whisky maturation.

We currently have more than 10 million casks of whisky for our 100 brands maturing across Scotland, preparing for future celebrations around the world. Over the last decade, we have invested more than $1 billion dollars into Scotch whisky, including data insight and technology solutions, which put us at the cutting edge of Scotch production.

Our Scotch Intelligence Platform (SIP) is central to this process, with AI and increased scenario modelling allowing us to reclaim tens of thousands of litres of whisky from liquid losses during maturation. For many years, the annual Laphroaig Cairdeas release has been one of the most anticipated moments in the whisky calendar. Devotees of this iconic Islay distillery—and collectors around the world—look forward to these limited releases, which often showcase unusual cask finishes, higher proofs, and creative interpretations of the house style. Known for producing “the most richly flavored of all Scotch whiskies,” Laphroaig uses Cairdeas to explore new dimensions of its unmistakable maritime, smoky character.

For a long time, the formula worked perfectly. These special bottlings were consistently priced around $80, offering outstanding quality and collectability at a fair cost, year after year. Then, in 2022, something shifted: the price rose to $100, and for the first time in memory, bottles lingered on shelves. It wasn’t that the whisky had declined in quality—if anything, the craftsmanship remained as sharp as ever—but the jump disrupted a long-standing equilibrium between value and exclusivity.

Fast-forward to today, and we find ourselves in a rare position: two different Cairdeas bottlings available at a discounted closeout price. At about 30% lower than the original release price, this moment feels like a small gift from the whisky gods. While it’s unlikely that Suntory Global Spirits, the owner of Laphroaig, will lock in such pricing for the long term, it’s a chance to stock up on a whisky that once sold out in a heartbeat.

The 2023 Cairdeas is a worthy reminder of why this series became so beloved in the first place. In the glass, its deep gold color (0.8) suggests restraint in the cask finishing compared with some previous wine-driven editions. Rather than pushing heavy wine notes, this bottling focuses on balance and integration. The wine casks still contribute salted cooked citrus, raspberry jam, and persimmon, but these sit comfortably alongside exotic spice, robust wood smoke, hints of metal polish, ginger, smoked fish, and a bright, cider-like lift with orange zest.

On the palate, an earthy green peat takes control early, drying the entry with a satisfying ashy edge before peppery spice builds. Slowly, the fruit notes from the nose return, lending a layered sweetness that stretches into the long, harmonious finish. This is a Cairdeas that stays true to Laphroaig’s peaty core while offering an unusually refined and integrated profile—smoky without being blunt, fruity without being cloying, and structured without losing drinkability. Even at its original $100, it would be a serious contender in today’s crowded market, but at $75 it becomes an easy recommendation for any Islay fan. It’s also a reminder that some of the best whisky experiences come when price and quality are in sync—a fleeting alignment worth enjoying while it lasts.

For this edition—the first from new Master Distiller Barry MacAffer—they’ve truly hit it out of the park. The marriage of 75% Madeira casks with 25% white Port creates a harmonious balance of vivid fruit, floral-herbal lift, and earthy wood.

The nose opens with creamy lemon custard, tropical fruit, and spring blossoms drifting through woodland air. On the palate, the signature earthy smoke is wrapped in bright citrus oil and a light caramel glaze. The finish is lively, offering lemon zest, pineapple rind, and soft oak before settling into classic Laphroaig peat. This is a playful, confident release that any Islay fan will appreciate—especially those proud to call themselves Friends of Laphroaig.

Bunnahabhain’s initial aim was to produce Whisky for blending only. While it was used across the industry, it performed a central role in three famous blends: Famous Grouse, Cutty Sark and Black Bottle. Following a short period of closure in the early 1980s, Bunnahabhain re-emerged as a Single Malt.

Bunnahabhain is known for producing a distinctive style of Islay single malt that is notably lighter and less peated than most others from the region. Bunnahabhain whiskies often feature maritime influences, rich sherry cask aging, and a smooth, complex character.

Suntory Global Spirits showcases authentic Japanese Whisky at the Financial Times Weekend Festival in Washington, D.C.

As global interest in Japanese Whisky continues to rise, we take pride in pioneering efforts to enhance transparency regarding what defines authentic Japanese Whisky and safeguarding the category’s reputation worldwide. Since establishing Japan’s first malt whisky distillery at Yamazaki in 1923, our relentless pursuit of quality and perfection have led to our Yamazaki, Hakushu and Hibiki whiskies bringing global attention and prestige to Japanese Whisky.

The Japan Spirits & Liqueurs Makers’ Association (JSLMA) established a formal definition for Japanese Whisky in 2021, marking a significant milestone in the industry’s commitment to authenticity. We support their dedication to strengthen regulations by advocating for these “Standards for Labeling Japanese Whisky” to be legally binding and plan to roll out their new Japanese Whisky logo on our House of Suntory products early next year.

This initiative aims to clarify labeling standards concerning the manufacturing process and quality of Japanese Whisky. To qualify as authentic, the whiskies must use Japanese water, be aged in Japan in wooden casks for a minimum of three years, and bottling must take place in Japan. Learn more on the standards here.

On May 10, we had the opportunity to showcase our incredible House of Suntory Japanese Whisky at the Financial Times Weekend Festival in Washington, D.C. We hosted two engaging tasting sessions featuring Toki Japanese Whisky, Hibiki Japanese Harmony and Yamazaki 12 Year Old. House of Suntory Global Advocacy Manager James Bowker led the tastings and shared compelling stories about Suntory’s rich history as the founding house of Japanese Whisky.

Our President of The House of Suntory Masaki ‘Mory’ Morimoto then spoke with Angela Mackay, Managing Director Asia Pacific and Global Publisher of FT Live, to discuss how the company is driving business growth in key markets and leveraging our dedication to sustainable production practices like water conservation to meet our ambition to become the World’s Most Admired Premium Spirits Company. He also spoke about Suntory’s family legacy as a distinct marker of our heritage and monozukuri craftsmanship, with the recent appointment of Nobuhiro Torii — the great-grandson of Suntory founder Shinjiro Torii — as President of Suntory Holdings.

Looking ahead, we believe that through collaboration with the JSLMA and our commitment to delivering the highest quality products, the legacy of Japanese Whisky will not only endure but flourish on the global stage.
