I finally got the chance to taste one of the most ‘if I could, I would’ bottles in the world. Does it live up to its hype, or is it just a rich person’s everyday liquid?

There’s no doubt that Macallan has spent the time and money on making a great product. From the facilitating and building of a brand new distillery, one of the biggest in the world of single malt, to securing cooperages in both The US and Spain for maximum control over their barrel sourcing processes. So we’ve got a distillery making great spirit and sourcing some of the best wood from America and Europe. A big question, though, why is it all so expensive?

Even with all of this process and spending, is it that different to how many other distilleries spend countless time and money on sourcing casks? Yes, 90%+ of Macallan’s stock is all about sherry seasoning, but even so, does this warrant a double cost to the consumer for this process? So many questions.

Jumping into the whisky, Macallan 25 Year Old, matured in ex-sherry and ex-sherry seasoned casks, mostly European oak with perhaps a smattering of American oak running around in there. Bottled at 43%, natural colour, some chill filtration for consistency, as you would expect at £2,000 a bottle.

FIRST-LOOK INSIDE EDEN MILL’S WORLD-CLASS DISTILLERY AND VISITOR CENTRE IN ST ANDREWS

Eden Mill has cut the ribbon on its landmark new distillery and visitor centre on the banks of the Eden Estuary, just outside the historic Home of Golf. The multi-million-pound site combines modern sustainability with Scotland’s rich distilling tradition to create a new, world-class destination for both local and international visitors.

Guests can enjoy immersive whisky tours, shop exclusive bottlings in the retail space, and take in panoramic views from The Lookout – a top floor cocktail bar with views across the water towards the St Andrews skyline. The distillery, powered entirely by renewable energy, even boasts a state-of-the-art golf simulator for guests to use.

Euan Kinninmonth, Brand Home Manager at Eden Mill, said: “The vision was to create a distillery and visitor centre that would celebrate the town’s rich distilling heritage, highlighting St Andrews as a must-visit destination for spirits tourism. I’m delighted to say that this vision is now a reality. It’s a landmark moment – not just for Eden Mill, but for St Andrews as a whole.  

On a personal level, I will become the fourth generation of my family to work on the site of the old paper mill which is a real source of pride given I was born and raised in the area.

Creating 18 new jobs in the local area, the striking new venue offers a rich blend of tradition, innovation and hospitality. Immersive whisky experiences will allow visitors to explore the history and taste Eden Mill’s signature range and discover the stories behind their award-winning spirits.

For whisky aficionados, the Cask Mastery Whisky Experience will offer a chauffeur transfer to and from St Andrews, a journey through Eden Mill’s most premium collection of malts, and a behind the scenes visit to the ‘Distiller’s Lab’ and on-site cask warehouse.

The distillery also boasts a bright and contemporary retail space with an expansive offering. Eden Mill’s full range of whiskies are stocked, as well as distillery exclusive bottlings and locally sourced gifts such as prints, chocolates, and reclaimed whisky wood products.

At the top of the distillery, with panoramic views across the Eden Estuary, is ‘The Lookout’ – a 40-seat bar serving an eclectic list of classic and contemporary cocktails. Available for bookings and walk-ins from midday until 10pm all week long, the venue’s extensive drinks list is complemented by cheese and charcuterie boards sourced from a local deli.

As a nod to the brand’s provenance, Eden Mill has honoured the town’s affinity with golf by installing a professional golf simulator. The set up will allow golf fans to play The Old Course, as well as a number of famous Scottish and international courses, with a G&T in hand.

To mark the momentous opening, Eden Mill is releasing a single cask sherry matured whisky exclusively available to purchase from the distillery’s retail space. The Oloroso hogshead, which was originally filled in 2016, contained just 279 bottles, making this a truly rare and memorable release and it follows their other single cask expressions which have each sold out in a matter of hours.

Eden Mill distillery, established in 2012 on the banks of the Eden Estuary in St Andrews, was the first distillery to make spirits in the region in over 150 years. Today, Eden Mill has a unique selection of limited release Single Malts, and an extensive gin portfolio crafted from the finest botanicals, many sourced from in and around Fife.

The new distillery sits at the heart of the University of St Andrews Eden Campus, a unique site dedicated to sustainable businesses and research. Construction of the new facility began in June 2023, with gin and single malt production starting in April 2025. Mark Dermul, Belgian whisky blogger, tries a waxy oldie. How often do you get the chance to taste a Clynelish that’s three decades old? Rarely or never, of course. When Mark had the pleasure of tasting this delight at Jurgen Vromans’ session at the unrivaled Liquid Leuven in January 2025, he immediately ordered himself a bottle: ‘Considering the rather hefty price tag, I regard it as an early 60th birthday gift to myself… But I can taste it already, right?’ It comes in a beautiful wooden box in the typical square decanter, but with a lovely illustration on the back of the bottle.

Aged 15 years in former Kentucky bourbon barrels, this golden amber spirit offered aromas of ripe dried fruit, candied green apple, and warm spice. The palate unfolded with notes of spiced bread, herbal tea, caramel, and honey, finishing with lingering impressions of dried spice, citrus, and salted leather. Rich, robust, and expressive — a fitting beginning to this historic series. Only 108 bottles of this whiskey were released in 2024.

The Taylor brothers, who founded the company, seem to have cracked some sort of whisky cheat code. What they’ve proven is that mature whisky doesn’t need to spend its entire life in fresh wood to be complete. If you take well-aged whisky, blend it skillfully, and finish it thoughtfully, you can create something far greater than the sum of its parts.

Of course, it’s not that simple—you need great whisky and great wood from the start. Blending is a huge factor as well, but it’s clear these guys are overachievers on both fronts. We’ve never had a Found North release that didn’t overdeliver, and these two new barrels are no exception.

Let’s start with the Madeira Cask Finish. This one isn’t rye- or corn-heavy; instead, it perfectly balances its aromatic and palate-driven elements. The color is a lovely russet (1.3). The nose is explosive, offering baked orchard fruit, exotic spice, tense earthy oak, candied apricot, gravel, and caramel candies. On the palate, it’s dusty and old-school, with loads of rye spice and earthy warehouse floor notes. With some air, the nose opens beautifully to sweet peach tea, fig jam, pink peppercorn, and wet cement. The palate stays bold, spicy, and earthy, while adding layers of sweet oak and candied corn.

A tremendous and surprising whisky that fits into no box—and doesn’t need to. It’s simply delicious.

These guys sure know how to pick them. Here’s a Canadian whisky that defies what most Americans might expect from the north. Blended from 49% rye, 48% corn, and 3% malted barley—and drawn from barrels aged between 12 and 25 years before a final rest in Madeira casks—this is a stunning example of thoughtful craftsmanship. Each grain and the finishing cask have their moment to shine.

The nose opens with sarsaparilla, allspice, toasted coconut, and buttery pastries, all of which carry gracefully onto the palate. The flavors unfold further, revealing lemon custard (a hallmark of Madeira cask aging), orange marmalade, white chocolate, and a cascade of baking spices. It finishes with a touch of earthy potpourri, laced with spice, dried flowers, and cream soda. Let’s see how an old Tawny Port cask works with these exceptional aged Canadian rye and corn whiskies. The color is a deep, sanguine auburn (1.5)—an absolute about-face from the Madeira cask—offering dense red fruit notes of cherry, cassis, and raspberry. Next come layers of roasted nuts and rich herbal tones such as cassia bark, cinchona, and kola nut. The palate shows dense rye spice and earthy warehouse floor character more overtly than the Madeira, with the spice kicking up at the end. It begins with sweet, jammy red fruit—dark cherry and fudge—before melding into gravelly rye spice and exotic herbs.

If you really want to see how much a finishing barrel can transform a whisky, look no further. The blend is then finished in tawny Port casks, creating something that, as cliché as it sounds, is truly greater than the sum of its parts.

The nose opens with blackberry jam, figs, and Mexican chocolate, all wrapped in the warm air of a dusty saloon. Those rich, stewed berries carry through to the palate, joined by clove, anise, wet bark, and a touch of molasses, before finishing with black cherry compote over dense dark chocolate. It’s remarkable how distinct it is from the Madeira-cask version, proving just how dramatically different fortified wine barrels can shape a great blend. Both are stunning and well worth tasting side by side.
