This month we are releasing two (2) new PROVENANCE Single Malt bottlings.

PROVENANCE Tasting Notes follow:

PRV1044 Talisker Young & Feisty

Briny, with an ozone clean quality and a soft smoky trail apparent on the nose. The palate is pelagic/nicely maritime, lightly peppered/warming plus peat and iodine. It runs to a finish full of espresso, dark chocolate, soft peat and a sprinkle of salt. (F)

PRV0979 Glen Moray 11 YEARS

Detect the mix of honey and mixed spices on the nose plus some late vanilla sprinkled fruit salad. Sweet one second – dry the next on the early palate till it settles later into a big barley, maple syrup wallop! Spices come through on the finish – some warming camphor, amongst those same flavours from the palate. (F)

I hope you are all well. Just sending a quick newsflash with the latest news here at Springbank…

Springbank Gaja Barolo now available

The newest addition to the Wood Expression family is now available for purchase. The Springbank 9 year old Gaja Barolo is bottled at 54.7% and there are only 11,000 bottles available. The first 4 years were spent in refill Bourbon casks and the final 5 were in refill Gaja Barolo casks. The retail price for this bottle is £58.00 but you will receive your 10% Society discount making it £52.20 for Society members. I tasted it yesterday and it was deelicious!

The tasting notes for this bottling are:

Colour: Golden honey

Nose: Initial aromas of liquorice are followed by poached pears, chocolate, cream and marzipan. Springbank’s traditional earthy and coastal influence qualities also make an appearance.

Palate: There is no mistaking the red wine tannis from the Gaja Barolo casks, complemented by earthy and woody notes. Swedish lingonberries and rhubarb crumble give the whisky some sweetness and a touch of sea salt comes into play.

Finish: This is like a raspberry ripple ice cream but combined with peat and spices and a medium dry finish.

New Society bottling – due for bottling mid-November

The new Society bottling is due to be bottled mid-November and will be available for release by the end of November. As mentioned in the last newsletter, it will be a Springbank 12 year old Fresh Port and the price will be £55.00.

Also mentioned before, as there are only going to be 300 bottles from this cask it will be limited to one per person to begin with to keep it fair for all members. The reserve list is filling up very quickly but there are still a few bottles available so if you have not reserved your bottle yet and would like to, please get in touch with me soon.

The first release was a Springbank 10 year old which was matured in 100% bourbon casks and was bottled at marrying strength (49.7%). This proved to be very popular and flew off the shelves so we now have the second batch available in store which is bottled at 49.3%. The label for each release will feature a different photo from Springbank distillery.

•1991 Cambus 21 Year Old K&L Exclusive Signatory Single Barrel Cask Strength Single Grain Whisky 750ml ($109.99)
Here we go! After two years of hunting for a replacement to our wildly successful single grain Girvan, we’ve finally found a cask of grain worthy of our discerning customers. Cambus is among the most difficult-to-find grain distilleries, for a couple of reasons: it’s been closed since 1993, and it’s rumored to be at the heart of the Johnnie Walker Blue bottlings. No surprise that it’s difficult to find–if Diageo is relying on this whisky to produce one of its most sought-after blends, it will certainly be controlling as much stock as possible. Occasionally, small lots slip out of the blender’s grasp and into our glass! Here we have a super-high quality grain in all its awkward splendor. This nose is all oak spice and vibrant fresh fruit. Clove, coriander, freshly grated nutmeg, apple skins, under-ripe mango. On the palate, the fruit takes over, plus vanilla cake frosting, and the baking spices remain subdued, with a bit of coconut and som e fresh oak notes. A perfect example of why sometimes, we must not blend all of the grain. (David Othenin-Girard, K&L Spirits Buyer)

•1997 Laphroaig 16 Year Old K&L Exclusive Signatory Single Barrel Cask Strength Single Malt Whisky 750ml ($115.99)
We love Laphroaig. Everybody loves Laphroaig (if they don’t hate it). Not a lot of people on the fence regarding Laphroaig. That’s why it’s really hard to get. It’s really expensive as well; this is both cause and effect. We’ve seen prices go up, while quality has remained consistent. We took on a middle-aged Laphroaig last year and sold it for what seemed like a reasonable $140. Now we have another cask of Laphroaig and it’s difficult not to oversell it. If we’re always so effusive about every whisky we taste, people start to question our judgment. So, I’m just going to say that this is top-tier Laphroaig. It’s in that prime moment between the intensity of a young Laphroaig and that depth of the older offerings from this legendary distillery. This was the whisky that we spent time wringing our hands about because we were expecting to be paying the same price as our 18 year from 2012, but somehow we were able to get the pri ce down to something far more reasonable. It won’t last, and it will go down as a hot deal in our single barrel history. Don’t miss it! (David Othenin-Girard, K&L Spirits Buyer)

•Faultline Straight Bourbon Whiskey 750ml ($39.99)
We’ve been doing gin and single malt for years, and now rum, so why not throw our hat in the Bourbon pool? One of the obstacles that kept us from making a Faultline Bourbon earlier was availability: the current demand has made the extra barrel a thing of the past. One of the only distilleries that would sell us a cask for a private label was the old LDI distillery in Indiana, but with the already overcrowded LDI market (Bulleit Rye, Templeton Rye, High West, etc) we didn’t think our product would be different enough, or of the quality we desired, for the Faultline name. That’s when John Little from Smooth Ambler stepped in and said he’d be happy to help us do something special. If we were going to work with LDI casks, then we needed the capability to blend something special to taste – the specs wouldn’t sell this baby. John had some incredible 10 year old low rye formula that we used in conjunction with some 7 year high rye. We kept tastin g and tasting until we found the sweet spot at 100 proof. It’s FAR better than I ever thought it would be. I hoped we could provide something fun and different, but the final whiskey is phenomenal. It’s rich, with sweet fruit right on the entry, a full-bodied mid-palate, and a long, rich, spicy finish. It tastes like it came from Four Roses or somewhere fancy and at 50% it pops in all the right places. I hope we can make another batch like this because this Bourbon is the new king of K&L. Taste it if you don’t believe me. (David Driscoll)

•Four Roses K&L Exclusive OBSV Single Barrel Cask Strength Bourbon 750ml ($59.99)
When I was having trouble finding a cask of Four Roses single barrel I liked, their distiller Jim Rutledge sent me an email saying, “What’s up?” I told him that all of the samples they had been sending out were good, but that I was being picky. I was waiting for the gut feeling I get and the excitement that goes through my spine when I taste something superlative. Jim told me, “Well I’m going to drive out to the warehouse tomorrow and pick your samples myself. I’m sure I can find something that will excite you.” And so he did. And now that whiskey is here. There’s nothing out of the ordinary or unique about this whiskey, no ripe banana notes or soft cherries, and nothing new. This OBSV cask is simply straightforward, classic, and honest — much like Rutledge himself. Creamy vanilla, a healthy dose of spice, lots of sweet wood on the finish with a touch of burnt sugar. It’s a whopper, too, at 61.6% and 10.5 years of age. It’s not a Bourbon you absolutely need to have — there’s nothing collectable about it and it’s not something we haven’t seen before. It’s probably a Bourbon that you’ll want, however. I want one, at least. (David Driscoll, Spirits Buyer

•Clear Creek McCarthy’s Oregon Single Malt Whiskey 750ml ($53.99)
The new Fall 2013 release of McCarthy’s is here! Highly anticipated and sure to sell fast. Whereas the last batch carried more new oak richness and little smoke, the peat is back this time around, but with another dose of big oak. Both are equally in check and work together quite lovely. One of the best batches we’ve tasted yet. Much improved over the last one for sure.

Gingerbread man selling sweet delights 

Cask No. 1.170                          $150

Speyside, Spey

Black pepper and old books on polished wood made us sneeze – then a gingerbread man appeared, pulling a handcart of sweet delights (runny honey, brandy snaps, rum truffles, toffee, coconut, figs, raisins, plums). On the palate, a sweet damsel was being held ever so expertly by an oaky hero in a spicy embrace – rich spiced figs, mince pies, roasted chestnuts and nectarine stones. Water brought resinous logs and Daddies brown sauce to tickle the nose. The palate’s high-revving, vanilla virtuoso electric guitar solo, slowly faded to a Christmas spice crackle and hum. Another fine dram from the Marypark potion emporium.

Drinking tip: A fine fireside to suit that time from autumn’s first chill to the days before Christmas – but any day with a ‘y’ in it would do

Eating ice cream in a humidor

Highland, Island

A mixture of sweet and fruity notes are predominant to start with; lemon meringue pie, buttered mandarin orange cake, Haribo crocodile sweets, rum soaked raisin and passion fruit sorbet. With time sultanas and nutmeg appear but all the while there is an ever so light clean smoke prevalent. The taste neat like eating an ice cream in a humidor. Less sweet than on the nose with maritime flavours of oysters, shrimps and other shellfish more dominant. After adding water the aroma changes to spare ribs on a barbeque but still sweet; Scotch pancakes, milk chocolate and a flaming banana pizza. The taste is now minty, cooling and slightly salty and in the finish like an iced milk shake. This sample comes from the distillery whose 18 year-old single malt was crowned ‘best spirit in the world’.

Drinking tip: A pudding dram or whilst waiting for your coffee after dessert

Having a rose petal bath in the Glasgow School of Art

Speyside, Lossie

We found ourselves, after a prolonged silence in the Panel, in the Glasgow School of Art. Canvas, easels, paints, pastels, watercolours, spray adhesives, brushes, linseed oil cleaner – you get the picture! But this is not all, we also find a perfumey note, rose petals and Elderflower jelly with fresh raspberries. The taste neat is kind and soft like rosewater-flavoured Turkish Delight or a very light milk chocolate bar. Releasing any tension, it leaves you wonderfully relaxed with not a care in the world. Holds water well but don‘t add a lot, pretty much the same aromas as neat with the addition of an old leather armchair to recline into. The intensity on the palate increases – if that is possible – spectacular mouth feel and the aftertaste goes on forever.

Drinking tip: Having a rose petal bath, candles, relaxing music…

Spun sugar on polished wood 

Cask No. 125.59                                $95

Highland, Northern

The complex, intriguing nose had various facets – spun sugar and Crunchie bar sweetness; lavender and polished wood; tar, treacle toffees and black tea; rich Morello cherries, dates and walnuts; finally, pleasant maple, vanilla and pumpkin spice. The unreduced palate had parma violets and fizzers, slight mintyness and lots of muscovado, treacle, burnt sugar and dark toffee. The nose became even more sophisticated with water – orange oil, barley sugar, leather, sauna heat, burnt wood and caramel. The reduced palate was reasonably lively with great texture, warm spices, attractive sweet woody flavours and a wonderful afterglow. The distillery lies just outside Tain.

Drinking tip: Ideal for autumn evenings – preparing the soul for winter

 A manly dram 

Cask No. 127.32                                $95

Islay

We enjoyed unravelling this nose – medicinal, tarry, kippers, big smoke, creosote, pine cones, harbours, caramelized parsnips, soor plooms, burnt toast, seared scallops, smoked vanilla, etc. The palate was a whopping, stomach-coating assault of tiger balm, tar, smoke, ash, embers, charred mackerel, toffee sauce and rugby changing rooms – ‘a real man’s dram!’ said one; ‘Rocket fuel!’ another. The reduced nose – Branston and HP sauce on bacon rolls, chocolate limes, coffee, cinnamon and moth balls. The reduced palate – ginger in dark chocolate, Arbroath Smokies with lime citric zing – but now the sweetness really began to emerge. A manly dram from a laddie distillery.

Drinking tip: Hip flask – fishing a hill loch – after hunting – maybe after fighting dragons…

 All Day American Breakfast 

Cask No. G5.7                           $140

Grain

This sample, from the most northerly grain distillery, had the Panel very excited. On the nose neat, beeswax, tangerines, mandarins, toffee popcorn, rich honey, vanilla, orange oil, eucalyptus, cardamom and fennel seeds. The taste is sweet and spicy – sugar on caraway bread. Then turning waxy, like being in a room with children candle dipping and the aroma of sap and resin from a freshly cut Christmas tree. With water, aromas of steamed orange pudding, burnt toffee, vanilla cake batter, fluffy American pancakes with maple syrup and eggs sunny-side-up appear. The taste is velvety smooth, orange and vanilla oil, cooked chestnuts, nut brittle and cornbread. Slightly minty with a spicy edge of a Jalapeno pepper in the finish.

Drinking tip: With a rack of pork spare ribs in the Deep South
