As fresh as the morning dew, July Outturn brings a heady mix of alluring aromas with six new single casks to explore.

CASK NO. 48.83  “…AND THE LIVING’S EASY”

13 years old; 1st fill barrel; 56.1%; Light & delicate

A melon medley salad, poached pears in honey and French apple tart were followed on the palate by a pear Calvados liqueur served over refreshing sorbet ice cream. Water added a mango and lime smoothie and to finish, a Pineapple Fluff cocktail.

CASK NO. 10.101  A STORM CLOUD OF FLOWERS

9 years old; refill barrel; 60.9%; Young & spritely

Wheat breakfast cereal aromas with salted caramel, papaya, samphire and Turkish delight. Rich tastes of buttery pastry, maple syrup, lemon and wood spice.

CASK NO. 36.113  SAWMILL IN A SUMMER MEADOW

13 years old; 1st fill barrel; 57.9%; Spicy & sweet

A complex nose which combines sweet vanilla, strawberry, liquorice and lemon with herbal and floral elements and sawdust. The palate is sweet yet sharp (icing sugar on green apples) with considerable spicy heat (fiery gobstoppers, sweet chili chips).

CASK NO. 39.127  TO DIE FOR

25 years old; 2nd fill toasted oak hogshead; 46.9%; Deep, rich & dried fruits

Big, bold and beautiful, discover 1001 aromas but taste it! ‘An absolute corker’; fruity, sweet and spicy wood flavours in almost perfect balance. Water added surprising freshness and on the palate, simply ‘to die for’. This whisky previously inhabited an ex-bourbon refill hogshead.

CASK NO. 7.126  IT’S GOOD TO ARRIVE

29 years old; refill hogshead; 58.5%; Old & dignified

Elegant, sumptuous, exotic, rich, smooth, spicy… No, mere words cannot do it justice – you just have to try this one for yourself and whoever said “to travel is better than to arrive” was wrong!

CASK NO. 29.188  COWBOY BEANS

17 years old; refill hogshead; 53.9%; Lightly peated

Cowboy beans, sweet and spicy, simmered on a barbecue in the ‘wild west’. After some medical attention, we were all tucking in with thick slices of ciabatta. Water turned it into a lamb, black pudding and mustard hotpot before finishing with pickled herrings.
