Dalmunach Distillery, located in Carron, Speyside, is named after the nearby pool in the River Spey, and it is one of Scotland’s newest and most contemporary distilleries. Built by owner Pernod Ricard (Chivas Brothers) in 2014, the large yet environmentally sympathetic building occupies the former site of the Imperial distillery, which was demolished in 2013. Built combining original features with the latest environmental expertise. Classic Dalmunach boasts a flavour profile of sweet vanilla, barley, roasted almonds and oatmeal cookies.

Tasting notes:

Colour: Copper autumn leaves.

Nose: Sweet cereal notes combine with toffee apple with the addition of creamy fudge and a tickle of white pepper.

Palate: Sweet oatmeal although not as sweet as first expected with a very gentle kiss of anise and darker oak tones.

Finish: Warming and rich for its age. Spicy but in no way aggressive this dram leaves a very clean, crisp mouthfeel for a delightfully long.

Another incredible old and rare single malt whisky that Gordon & MacPhail sourced from their magnificent warehouses, then released as part of their recently launched Recollection Series. This well aged Imperial was distilled in 1979 and matured in single cask #5619 for 42 years, a Private Collection release, only 61 decanters filled at 49.2% vol.

Nose

Sweet honeycomb notes combine with vanilla custard and a subtle hint of beeswax polish. Cocoa powder develops alongside pecans and soft baked apple.

Palate

Ripe red apples intertwine with clove-studded tangerine. Malted biscuit flavours come to the fore accompanied by chocolate-covered hazelnuts and faint Seville orange zest.

Finish

A full and long finish with black pepper and light herbal tones.

Imperial is a lost Speyside distillery but one that has a growing reputation thanks to a series of solid releases. Once opened, the true quality of its whisky becomes apparent and begs the question why it is no more?

We were fortunate to score a significant quantity out of this barrel, so collectors, cocktail fans, and whiskey mavens alike will want to go big at our incredible price of just $54.99. After all, we never know when we’ll see another opportunity like this again.

K&L Notes: High-proof, wheated bourbon is back on the menu! Rebel barrels offer one of the rare opportunities to get your hands on that sweet, sweet Kentucky wheated bourbon without paying through the nose for the unicorns that drive the category. It’s unfortunate that Rebel has made the choice to bottle these with a giant “Cask Strength” on the label when all of the barrels are proofed to 60% ABV, but no matter. It’s still plenty high, and those that prize the sweet, creamy flavors but want a good kick will find it here at a reasonable price. Barrel #7903533 was filled on 1/16/18 and dumped in Q3 of 2022.

Mellow gold in color. The aromas are soft and approachable with a distinct kick of alcohol underneath. It’s creamy and shows a fruitiness that is akin to the fruit flavors sometimes found in a cup of light-roasted coffee. The palate is round but actually feels a bit choppy at 120 proof. With a bit of water, it presents more true to form for the category—sweet vanilla, fresh cream, and marmalade. The citrus and apple peel come forward on the nose and palate, and it is transformed. This is an absolute home run for those that like to drink their whiskey over ice and explore all its nuances and evolution.

Maple syrup, brown sugar, allspice, and cinnamon on the nose. Honestly, I had found it concerning I could catch all this right from the first pour—the bouquet was practically jumping out at me. However, as I brought it closer it wasn’t the harsh bite of ethanol that greeted me but rather a clear preview of the flavors I’d get to experience. At 60% ABV, the texture on this is insane. Supremely smooth with absolute clarity in the translation from aromas to flavors. Considering the quality and the value on this bottle, it’s a steal. Waste no time on tossing this into your cart. Once folks know what we have it, it’ll be gone in a flash.

Bottled September 2022 from a single sherry butt distilled 2012. Carefully selected and bottled by the distillery owner for the Signatory Un-Chillfiltered series. Expect red berries, warming spices and maple syrup flavours from this full bodied Highland malt whisky.

Edradour Distillery was formed in 1825 by a group of eight local farmers. Situated at Milton of Edradour near Pitlochry and still just a farm sized distillery equipped with a Morton refrigerator to cool the worts and two wee stills with their spirit cooled in a single worm tub. Whilst ranked amongst the small working distilleries in Scotland its owners Signatory Vintage have plans to increase its size and output. The 15th edition of the Sullivans Cove Special Cask series will be released on Monday the 24th. A barrel that caught the attention of the Sullivans Cove tasting panel – so much so that they named her.

Meet Rosie

An incredibly alluring French oak ex-Muscat single cask whisky, the dark and light components of this iconic Australian fortified wine style integrate so naturally with our citrusy, briny and bold Sullivans Cove spirit character.

The result? A match made in heaven.

French Oak ex-Muscat: TD0302

Immediately rich and alluring, the stage is set early for a weighty, broad-shouldered dram. The darker components of Muscat present themselves first: medjool dates, honeycomb and spiced fruit toast, backed up by the structured coffee and oolong tea oak notes. Caramel, banana and cola bottles open up with some air, while delicate trails of baking spice and eucalyptus weave throughout. 13 years old, matured in a 225L first-fill French oak ex-Muscat cask, TD0302 yielded just 265 bottles.
