The Octave Holyrood has aged for 3 years in oak casks then spent the final 3 months in an octave cask. This is a limited release of only 99 bottles of sherried goodness, bottled at a cask strength of 55.1%.

Tasting Notes:

Nose: Freshly baked Ginger sponge, eucalyptus and orange peel

Palate: Ginger cake again, with orange zest and malty, sherried sweetness. White pepper, rye spices and nutmeg, with other dry Christmas spices of cinnamon.

Finish: Toasted Oak, dry, orange peel and a lasting ginger spice.
