Tomatin: Soft Highland Whisky at The Whisky Exchange – Scotch Whisky News
Once one of Scotland’s largest producers during the 1970s, Tomatin distillery, just south of Inverness in the Highlands, is well-versed in producing quality single malt Scotch whisky. Relatively quiet for the past few decades, the distillery has now expanded its core range of single malts to showcase its classic style: mellow, soft, fruity, unpeated Highland whisky.
These single malts take you on a journey of maturation and cask. From the limited-edition French Collection of Tomatin 2008 finished in Monbazillac, Sauternes, Rivesaltes and Cognac casks, to the tawny-port-finished Tomatin 14 Year Old and Decades II, a marriage of 21 bourbon, sherry and recharred French-oak casks from the last 50 years.
For one week every winter, Tomatin breaks away from its traditionally unpeated expressions to produce a lightly peated Highland single malt – Cù Bòcan – with maturation in an array of experimental casks, such as Japanese Shochu and Moroccan Cabernet Sauvignon.
