This month we are releasing eight (8) new PROVENANCE Single Malt bottlings, three of which also appear as 20 cls bottlings, plus 3 new bottlings of PREMIER BARREL..

PROVENANCE Tasting Notes follow:

PRV1012 CAOL ILA YOUNG & FEISTY

Opens salty and sooty on the nose smoked ham style before a burnt biscuit quality appears. The palate is oily, carrying a dry, smoky character and develops to a charred malt quality. Long is an understatement here as the finish is massively Islay in style and just runs and runs. (J)

PRV1029 TALISKER YOUNG & FEISTY

Clean, salty, peppery, ozone-y- and, sweetly smoked all apply to its nose. Oceanic, with sweet peat and sweet malt plus iodine warming up the palate it all runs to a finish with phenolic quality, mocha and more salty cues. (F)

PRV1010 GLEN GRANT 9 YEARS

The nose opens with a fruity (macerated watermelon) style then develops to a delicate honeyd sweet character. Initially sweetly spiced and still honeyd, the palate then runs to a peppery, spiced quality. The finish is medium long, still spiced and carries an orange pith style. (J)

PRV1028 BALMENACH 10 YEARS

Opens clean and fresh on the nose, carrying a crushed sugar and fruitily sweet character. The palate remains sweet and develops to a crisp malty quality running to smooth honey. The finish is medium long now running spicier with a dry oak style. (J)

PRV1019 MACDUFF 15 YEARS

Opens with a buttery sweet character on the nose and carries a creamy vanillad quality plus apricot jam. The palate is sweetly spiced, carrying a ripe fruit character. The finish is medium long with barley sugar, then develops to a drier, spicy style. (J)

PRV1024 BRAEVAL 12 YEARS

The nose opens attractively spiced with a bees wax quality and develops to flambéed orange zest crêpe suzette style. The palate is warming, still spicy with more orange qualities now infused in warm caramel. The long finish remains zesty before running drier to lemon pith. (J)

PRV1026 TAMDHU 12 YEARS

Heavy with toffee and a crunched sugar character as it opens on the nose softening to a more citric and clean style.. The palate is full mouthcoatingly sweet, again with a toffee flavour later with juicy barley, raisin and honeyall of which are rounded up in the big, more spiced finish (F)

PRV1016 GLENGOYNE 15 YEARS

Opens fresh and fragrant on the nose, carrying a buttery, sweet quality plus a malty character. The palate opens sweetly and develops to candied fruit. The finish is medium long, still sweet, with toffee and a late orange pith style. (J)

PBR0126 Talisker 5 YEARS

Talk to me Talisker and tabulate tutorially your talismanic penchant for perky pepperiness and peat with particulary pelagic properties of stimulating sweet and saline spirited/spell boundedness. (F)

PBR0127 Craigellachie 8 YEARS

Covet this cracker of a Craigellachie! Gloriously gristy, sympathetically spiced furthermore, full bodied fundamentally FIRST rate and frankly frightfully fructiferous (F)

PBR0128 Mortlach 10 YEARS

Michty (sic) me! Manage magnanimously my monumental mainstay of this mollifying Mortlach. Hospitably hail its hallmarked halo of honest, heart warming and high spirited honey. (F)

Kilchoman Distillery was founded in 2005 and is the first distillery to be built on Islay for 120 years. It is a farm distillery and a proportion of the barley used in production is grown and malted at the distillery. The spirit is filled into a combination of bourbon barrels from Buffalo Distillery, Kentucky, USA and oloroso sherry butts from Miguel Martin in Spain. This is the third 100% Islay release from Kilchoman and has been produced from barley grown, malted, distilled, matured and bottled at the distillery. It has been aged for 4 years in a combination of fresh and refill bourbon barrels.

The saloon of a classic yacht

Speyside, Spey

Gorgeous colour and an immediate impact of sherry-related aromas: dried fruits, figs macerated in dark rum, strong black tea, crème caramel, polished oak and waxed leather – the image of a classic yacht sprang to mind. The taste is bitter-sweet, with burnt salt taffy and ginger cake, but also herbal and spicy notes (tarragon and mouth snuff) and chilli chocolate in the long finish. Immediate sulphur notes with water, but these soon give way to crème brulée, fruit cake, dried figs and old furniture. Still bitter-sweet to taste (burnt raisins, caramel); at once cooling and warming, with a hint of blackcurrant in the finish. The distillery was built by a very large man named John Smith.

Drinking tip: A reward for the crew who won the race

Muddy Tractor 

Highland, Island

Rich Madagascan vanilla with lemon barley to start on the nose. On the first sip of spirit, the panel’s composure was tested. There was an immediate welling up of eyes. The sensation was akin to sucking on full strength peppermint sweets. An old mud covered tractor remembered one of the panellists. An unexpected combination of flavours mingled favourably- lapsang souchong tea and chilli chocolate. With water the Panel got recently extinguished camp fires and a heather covered field on a hot summer’s day interspersed with wild garlic. The mouth had us chewing on smoked bacon to start, then were sucking on dusty boiled lemon sweets for our dessert.

Terrific layering on the nose – peat-smoke, coal and bandages – seaweed, shellfish and smoked haddock – melon, coconut and burnt orange – toffee, caramel and Cornish cream teas – a complex entanglement of pleasing aromas. With water we got apple, banana, peppered fish soup and bonfires – one or two panellists got paint. The palate was big and tongue-roasting – honey, toffee and marshmallow sweetness arm-wrestling with smoke, ash and salty pork crackling. In reduction we tasted more delicate smoke and buttery mackerel (fishing boats in Campbeltown harbour?) – all balanced by sweeter flavours of crystallised orange – from peaty to sweetie. From the oldest surviving Campbeltown distillery.

Drinking tip: For watching the world go by – especially by the harbour

Curious but good 

Grain 

The shimmering, shape-shifting nose started with wood glue, then cricket bats, cigar boxes and polished furniture, before soaring into crème caramel, buttered brioche, vanilla and cafe crème – eventually we found tea-smoked duck. To taste, we got Lapsang Souchong and Turkish coffee, banana toffee and ‘licking butterscotch off a polished table’. The reduced nose seemed slightly odd, with initial raisin, Riesling and truffle oil resolving into honey, toffee and crunchy nut cornflake sweetness. The palate became sweet and spicy, ‘curious but good’ – hickory-smoked almonds, toasted hazelnuts, sandalwood, five-spice powder and apple skins in the finish. The Haymarket-based distillery closed in 1993.

Drinking tip: A dram to offer when something different is needed – needs an open mind
