Recent Arrival: Evan Williams TPS Single Barrel Serial #5007719 – We are so happy to have a private barrel from Heaven Hill once again. This barrel was chosen because overall, we think it’s just a damn good bourbon. Oak is very present and dominating on the nose, but subtleties of baking spice can be picked up in the background. On the palate, this bourbon is very well balanced. There is harmony in the baking spice, caramel, and fruit flavors all wrapped in a soft smooth texture with a nice chocolatey finish. At $26.99 it sips great right out of the bottle, but also makes a mean Manhattan.

Different panel members got different associations nosing this one. China Martini liqueur was one, flavoured with cinchona bark, herbs and spices. Sambuca an aniseed flavoured liqueur was another and finally Jaegertee –over proof rum, black tea sugar and spice. This carried on in the taste; mead (fermenting honey with water, fruit and spices), Krupnik from Poland and an Amontillado sherry from Andalucía. With water aromas and flavours of Torrone, better known as nougat made from honey, egg whites, vanilla, walnuts and almonds as well as a light, sweet, creamy Crema Catalana. This was like a trip around the best the Mediterranean can offer in a glass.

Heady, Zingy and Fizzy

Highland, Northern

A strong exhilarating aroma greeted the Panel and got us all very excited. It was an array of different heady aromas; sweet-smelling scented flower bouquets, poached pears in white wine, rose water as well as freshly polished new leather. Refreshing, slightly minty on the palate like a cool and green fruit salad with honeydew melon, grapes and kiwi accompanied by a glass of ice cold apple cinnamon water. With water, white chocolate covered peanuts, pecans and almonds arrived and the herbal aroma of sage rubbed between one’s fingers. Fizzy with a minty, slightly salty mouthfeel and a zingy finish of herbal iced tea.

Drinking tip: Watching the sun go down

Sun, Sand, Surf and Serenity

This sample had personality and character and brought up evocative descriptors on the nose neat. To mention just a few; grilled pineapple and lobster salad, barbequed langoustines in garlic and herb butter, tarry ropes and like lying in warm sand with a ’salty dog’ (the animal and the cocktail). The taste did not disappoint; salty, oily and sweet like skewers of barbequed scallops wrapped in crispy pancetta on a bed of lentils. With water a teasing light perfumed smoke appeared from a distant bonfire on the beach and in the taste the sweetness mingled with the smoke of lychees stuffed with smoked salmon.

‘Wowf!’

Islay

The nose brimmed with peat smoke, coal cellars, Germolene, coal-tar soap, salted liquorice, toasted coconut, treacle, sea-shells and a Barber’s leather strop. The palate produced at least one ‘Wowf!’ (between a Wow and a Woof, apparently), with its kiln-smouldering peat, roasted coffee beans, figs, honey-flavoured Fisherman’s Friends, and walnuts and lavender in a coal sack – rather unusual, but good. The reduced nose was tamer – brown sugar meringues, banana chips, salted almonds, honeyed lemon and salty olives. The palate found honey cake and dry hay, but still the heavier memories of salty coal and sweet smoke weighed satisfyingly on our manna-receiving tongues.

Drinking tip: Would probably work with food – preferably a spread of tapas in the open air

Cambus 30 Year Old 1984 vintage Lowland single grain Scotch whisky. Single cask refill hogshead #11741 bottled August 2015 by Hunter Laing & Co. for the Sovereign series. 180 numbered bottles.This golden coloured whisky has a mellow and sweet nose on custard powder, followed by sweet peaches and overripe pears. The palate is rich with vanilla and toffee and another layer of fruits and spices. It finishes long and sweet with fruits and a tad of mouth drying oak. Cambus Distillery opened at Cambus near Alloa in 1806 to produce malt and grain whisky. Prior to closure in 1993 Cambus produced grain whisky. The buildings now house a Diagio cask filling centre. Cambus is a lost Scottish lowlands whisky distillery.

REDBREAST IRISH WHISKEY UNVEILS FIRST EVER SINGLE CASK RELEASE 

Redbreast, the most decorated Single Pot Still Irish Whiskey in the world, has unveiled its first ever single barrel offering, Redbreast Single Cask. Available globally from this month, the expression reinforces Irish Distillers’ commitment to rejuvenating the quintessential Single Pot Still Irish Whiskey style.

Redbreast Single Cask offers a unique take on Redbreast’s full bodied flavour profile, renowned for its signature Christmas cake character – the result of a strong contribution from Oloroso sherry casks. With just 576 bottles available exclusively through The Whisky Exchange at the recommend selling price of £180, the rare expression is expected to become highly sought after by Irish Whiskey connoisseurs and collectors.

Barrel #30087, the butt that matured Redbreast Single Cask, was crafted in late 1996 at the Antonio Paez Lobato Cooperage in Southern Spain near Jerez, the world’s sherry capital. The cask was then toasted and seasoned with Oloroso sherry for two years at the Páez Morilla Bodega until early 1999, when the cask was shipped to the Midleton Distillery in County Cork, filled with Single Pot Still Irish distillate and laid in warehouse M15A until August 2015 – 16 years and 147 days later.

Only a handful of single casks are selected and bottled at Midleton each year, a process that is overseen by Head Blender Billy Leighton who takes pride in individually nosing each cask to make sure it is at the peak of maturation. Each single cask possesses its own unique flavour character that is inimitable; Redbreast Single Cask #30087 is bottled without chill filtration at 59.9% ABV and offers classic pot still spices with fruit and almond notes, a hint of vanilla and a balanced finish. Cask #30087 was selected by Leighton and The Whisky Exchange team from a choice of two Redbreast single barrel samples in March 2015.

The latest Midleton Single Pot Still single cask release, Cask #48735, is available alongside Redbreast Single Cask exclusively through The Whisky Exchange at the RRP of £245. Crafted in the true Midleton style of ex-Bourbon cask maturation, the individual American oak barrel was laid down in early 1991 and has yielded just 186 bottles at 55.2% ABV. This highly collectable bottling offers typical aromatic notes of oil and spices, a palate of ripe fruits and a rich succulent finish.

Regarded as the definitive expression of traditional Single  Pot Still Irish Whiskey, Redbreast dates back to 1903 when Jameson entered into an agreement with the Gilbeys Wines & Spirits Import Company to supply them with new make spirit from their Bow St. Distillery for maturation under bond.

Tasting notes:

Nose: Classic Single Pot Still spices in harmony with Oloroso seasoned Spanish oak. Deep dried fruit richness with a little mandarin orange zest blends with bitter almond, leather and toasted oak. Some nutmeg and sweet vanilla bring some balance to the exceptional complexity.

Taste: Full, round and velvety smooth. The rich Single Pot Still spices mingle effortlessly with the abundance of succulent fruit. Soft vanilla complements the robust note of ground coffee on a firm background of Spanish oak.

Finish: Complex and sophisticated, remaining in balance as it fades.

William Grant and Sons Ltd opened Girvan Distillery in 1963 to supply grain whisky to Grant’s blends of scotch but with maturation in quality casks in warehouses subject to coastal influences Girvan Distillery is also able to produce excellent single grain whiskies. Elements of Islay Peat – a slice of island life

We like the Elements of Islay here at The Whisky Exchange blog. Admittedly, they are bottled by our sister company and selected by Oliver Chilton, occasional writer here and developer of The Whisky Exchange’s own exclusive bottlings, but fortunately they are also very good. The latest release in the range has just hit our shelves and it’s a departure from the series’ usual approach – it’s a blended malt. Introducing Elements of Islay Peat.

So far, the Elements of Islay have all been small batches or single casks of single malt whisky, all from individual distilleries on the island of Islay. With the introduction of Peat, they now have a blended malt in the range, using whiskies from several distilleries to create a consistent and ongoing bottling, so, rather than being a small batch that will sell out in a few weeks or months, if you like it,you’ll be able to come back and grab another bottle. It’s also bottled at full proof – 59.3% ABV – making it ideal for fans of cask-strength whisky.

We’ve questioned Mr Chilton extensively about Peat and what he’s used to make it, but all he’ll reveal is that it uses whisky from a ‘handful of distilleries’ on Islay.

Elements of Islay Peat, 59.3% ABV

Nose: Singed lemons, damp peat and freshly roasted malt roll out the glass before your nose even reaches the lip. Hiding underneath are notes of rich earth and liquorice, with stewed citrus fruit – lemon, lime and grapefruit – and a pinch of molasses-rich dark sugar.

Palate: Warm and leathery with damp heather, abandoned seashore campfires and roasted fruit: apple and lime with a sprinkle of caster sugar. Sharp citrus and peat smoke build with a background of spicy heat. Water softens the spice and dials up the fruit, revealing layers of sweet apple and candied lemon.

Finish: Comparatively restrained, with sea spray and baked apple fading to charcoal-edged cinnamon toast and freshly sliced orchard fruit.

Comment: A great, everyday Islay whisky – it has hints of character from around the island, with light and dark flashes, and a backbone of fruit and smoke. Just what the doctor ordered.
