There are just under four weeks to go until we share The Hearach single malt with the world. It will be a historic moment for our island distillery and the culmination of years of hard work and effort. So, we’d love for you to help us spread the good word about our forthcoming whisky if you can.

This week, we invite you to meet some of the men and women behind The Hearach itself, each drawn from our local community and working towards the launch weekend with great pride. Be Here With Us In Harris – 22.09.23 and 23.09.23

Our whisky is being made by a young team of local distillers as we continue to develop the next generation of islanders in the art and science of spirit-making. At 21 years old, Rebecca Morrison from the village of Bowglass is the youngest member of the team. She is joined by 25-year old Thomas Macrae and Donald Macleod, alongside 28-year old Paddy Sinclair. They in turn are led by our head distiller Norman Ian Mackay from Luskentyre who is charged with mentoring them on their lifelong distilling journey. We’re proud to watch them create our whisky with skill and pride, and we look forward to them exploring their craft with us over the coming years.

 

The Hearach single malt whisky is made to a carefully chosen recipe of spirits drawn from a variety of oak casks. The exact ratios and choice of casks are decided by Shona Macleod from the village of Carragreich and Harry Wood from Drinishader. Together, they nose and sample all our whisky to ensure the highest quality and consistency as we marry and bottle each batch we release. As with all our team, they are home-grown talent who have been trained and mentored in their respective roles and have risen to the occasion every time. It’s been a pleasure to watch their confidence grow as they continue to learn more about the wonderful world of whisky flavours.

We think our maturation site in the coastal village of Ardhasaig are one of the finest places to work in all of Harris. Earlier this year we built two new warehouses to bring our total to three at this special location just yards from the sea on our island’s west coast. Here Billy, Domhnall, and Scott look after the hundreds of casks, butts, and barrels which are stacked high or dunnage-racked, with more added to their collection every week. There are casks filled with our spirit from Kentucky, Spain, Pennsylvania, Bordeaux, and more, each transforming our whisky in their new Harris home. Working closely with our Tarbert team, the views from their desks and warehouse doors alone make their job one of the most envied at our distillery.

Back in 2015 we started life with a small, team of just ten men and women. Today, thanks to your support and enthusiasm for our work, we have over 50 full-time employees. From distilling to bottling, guest tours to storytelling, everything we do happens here in Harris helping us to create sustainable jobs and allow people to plan for the future. The next few weeks will be particularly busy for us, but we know the team will give their all as we head towards the launch weekend. We look forward to raising a glass of The Hearach with you in shared celebration very soon.

Releases 2023 Rossville Union Bottled in Bond Straight Rye Whiskey 

Limited release of hand-selected, six-year-old rye whiskey puts Lawrenceburg, Indiana, distillery’s 175-year rye tradition on full display

ST. LOUIS (August 17, 2023) – Lawrenceburg, Indiana-based Ross & Squibb Distillery announced the newest member of the Rossville Union Straight Rye Whiskey brand family: Rossville Union Bottled in Bond Straight Rye Whiskey. Hand-selected by Ross & Squibb Distillery Master Distiller Ian Stirsman, Rossville Union Bottled in Bond Straight Rye Whiskey is set for limited release of 3,000, 6-in cases in time for National Rye Month this month and will be available at select retailers at a suggested price of $49.99 per 700 ml bottle.

Aged six years and offered at 100 proof, Rossville Union Bottled in Bond Straight Rye Whiskey features a mash bill consisting of 51% rye and 49% barley malt. This release was distilled in March of 2017.

“I’m proud to continue Ross & Squibb’s tradition of creating high-quality rye whiskey that dates back to 1847. Since that time, we have worked to perfect our craft, giving our rye whiskeys unmatched character,” said Stirsman. “For our Rossville Union Bottled in Bond Straight Rye Whiskey we combined our industry leading rye expertise with a new high malt mashbill to create something truly special.  We then let the barrels mature for a minimum of 6 years, resulting in aromas of sweet malt, dark chocolate, raisin and saddle leather with tasting notes highlighted by caramel and mocha with a rich, candied-fruit body, followed by a slight green-apple, malted-chocolate and cinnamon finish.”

This flagship, own-distilled rye from the Willett Family is finely hand-crafted by our good friends outside of Bardstown. The batches are tiny, with extremely limited releases. Each batch is bottled at cask strength without chill filtration. Here are tasting notes from Bill Thomas of the Jack Rose Dining Saloon from a recent batch: “The barrels that went into this small batch combined to make an amazing drinker. Nose: Beautiful layering of brandied cherry over a mildly tart cherry. It opens up with time and is reminiscent of cutting into your dessert with your fork which releases cinnamon and baking spices with just a hint of oak to remind you that this is high proof youthful. Palate: A robust rye with dark cherry, burnt vanilla, and spices for days. It’s a delicious rye with a weighty mouthfeel. Balance: It’s insanely well-balanced with the alcohol so perfectly integrated at cask strength you’ll forget it’s there, but you’ll find yourself smiling more and happier with each dram. Finish: The finish is long and the spices dominate this batch, while the cherry does punch its way through to the surface.” Batches are not numbered and are distinguished only by their proof. LORETTO, KY (August 16, 2023) – Maker’s Mark® is proud to debut Maker’s Mark® Cellar Aged Bourbon, an annual, global limited-release expression that proves whisky aging is about more than just a number. Featuring a marriage of 11- and 12-year-old bourbon, Maker’s Mark Cellar Aged delivers the distillery’s highly anticipated oldest release, stemming from the question: What if age isn’t just about time, but instead about how you use that time to evolve, develop and mature?

Since its founding in 1953, Maker’s Mark has aged its whisky to taste – not time – to achieve the vision set by its founders: bourbon without the bite that’s always smooth, soft and creamy. Maker’s Mark Cellar Aged stays true to this philosophy, delivering a richer, deeper and more complex older bourbon, free from the harsher tannic effects commonly found in extra-aged American whiskies, as a result of our innovative maturation process that starts in traditional Kentucky warehouses and finishes in the distillery’s one-of-a-kind limestone whisky cellar.

“For more than 65 years, aging our whisky for a decade-plus wasn’t something we did,” said Rob Samuels, 8th generation whisky maker and grandson of the founders at Maker’s Mark. “It’s not that we didn’t believe in it; we simply hadn’t found a way to do it that didn’t compromise on our taste vision – until now. Cellar Aged embodies an older whisky that’s distinctly Maker’s Mark. One rooted in challenging convention, delivering new flavor experiences from the environment that surrounds us, and building on a taste vision that’s been generations in the making.”

To become Maker’s Mark Cellar Aged, barrels of the distillery’s classic distillate first spend approximately six years aging in traditional bourbon warehouses, where they endure the Kentucky climate and its temperature swings season after season until they reach full maturity and can be called “Maker’s Mark.” Barrels are then moved into the distillery’s proprietary whisky cellar for an additional five to six years of aging before being blended to taste and bottled. Built into the natural limestone shelf of the Kentucky hills, the cellar’s consistently cool environment slows down the tannic impact that occurs during maturation, while allowing the bourbon to develop a deeper, darker flavor with hidden depths, but no bitterness.

This innovative and taste-led approach in pursuit of an older Maker’s Mark expression continues the boundary-pushing mindset that has shaped the brand since the beginning. Founders Bill and Margie Samuels challenged category norms when they burned their 170-year-old family recipe, choosing to use red winter wheat instead of rye in their mashbill for a softer, smoother bourbon. This spirit of asking “what if?” was present in the introduction of Maker’s Mark 46, which is crafted using a proprietary wood-stave finishing technique, and in Maker’s Mark Private Selection, which became the industry’s first custom barrel program upon its launch in 2016.

Cellar Aged will be an annual, limited release available in specific markets around the world. The unique maturation approach of Cellar Aged will be consistent every year, but the specific blend of aged bourbon will vary based on which barrels are ready, by taste. The inaugural release of Cellar Aged is a marriage of 12-year-old and 11-year-old whisky – 87% and 13%, respectively – bottled at cask strength (115.7 proof). Cellar Aged will be available for a suggested retail price of USD $150.00 in the United States in September 2023; in London, Munich and select Global Travel Retail accounts in October 2023; and in Tokyo and Singapore in early 2024.

1973 vintage from Glen Mhor Distillery which closed in 1983 and was demolished in 1988. Highly prized, rare casks having been one of the pioneering distilleries to release single malt whisky in the 1960s.

Matured in a refill sherry hogshead #85036801, yielding just 170 bottles at 47.2%. Bottled history.

Nose: Sweet stewed raisin aromas complement morello cherry and cocoa powder. Treacle toffee develops alongside soft polish and mature oak.

Taste: Seville orange zest combines with brown sugar and berry compote. Notes of baked apple come to the fore accompanied by a hint of menthol.

Finish: Long and full with lingering spice and citrus.

John Birnie and James Mackinlay commissioned Charles C. Doig to design Glen Mhor Distillery which was found in 1892 and constructed at Muirton Basin on the Caledonian Canal in Inverness. Glen Mhor Distillery was a Highland malt whisky distillery equipped with two stills and one of the pioneering distilleries to release single malt whisky back in the 1960s. Closed in 1983, dismantled in 1986, demolished 1988 and now one of Scotland’s lost malt whisky distilleries. With stock dwindling bottlings of Glen Mhor are highly prized particularly those released by Gordon & MacPhail.
