Master Of The Quaich, Edinburgh

I can honestly say this is one of the finest malts it has been my pleasure to taste in forty years of professional exploration. It is outstanding – rarely, if ever, have I been able to write so fulsome a testimonial!

Appearance: Very deep amber, Oloroso Sherry; American oak ex-Sherry cask, in spite of its deep colour, probably first fill. Viscous, with exceptionally good beading.

Aroma: A mellow but lively nose-feel, astonishing that the Whisky has remained high strength after all this time. The top notes are of Christmas cake moistened with Oloroso Sherry, with a slightly burnt base. These are supported by prune juice and baked apple skin, but the overall impression is dry. The base notes derive from oak (shavings, coconut, a suggestion of treacle toffee) and coffee grounds (chocolate and liquorice). Taste: The texture is mouth-filling and lightly waxy (teeth-coating); the taste is sweetish to start and tannic dry to finish, with a surprising amount of spice. The aftertaste whispers of espresso coffee and very dark chocolate. Like the nose, the taste is lively and full of vitality. The whole palate is in perfect harmony.

Final Comments: This is a hugely complex and rewarding Malt Whisky by any standards. Obviously, its great age adds value to the experience of tasting it, conjuring images of what the world was like in 1948, but – more important from a connoisseur’s perspective – its flavour opens a sensory door into another era, when Whisky was different.

The fact that it has retained a high ABV after all these years means that the aroma and taste are still vital and lively. Too often very old Whiskies lack vitality, owing to low strength; they become fragile ghosts of their former selves. Not in this case!

For a limited time, bottles of Yellowstone Select Bourbon will feature one of six different scenes from the park that first inspired the brand in 1872

St. LOUIS (Jan. 6, 2022) – Limestone Branch Distillery is celebrating the 150th anniversary of the Yellowstone bourbon brand by debuting the Yellowstone Select Landmark Edition Bottle series, featuring six different scenes from the national park that inspired the brand.

Available now at retail, bottles of Yellowstone Select Bourbon feature one of six famous park landmarks:

  • Grand Prismatic Spring
  • Minerva Terrace
  • Roosevelt Arch
  • Lamar Valley

Named after the country’s very first national park, Yellowstone bourbon was introduced in 1872 to honor the park’s remarkable beauty and pioneering spirit. Limestone Branch Distillery has continued the tradition of supporting the park through its ongoing partnership with the National Parks Conservation Association (NPCA), an independent organization working to strengthen and protect our national parks. To date, Limestone Branch has donated nearly $210,000 to the organization, and from Jan. 1 – Nov 30, 2022, Limestone Branch will donate $1.50 to NPCA for each bottle of Yellowstone Whiskey sold, representing a guaranteed donation up to $30,000.

Bunnahabhain 27 Year Old 1989 vintage Islay single malt Scotch whisky. Single cask refill hogshead bottled March 2017 by Hunter Laing and Co. for the Old & Rare Platinum collection. 198 bottles. A beautifully colour whisky with a delicious nose of home baking and creamy caramel followed by a delicate floral note and ahint of seaweed. On the palate it is smooth and creamy with vanilla the primary taste, then bananas and pears adding fruitiness and body. Ths leads to a late salty note at the end, leaving a dry, long lasting finish.

Bunnahabhain Distillery was established in 1881 on the north eastern tip of the Isle of Islay by the shore of Bunnahabhain Bay and overlooking the Sound of Islay. All the building materials were transported by puffer and unloaded at the distillery pier. Now tucked away at the end of the single track ‘main’ road with spectacular scenery all the way. Bunnahabhain Distillery is equipped with four huge pear shaped stills and produces Scottish malt whisky which is released in blends and in single malt and single cask bottlings. A participant in Feis Ile, the annual Islay Festival of Malt and Music. Core editions include Bunnahabhain 12 Year Old and 18 Year Old.

This new Single Malts of Scotland Reserve Casks release comes from a batch of four ex-sherry butts from Caol Ila distillery, all aged for more than ten years. On the nose, there are plenty of bright, nostalgia-filled aromas including candyfloss by the seaside, fresh lavender and spun sugar. The palate delivers notes of indulgent caramel sauce, saltwater taffy and sugar coated hazelnuts, with a background of ashy smoke. A 2011 Caol Ila from independent bottler Elixir Distillers, matured in a batch of four ex-sherry butts and matured for a decade, before being bottled in 2021. Aromas of candyfloss on a seaside pier, fresh lavender, toasted crumpets, maple syrup and fresh basil fill the nose, complemented on the palate by notes of sticky caramel sauce, saltwater taffy, sugar-coated hazelnuts, ashy smoke, peppermint tea, blossom honey and plum jam throughout the palate.

Old Pulteney Hot Toddy Recipe

Ingredients:

▪️ 50ml Old Pulteney 12 Years Old

▪️ 20ml Salty Hot Toddy Syrup*

▪️ 15ml lemon juice

▪️ 100ml black breakfast tea⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

*Salted honey, ginger, lemon zest, pepper corns, black breakfast tea

Method:

To make the syrup, add 100g of honey to a pot and heat it up. Watch for it to bubble away and eventually it’ll start to go dark in colour as the sugars caramelise. While you wait, make a cup of black tea and when the honey is nice and dark, add the tea along with some slices of ginger, lemon peel and a tbsp of peppercorns.

Simmer for about 20 minutes to allow it to infuse and take it off the heat and strain out. When it’s cooling, add in a good pinch of salt to taste. Enjoy!

Tomatin 25 Year Old 1994 vintage Highland single malt Scotch whisky. Single sherry butt bottled February 2020 by Hunter Laing & Co. for the Old & Rare series. 452 bottles. This dark gold whisky has a nose of prunes, dark chocolate, and marzipan. The palate is fruity with notes of plums, berries, moss, and a hint of nuts. The finish is long, with lingering sweetness.
Tomatin Distillery was established in 1897 and operated with two stills until 1956 after which there were frequent and numerous additions culminating in 23 stills in 1986 making Tomatin the largest distillery in Scotland at that time. However, eleven were subsequently closed and it is currently equipped with twelve but operating with eight. Tomatin Distillery is a Highland distillery situated close to the Cairngorms National Park and, sitting at an altitude of 315m, it is the third highest distillery in Scotland. The official range includes Tomatin 12 Year Old, 18 Year Old and the peated Cu Bocan range.
