  • Michel Couvreur 12 Year Overaged Malt Whisky (750ml) ( $69.99) Michel Couvreur is a Belgian and an independent bottler of single malt scotch. His cellars are located in Bouze-les-Beaune in the heart of Burgundy. Michel ages his single malts for years in sherry butts and then in demijohns or giant bottles kept in total darkness in the exceptional well-protected underground galleries of Bouze-les-Beaune. Vatted from 54 whiskies aged more than 12 years (12 to 27 years) in oak casks, this malt has a rich amber color, a nose full of dried flowers, tobacco leaf, Jerez wine and fat almond, and a powerful, fruity, long finish. What a fantastic accompaniment to smoked salmon when served over ice. It is also perfect as a dinner digestive served at room temperature.
  • Michel Couvreur K&L Exclusive Overaged Peated Malt Whisky (750ml) ( $82.99) The chance to work with Michel Couvreur on a special K&L whisky project was something that David and I had been dreaming of for years. We had heard the stories. This crazy Belgian had moved to Burgundy in the 60s, carved out a wine cellar inside a mountain, only to fill it with Scottish single malt whisky instead of pinot noir. He set up camp in Beaune, ordered new-make spirit to be delivered by tanker, and drove down to Jerez himself; selecting his own sherry butts to insure only the finest quality casks for his contracted spirit. Unfortunately, Michel Couvreur passed away last year from pancreatic cancer, thus ending the career of one of the industry’s most courageous pioneers. Luckily for us, however, apprentice Jean-Arnaud has carried on after studying under Michel for more than a decade. When we visited the underground cave this past Spring, we were all in total awe. The tunnels of dripping stone go on forever, and the amount of whisky stored in this secret lair is jawdropping. We put our trust completely in Jean-Arnaud and are happy we did. Our peated version of the incredible sherry expression is a seamless creation that drinks like the best version of Johnnie Black ever, mixed with the most supple and soft expressions of Macallan. It’s a lush, unfiltered, creamy, caramel-laden dream of a whisky composed only of malts 12 years and older. There’s a bit of peat on the finish, but the soft sherry is the star. (NOTE: do NOT cut the hard wax seal, tap it so that it breaks)
  • Michel Couvreur Pale Single-Single Whisky (750ml) ( $109.99) Michel Couvreur is a Belgian and an independent bottler of single malt scotch. His cellars are located in Bouze-les-Beaune in the heart of Burgundy. Michel ages his single malts for years in sherry butts and then in demijohns or giant bottles kept in total darkness in the exceptional well-protected underground galleries of Bouze-les-Beaune. The Pale-Single is a lighter style of whisky, not nearly as heavily sherried as his other expressions, that is quite fruity and floral in flavor, but with a lingering note of toasted almonds and savory richness.

Ardbeg 20 Year Old 1996 vintage Islay single malt Scotch whiskey. Matured in bourbon barrels #808 & #811 bottled June 2016 by Ian MacLeod for the Chieftain’s range. 601 bottles. Ardbeg Distillery was established in Ardbeg on the Kildalton Peninsular on the Isle of Islay in 1815 by John McDougal. Ardbeg Distillery draws soft peaty water from Loch Uigeadail and Loch Airigh nam Beist up amongst the hills behind the distillery. Ardbeg Distillery is a participant in the world famous Feis Ile, the annual Islay Festival of Malt and Music. Visitors are welcome at the distillery visitor center which offers Ardbeg Distillery tours and serves delicious Scottish fare in the Ardbeg Café.

Kilchoman, Islay’s Farm Distillery, is set to launch the 6th edition of its 100% Islay range. Every part of the production process takes place at the distillery from growing the barley to bottling. Kilchoman’s 100% Islay is a truly unique single malt. No other distillery can claim to complete all parts of the whisky-making process.

The folks at Kilchoman distillery, nestled in the outbuildings of Rockside Farm on the west coast of Islay, work throughout the year to grow, malt, distill, mature and bottle Kilchoman’s unique single malt using traditional farm distilling techniques not seen on Islay for generations:

“When we first set out to build Kilchoman, the ambition was to create a small-scale distillery producing exclusively for single malt using barely grown and malted on-site as was once the norm for many distilleries.”-Anthony Wills, Kilchoman Founder and Managing Director.

This, the 6th edition of the annually released limited edition, is a vatting of fresh and refill ex-Buffalo Trace Bourbon barrels filled in 2010 and bottled in 2016. This latest edition will be the most mature 100% Islay to have been released to date. Produced exclusively from barley grown at the distillery, the 100% Islay range has a lighter peating level compared to the rest of the Kilchoman range, creating a uniquely fresh and distinct style of Islay single malt.

Anthony Wills, Kilchoman Founder and Managing Director: “We expect Kilchoman fans will enjoy the 6th Edition, the 100% Islay expressions have come along significantly in recent years, sourcing our bourbon barrels from one US producer has a significant impact on the quality of the whisky at what is a relatively young age.”

Founded in 2005, Kilchoman is one of the smallest distilleries in Scotland and was the first distillery to be built on Islay for over 124 years. Today, Kilchoman is the only independently owned Islay distillery.

Tasting Notes: Kilchoman 100% Islay 6th Edition

Nose: Light, fresh and vibrant with soft peat smoke.
Palate: Fresh and light with citrus and lemon notes with sweetness on the finish.
Finish: Long, clean and sweet with graceful peat smoke.

Notes 
Kilchoman Distillery is a small, family run farm-distillery based on the rugged west coast of Islay. The distillery was established by Anthony Wills in 2005, the idea was to build a new distillery which took whisky production back to its roots. Anthony and wife Kathy have now been joined by their three sons: George, James and Peter.

Kilchoman produces its 100% Islay single malt from barley which is grown in fields surrounding the distillery and completes every stage of the whisky-making process at the distillery, including traditional floor malting. Kilchoman is the only distillery in Scotland to do this. Kilchoman is now very much a family affair:

• Kilchoman’s exceptional quality was recognised at the prestigious International Whisky Competition (IWC) when Anthony Wills was named Master Distiller of the Year 2013.
• Machir Bay was named best Islay Whisky under 12 years old at the 2015 Spirits Business Whisky Masters, 100% Islay and Loch Gorm also won Gold Medals in the same competition.
• Machir Bay was also recently awarded a Gold Medal at the International Wine and Spirits Competition (IWSC) with Loch Gorm being awarded a Silver Outstanding Medal and 100% Islay a Silver at the prestigious awards.
• Kilchoman won Malt Advocates Artisan Whisky of the Year 2011, only three years after the first bottling was released.
