On Monday we release TD0079.

TD0079 was matured in a 300L second-fill American oak cask, notable because we only have a handful of these 300L casks in our bond-store, and they date back to the earliest days of our distillery! Virgin oak when we received them, they have only ever been used to mature Sullivans Cove Whisky.

The result? A look into the undisturbed potential of Sullivans Cove spirit and high quality, old oak, free from the influence of a pre-fill. As the fresh tropical pops of Sullivans Cove spirit morph into one with the sweet, creamy depth of American oak, you realise you have just witnessed a lesson in integration – brought to you by 16 years of gentle maturation in the right oak, guided by the right hands.

Ripe and syrupy notes of white flowers, pineapple rings and mango pulp develop into sweet coconut and hazelnut cream. The palate brings about more tropical confectionary – yellow rock candy, passionfruit coulis, lemon curd and Starburst lollies. The finish, despite being over 16 years old, holds little to no oak grip! Just the silky texture of Sullivans Cove spirit, wrapped in caramelised white chocolate and lavender.

16 years old, matured in a second-fill American oak barrel, TD0079 yielded just 435 bottles.

This whisky will be released via ballot. The ballot will open for 24 hours from 10am Hobart time on Monday 13th of February. Further details will be sent via email prior to the ballot opening.
