As many of you know, our Compass Box 30th Anniversary Blend is launching next week. We know you are excited because about 1/4 of the bottles are pre-sold. To celebrate we are hosting an in-person launch tasting at KWM next Wednesday, with Scott Ellis from Compass Box. We have also added additional space to the Compass Box Virtual tasting on Friday, July 29th with Whisky Make James Saxon. Detail below.

Due to demand, we have also added additional space to our Elixir Distillers Single Casks tasting with Celine Tetu on Friday, July 22. We know many of you want to return to doing in-store tastings, and accordingly, we have also added a new in-store version of Elixir Distillers Single Casks, albeit hosted by one of our staff…

We have also added two other new virtual tastings that are sure to be popular. GlenAllachie Sales Director Ronan Currie will be our guest on Saturday for our GlenAllachie Virtual Cask Launch. We will be launching the GlenAllachie 15 Year KWM Oloroso Cask in early August. The tasting will also be an opportunity to sample a number of other GlenAllachies not available for sale! Photo to the right… sorry for the tease!

Once more we have strung together a selection of rare and in-demand whiskies that you’ll only have the opportunity to purchase if you take part in the tasting! In new whisky news, we have whiskies from North Star Spirits, South Star Spirits, and Bimber Distillery to fill you in on. There is more, which will have to wait until next week’s full Malt Messenger, but we wanted to get the word out on these now, having freshly arrived in-store.

I do want to highlight one of them though, the North Star Spirits Blended Malt 7 Year for Ukraine. The producer has bottled the whisky as a fundraiser for Ukraine, saying “We have bottled the strongest whisky we have for the strongest people we know.” Both KWM and importer Gold Medal Marketing will be donating $10/each, from every bottle sold in support of Ukrainian refugees. Bottles can be pre-ordered now, and will be available next Wednesday!

INTRODUCING: BIMBER DISTILLERY

Bimber Distillery was founded in 2015 on the outskirts of London. Whisky is made from barley, floor-malted for them at Warminster Maltings. The fermentations are long, in wooden washbacks, and the distillation slow in small-ish stills.

Bimber Apogee Pure Malt Whisky – 46.3% – 12 Year – Finished in ex-Bimber Distillery Casks – Producer Description: “Apogee draws from generations of historical expertise combined with modern virtuosity and elegance to offer an alluring, versatile and deeply captivating whisky. Artfully composed from a selection of the finest world whiskies, the aromas and flavours of Apogee have been enhanced further through sympathetic maturation in casks sourced from London’s award-winning Bimber Distillery. Apogee XII is a flawlessly balanced, meticulously crafted unity of exceptional world whiskies, created as a celebration of the fine art of blending. ” – $92

2. Bimber Canada Edition 2021 – 58.7% – Producer Description: “The Canada Edition Cask journey began at Bimber’s single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at the Bimber cooperage. They use direct fire to heat their small copper pot stills, and mature their spirit in hand-selected casks. This whisky was drawn from a remarkable ex-bourbon oak cask and bottled exclusively for PWS Imports.” – $152

3. Bimber ex-Bourbon Cask Batch No. 3 – 51.6% – Producer Tasting Note: “Aromas of green apples, dried apricots, milky cereal, vanilla sponge cake and coconut fill the nose, complemented by notes of vanilla, caramel, orchard fruits, baked apricots, peppery spice and charred oak throughout the palate.” – $115

Participants will try the 4 most recent KWM casks: Ardmore 11 Year, Glenburgie 22 Year, Imperial 22 Year, and Mannochmore 13 Year, and 3 others: Ben Nevis 1997, Linkwood 11 Year, and Reserve Casks Glencadam 10 Year. New From Glenwyvis

The second release from the 2018 vintage, and the first ‘major’ bottling from the Glenwyvis Distillery in the Highlands.

Created using half-tonne mashes consisitng entirely of local Concerto barley. Then fermented for an average of 96 hours before being distilled in the squat 2500L wash still and 1700L spirit still.

The unique spirit was then filled into a variety of wood: Tennessee Whiskey barrels from America to add a complex sweetness, Oloroso hogsheads from Spain to bring rich fruit and dry flavours and finally, refilled Scotch whisky hogsheads which highlight the fragrant, spicy character of the new make.

GlenWyvis Distillery Launches its Second Single Malt – Scotch Whisky News

GlenWyvis Distillery launches its second Single Malt Scotch Whisky

Embargoed 00:01, Friday 24th June 2022; GlenWyvis Distillery – the world’s first community-owned distillery – has announced the launch of its second three-year-old Highland Single Malt Scotch Whisky.

Batch two of the Dingwall-based distillery’s 2018 vintage distillation, known as Batch 02/18, follows the launch of its inaugural release whisky in December 2021 and will be available to purchase from 29th June 2022.

8,000 bottles will be available in total, and can be purchased directly from GlenWyvis Distillery’s website, with shareholders given early access, or from selected specialist retailers in Scotland and the UK. A number of bottles will also be available for purchase in Germany, where GlenWyvis Distillery’s largest non-UK shareholder base is.

Five per cent of online sales from GlenWyvis Distillery’s website will go directly to the GoodWill Fund; a fund that will benefit community projects and good causes in the Dingwall and Ross-shire area.

Speaking about the launch, Matthew Farmer, GlenWyvis Distillery Manager, said: “Following the success of our inaugural release – the first whisky produced in Dingwall for almost 100 years – I’m delighted to welcome batch two to the GlenWyvis Distillery family!

“Batch two was created from 23 casks between three and four years old, consisting of 15 first-fill ex-Tennessee/Bourbon, five first-fill ex-Oloroso and three refill Hogsheads. 02/18 has noticeably more oak influence and a deeper colour than our first whisky, while still letting our unique spirit shine through. I hope everyone enjoys getting to know our distillery character.”

GlenWyvis Distillery’s inaugural release whisky was in high demand, selling out via pre-order almost immediately. Since then, the small team has been working hard to deliver an equally sought-after second offering.

Board Chairman, David Graham added: “Congratulations to the team on the launch of GlenWyvis Batch Two Highland Single Malt Scotch Whisky! For such a small team at the distillery, they really punch above their weight, and I am very proud of what they have achieved.

This well-aged limited release is free from chill filtration and artificial colouring. It is bottled at a robust cask strength of 53.6% abv. A dram that celebrates everything that is so wonderful about Fettercairn!

Expect aromas of almonds, banana, dates, fresh ginger, and tropical fruits. The palate is full of dark chocolate, pistachios, and poached pear with a hint of espresso coffee. The finish brings orange zest, sultanas, and treacle.

REDBREAST UNVEILS “REDBREAST KENTUCKY OAK EDITION”

THE FIRST RELEASE IN REDBREAST’S AMERICAN OAK SERIES EXCLUSIVELY FOR THE U.S MARKET

Redbreast Irish Whiskey, created by Irish Distillers at Midleton Distillery, is embarking on an exciting new chapter as it unveils a dedicated whiskey collection for the United States. The American Oak series celebrates the influential and integral role of native wood in the production of Redbreast Irish Whiskey, giving provenance to the wood and unique American Oak influences to the whiskey.

The first limited release in this innovative series, Redbreast Kentucky Oak Edition, is made from malted and unmalted barley, triple distilled in copper pot stills and matured in American Oak Bourbon barrels and Spanish Oloroso sherry butts, before being finished for a period of 3 to 7 months in naturally air-dried PEFC certified American White Oak[1] sourced from the Taylor Family’s Elk Cave Farm in Kentucky. These casks have been hand selected for finishing, using the best quality white oak, to impart additional sweet notes of vanilla and elevated wood spices.

“Redbreast is renowned for its heavy sherry influence,” explains Master Blender Billy Leighton. “This can often mean that its ex-bourbon counterpart is overlooked, even though Kentucky white oak barrels, which have previously held bourbon, are central to the Redbreast DNA.

“This series explores the role American white oak plays in the composition of Redbreast, and takes it one step further, with a final flourish in virgin casks to enable the wood contribution to truly take centre stage.”

Seeking the best quality barrels, Leighton and the team at Midleton Distillery partnered with the owners of Elk Cave Farm, Clifton and sons Scott and Steve Taylor, to source high grade white oak from their 1,300-acre tree farm. As committed environmentalists, the Taylor family have championed sustainable farming practices since purchasing the land in 1959 and today are recognised across the country for the award-winning methods used on their farm. Under the Taylor family’s guardianship, Elk Cave Farm has become renowned for successfully applying the oak shelterwood system in their mature oak forests. Shelterwood, a forestry technique that emphasizes early tending of young oak seedlings by improving forest light conditions and reducing competitors, has proven successful in the Taylors’ mission to sustainably manage their oak forests. In addition, these productive oak forests will provide valuable wildlife habitat, clean water and fresh air today and for future generations.

Once felled, sawn and air dried, the oak was worked into 63 casks and shipped to Midleton Distillery, Co. Cork, to be filled with a bespoke batch of Redbreast whiskey. Leighton and his team diligently monitored the barrels until the perfect balance of flavour, aroma and wood contribution had been achieved.

Further reinforcing Midleton’s pioneering spirit, the result is luxuriously smooth and distinctly Redbreast with an additional layer of sweet vanilla and elevated wood spices imparted from the virgin Kentucky casks. Bottled at 101 proof (50.5% ABV), the non-chill filtered whiskey effortlessly balances the pot still spices and dried fruit with the intricate aroma of freshly cut cedarwood and decadent notes of almond and brown sugar toffee for an elevated flavour profile.

“Crafting this whiskey has been a journey of discovery,” adds Leighton. “From learning about the trailblazing work of the Taylor family improving the sustainability of America’s oak forests, to exploring the region’s influence upon our whiskey, all of which has shaped this deliciously complex whiskey.  The Kentucky Oak series demonstrates Redbreast’s continued evolution, setting the bar for subsequent expressions in the series.”

Tasting Notes: 

Nose: Opens with notes of freshly cut cedarwood, almond and vanilla, while succulent dark berries resting on new oak shavings enhance the sweet fruit and warming charred wood influences, complementing the pot still spices.

Taste:  Spices to the fore of cinnamon, nutmeg and clove that continue to build over time working in tandem with the oak’s rich tannins while balanced with autumnal fruit notes that delicately linger in the background along with sweet and decadent notes of brown sugar toffee and vanilla.

Finish: Lasting finish with the fruits the first to slowly fade, leaving the pot still spices to linger effortlessly in harmony with the sweet tones and intricate nature of the American oak.
