Distillery profiles: Imperial

Imperial distillery was designed by Charles Doig and was, unusually, built using bricks.,There was also an iron framework and walls 2ft thick in places to resist fire damage. All internal doors were iron for the same reason. There was quite a community on the site with 24 company houses built for use by employees. The distillery was located in the hamlet of Carron by the Spey taking advantage of the railway line and had it ‘s own substantial sidings which extended to nearby sister distillery Dailuaine. The year of construction, 1897, was Queen Victoria’s diamond jubilee year hence the name. To mark the occasion a gilded crown adorned one of the kiln roofs.

Imperial was established by farmer’s son Thomas Mackenzie in 1897 Thomas’s father, William, founded nearby Dailuaine distillery. Upon his father’s passing Thomas expanded the business having become a partner. He also had interests in Talisker distillery and merged the two creating Dailuaine-Talisker Distilleries Ltd in 1898, a company for which he was both chairman and managing director. The capacity of the three distilleries meant the company had the highest potential output of any Highland distilling company. The business’s offices were located at Imperial. When investment in the Scotch whisky business slumped after the collapse of Pattison’s Imperial was closed after only a single season in 1899 having just started production in July 1898.

Distilling only restarted 20 years later in 1919 after the death of Mackenzie. As he had no family of his own a take-over of the company in 1916 was arranged by a consortium of its customers: Dewars, Distillers Company Limited (DCL), W. P. Lowrie and Johnnie Walker. It was not long, 1925, before the business was subsumed into the mighty DCL. This followed the amalgamation of the ‘Big Three’: Buchanan’s, Dewar’s and Walker’s with DCL. The 3 distilleries were however operated as a separate company within DCL until as late as the early 1980s. When Dailuaine-Talisker Distilleries Ltd. was taken over the company also owned the closed Bon Accord distillery in Aberdeen.

The Wine & Spirit Trade Record’s visit in 1925 used words like: “mammoth”, “huge”, “massive”, “exceptionally large” and “immense” to describe the operation at Imperial. The journal also noted use of an Abernethy mill, rather than the almost ubiquitous Porteous or Boby appliances. An “almost unique” “double decker” kiln I can’t quite get my heid round is mentioned as well as a two floored mash-house with the lower floor accommodating No. 2 mash-tun “for draining purposes”.

The re-opening in 1919 didn’t last long due to issues of waste disposal despite the installation of large filter beds to purify waste before entering the Spey. Imperial shut again in 1925, this time for 30 years although malting continued on site.

Like other distilleries in times of hostilities Imperial was used as a billet for troops during the Second World War. Another occasion when the distillery’s facilities were employed for uses other than whisky production was when the Caledonian swimming club used the distillery dam for summer galas.

Early trials of converting distilling waste products into food for cattle were conducted on site before a processing plant was established. Once this dark grains plant overcame the problems of disposing of by-products Imperial was again able to commence production. At this time the whole industry was gearing up in response to the rise in demand for blended whisky in the post war era. A refit managed by new DCL subsidiary Scotch Malt Distillers (SMD) in 1955 heralded this recommissioning on 19th December. Due to poor condition the famous crown was removed. I have read one reference to “electric distilling plant” at this time from author Michael Brander but have found no more about this interesting feature. During renovations the mash and still houses were updated and No.4 warehouse was built. It is possible that shell and tube condensers replaced worm tubs at this juncture although this change may have came about later. Perhaps it was also at this juncture that a Porteus mill was installed.

Ten years after reopening the stills were increased from 2 to 4 boosting capacity to 3ML. The stills were amongst the largest in the Scottish industry, the wash stills had 36KL capacity with a 18KL charge while the spirit stills were just under 34KL capacity with a 21KL charge. The lantern style wash stills’ lyne arm had no angle but the onion shaped spirit stills’ arms descended. The 6 larch wash backs held 56.6KL of wash and latterly the yeast used was a combination of brewer’s and distiller’s. In 1967 Saladin maltings were added which also helped meet the needs of nearby sister distilleries Cardhu and Benrinnes. Additional storage capacity was also required for peat, barley and malt.

In 1969 still heating moved from coal to internal steam heating and the swap in condensing method mentioned earlier may have actually been during this period of improvements. The original rake and plough cast iron mash tun was later replaced with a stainless steel model using mechanical paddles and a copper top although I haven’t confirmed the date of this change. Production and cooling water was piped from the Ballintomb Burn which flows from the Aldach springs in the Mannoch Hills. At one time the burn also powered a turbine.

Dailuaine-Talisker Distilleries Ltd was wound up in 1982 and the distillery properly became part of SMD with the licence to distil being transferred to Peter Dawson Limited. Annual output was recorded as being reduced to 1.6ML in the 1980s which was a difficult decade for the industry. By 1986 only 2 of the 24 company houses were occupied by staff.

Yet another closure came in March 1985 ending the longest unbroken period of production at Imperial : 30 years. The Saladin maltings had closed the previous year which reduced staffing from 30 to 20.
After DCL was acquired by Guinness the distillery was sold to Allied Distillers Limited (ADL) in 1989/90, Glentauchers was also included in the sale. Upon refurbishment Imperial restarted in 1991 but shut for the final time 7 years later. James Scott was the last manager and John MacDougal tells a story of catching several staff stealing whisky during this period. Some of the misappropriated spirit was later sold, those responsible lost their jobs.

In total the distillery operated for only 43 years, 40% of its lifespan. On the sale and dismantling of Allied in 2005 the distillery ended up belonging to The Chivas Brothers in turn owned by Pernod Ricard. In spring 2005 estate agents were instructed to sell the buildings with the intention of conversion to apartments.

In December 2007 thieves were interrupted by Chivas staff attempting to steal copper from the utensils on site. Imperial was demolished in 2013 after the news of a new distillery was announced in 2012 : the building of Dalmunach distillery commenced in 2014 on the site with the plant entering commissioning in 2015.

Official bottlings are rare although a 15yo 46% version appeared around 1999 alongside 5 other distilleries from Allied. Gordon and MacPhail notably regularly bottled vintage expressions for a period. Over time and through the changing owners Imperial was used for a variety of blends including Black Bottle whilst under Allied who later sold the brand to Highland Distillers, Old Smuggler, Teachers, Long John and Ballantines.

Introducing Toronto’s Newest Whisky Festival ~ Whisky Social

Whisky weather is here, and we couldn’t be more excited as Spirit of Toronto gets set to launch Whisky Social, Toronto’s newest whisky festival. Drumroll please…

It’s surreal how quickly all of this is coming together, but here’s a mock-up of the tasting glasses that are currently in production as I type. And to think that just a month ago Whisky Social was a glint in our eyes, but that’s serendipity for you.

We’d been toying with the idea of a sibling for years, but it wasn’t until last month that we came across the perfect venue, a beautifully renovated heritage building along Lakeshore East in Mississauga.

When we visited the space in August it was love at first sight: the exposed brick, the garage doors, the outdoor courtyard – food trucks! – the bank of large windows, the natural light that floods the space from all angles, including a 50ft skylight. (We just don’t architecture like we used to, do we?)

And location, location, location! Right on Lakeshore East, just 3 stops from Union Station. In short, it’s the perfect blank canvas to paint the kind of relaxed, low-key daytime whisky festival we’ve always enjoyed when traveling to distant lands. “No drama, just drams,” says Patrick (my BFF and oyster Jedi), in a reference to the many gears involved in bringing Spirit of Toronto to life every May.

By contrast Whisky Social will be focused on the sips and the craic, as my Celtic mates say, hence our tagline: “A Gathering of Kindred Spirits”.

No masterclasses, no cocktails, no ice, no dress code, no babysitter, no FOMO. (So many no’s, such bad marketing!) Below is the clever elevator pitch that I’ve crafted for the occasion:

POV: If Spirit of Toronto is the filet mignon of whisky experiences then Whisky Social is a smash burger… laidback and informal, but equally satisfying.

(Spoiler alert: smash burgers and whisky are a match made in heaven!)

From our many conversations these past few weeks, brands and distillers ‘get it’, and look forward to pouring their wares in a grassroots setting where like-minded whisky stans can gather to revisit old favourites and discover their next go-to bottle.

Brands are still being confirmed, but so far I’m excited that Whisky Social will be featuring a handsome selection of whiskies from Scotland, Ireland, Japan, India and, of course, Canada – including the fantastic range of single malt whisky being made in the Yukon by our friends at Two Brewers, as well as a 28-year-old Canadian whisky finished in Tokaji casks (more to come!)

And if we’re lucky, we may even be hosting a final bow from one of Canada’s longest serving master blenders – fingers crossed.

SEPTEMBER 2025 AUCTION ENDS TONIGHT!

There’s still time to bid on your favourite bottles in this month’s auction, including this Macallan Archival Series Folio 6. Released in 2020, this instalment of the Folio series features the Chairman as a Scotsman dancing the Highland Fling over a brush and pen, symbolising advertising gurus Holmes and Salaman, who were responsible for many of the iconic printed adverts for Macallan.

Or how about this incredibly rare Royal Salute LXX which was bottled in very limited numbers and rumoured to contain whiskies from older stock that far exceed the 21 years that are normally stated on other versions.

The symbiosis between Aston Martin and William Grant & Sons’ pursuit of innovation and excellence in their respective fields has resulted in this stunning 16 Years Old limited edition Glenfiddich bottling, which will surely appeal to F1 fans and the whisky world alike.

Released in 2006 to celebrate the 105th birthday of the extraordinary Janet Sheed Roberts, granddaughter of Glenfiddich founder William Grant, who was the matriarch of the Grant family and Scotland’s oldest person at the time of her death aged 110. The whisky itself was distilled at Kininvie Distillery in 1990, this release was the first ever expression from Kininvie to be released as a single malt. This is bottle number 11.

Macallan first introduced the Concept Series in 2018 for travel retail. The series is focused on visionary individuals with fresh, bold ideas with imaginative and innovative concepts in the arts genre.  Concept Number 1 is inspired by the world of surreal art and designed to translate to the creative nature of different cask types and maturation processes. Concept Number 2 is inspired by the world of music and is intended to marry both music and whisky, bringing together a multi-sensory experience. Concept Number 3 is inspired by contemporary designer David Carson.

From 19th to 30th September, the majority of The Distillers One of One lots will be on display in London – 

a unique opportunity to experience the exceptional craftsmanship and artistry behind the auction lots.

LONDON, 18th September 2025 – Less than one month away from the Auction, The Distillers One of One® is unveiling the last set of ultra rare lots set to be auctioned on Friday, 10th October 2025 at the historic Hopetoun House near Edinburgh, in collaboration with Sotheby’s. The final reveal of 15 further beautiful lots comes as online bidding is officially open now on the Sotheby’s website.

Since its inaugural event in 2021, The Distillers One of One has grown to become the world’s largest charity auction dedicated to rare Scotch whisky, with 100% of hammer proceeds donated to charitable causes. Through the remarkable generosity of its donors and collectors across the globe, the auctions have raised £4.3 million to date, with the majority directed to the Youth Action Fund. Established in early 2022 following the first auction, the Fund supports disadvantaged young people across Scotland to unlock their potential and contribute positively to their communities.  This funding has already helped engage 3,362 young people and deliver 2,271 employability outcomes. The Associate Donors

Among the 35 companies participating in the auction this year are 15 “Associate” donor brands, who are revealing their unique lots today. 

Adelphi Distillery Ltd proudly presents The Adelphi Archive: a singular 29-Year-Old Single Malt from the now-lost Imperial Distillery. Distilled on 24th April 1996 and aged in a re-fill bourbon barrel for nearly three decades, this unrepeatable expression carries the rare elegance for which Imperial was revered. At 53.8% ABV, it delivers bright citrus and sweet patisserie on the nose, with a silken palate of warming depth and a long, lingering finish. Housed in a Glencairn crystal decanter, the whisky is presented upon a bespoke walnut pedestal, meticulously crafted over 35 hours by Mike Buckley, incorporating an authentic bolt from Imperial’s original barley dresser. With artwork by Nevis Design and Labeltec’s generous print support, this lot embodies history, craft, and provenance. A unique whisky treasure, preserving the legacy of a distillery that will never return.

Estimate between £2,000 – £3,000

Arbikie Distilling Ltd is donating an extraordinary cask of Highland Rye – a 100% Malted Barley Single Grain Scotch Whisky, distilled from the estate’s own Odyssey barley, grown in the Blue Bear field and filled on 14th November 2018. Cask 4-C, matured in a 200L ex-Bourbon cask, reflects Arbikie’s pioneering field-to-bottle ethos and commitment to sustainability. Though crafted entirely from malted barley, its classification as a single grain arises from distillation in a copper batch column still – a technicality that belies the spirit’s true nature. Here, the richness and complexity of malted barley meet the refined smoothness of column distillation, delivering a whisky both innovative and authentic. Rooted in the soils of Scotland’s east coast, this rare expression embodies terroir, heritage, and craftsmanship in equal measure. John Stirling, Director of Arbikie Highland Estate Distillery, says: “At Arbikie, we believe great spirits should do good. Donating to One of One allows us to support meaningful change while sharing our story of sustainability, provenance, and innovation.”

Estimate between £7,000 – £12,000

The Artisanal Spirits Company plc presents Artisan Casks Ancient Alba ‘AON’ 52-year-old: a remarkable Blended Grain Scotch Whisky, and the very first release from the new Artisan Casks programme. Distilled in 1972 and matured for over half a century in a refill American oak bourbon barrel, this rare expression is bottled in a magnum-sized 150cl vessel, proudly carrying the official livery of Artisan Casks and distinguished by its Gaelic name ‘AON’, meaning “one”. More than a whisky, this lot is an introduction to the future of Artisan Casks: combining history, artistry and innovation. The successful bidder, joined by three guests, will also be invited to The Vaults in Leith, Edinburgh – the spiritual home of Artisan Casks – for a private tasting and dining experience, with the opportunity to sample AON without opening the magnum itself. As James Mackay, Private Client & Commercial Director, observes: “The chance to acquire the first ever bottle from the first ever cask is truly a once-in-a-generation opportunity for the rare whisky collector.”

Coachbuilt Spirits Ltd, in collaboration with RESS Jewellery Ltd, has created Coachbuilt FW07: a 50-Year-Old Blended Scotch Whisky, distilled in 1973, matured exclusively in sherry casks, and bottled on 22nd August 2025 at 46.6% ABV. This extraordinary whisky is paired with a jaw-dropping sculpture forged entirely from the reclaimed metal of the legendary 1979 Williams FW07 Formula 1 car, anchored on polished black granite. Individually sand-cast and hand-sculpted by acclaimed artist Mike O’Connor, the piece captures the dramatic profile of the FW07’s high-downforce rear wing, transforming engineering into timeless art. Coachbuilt Whisky, conceived by Jenson Button and George Koutsakis, unites the precision, innovation, and heritage of Formula One with the craft of Scotch, producing spirits that transcend categories. Accompanied by a leather-bound book detailing the build and history, this lot is a whisky, sculpture, and testament to enduring craftsmanship -a singular creation for collectors and connoisseurs.

Estimate between £5,000 – £9,000

Glen Moray Distillery Ltd proudly presents Glen Moray 1995 Peated Cask Finish, a 30-year-old single malt that marries Speyside elegance with the smoky character of a cask previously holding Islay peated whisky. Luxuriously rich vintage oak spice notes on the nose are complemented by subtle campfire smoke and a honeyed sweetness, while the palate reveals earth and smoke interwoven with vanilla, honey, green tea, and hints of caramelised banana. The long, lingering finish develops late into the night with stem ginger, pineapple, and ethereal smoke. Accompanying this exceptional bottle is an overnight stay and dinner with the opportunity to taste the whisky alongside Glen Moray’s Head of Whisky Creation: Stephen Woodcock. As Stephen notes: “Our One of One selections are always from some of the finest casks we have stored at Glen Moray and this one is no different. Finishing in a cask which has previously held an Islay Peated Single Malt, allows the Glen Moray to pick up hints of smoke which sit wonderfully with the traditional Speyside style that Glen Moray typically imbues. This is an enigmatic and thoroughly enticing One of One selection.”

Estimate between £3,500 – £7,000

Hunter Laing & Company Limited presents Hunter Laing’s Old & Rare Teaninich 51-Year-Old Single Malt Scotch Whisky distilled in 1973 and bottled exclusively for the Distillers One of One auction in 2025. Bottled at its natural cask strength of 50.4% ABV, this rare expression is presented in a hand-cut Glencairn crystal decanter with a gold-embossed stopper, accompanied by a bespoke wooden display box from Abercorn Bespoke Packaging. Richly gold in colour, it opens with a sweet, inviting nose of tulips, orange zest, and gentle Christmas spices. The palate is full-bodied and layered, revealing apple crumble, honeycomb, and dark chocolate, before a long, lingering finish with dry oak and cracked black pepper. Drawn from decades of Hunter Laing’s careful cask selection, this one-of-a-kind whisky embodies the expertise of a third-generation family of Scottish distillers, blenders, and bottlers. A rare celebration of time, craft, and provenance, it is a collector’s treasure.

InchDairnie Whisky Ltd is offering a unique opportunity to own a KinGlassie Single Malt Single Cask, to be filled in December 2025. The successful bidder will hand-select the cask type (ex-Bourbon, ex-Rioja, ex-Port, or ex-Andalucian wine) creating a singular expression of KinGlassie whisky, maturing exclusively in a purpose-built Cask Club warehouse for 12 years. This filling will be unmatched, offering the owner the only cask of its kind in the world. InchDairnie Distillery, normally closed to the public, extends exclusive access to this cask, including a private tour of the distillery, a whisky tasting, and the chance to witness the cask filling in person. This lot represents a rare blend of craftsmanship, provenance, and personal involvement, allowing the collector to shape the maturation and destiny of a future single malt. A truly bespoke experience, it is a chance to create a one-of-a-kind whisky in a world-class distillery setting.

J & G Grant has created a Glenfarclas Gallon of 58-Year-Old Single Malt Scotch Whisky, presented in a bespoke oak presentation box. This remarkable 4.5-litre bottle contains whisky matured in a first-fill sherry butt, bottled at 45.4% ABV, and represents nearly six decades of Scottish craftsmanship. The hand-carved oak box was created by renowned Scottish sculptor Stuart Murdoch, whose workshop lies less than 1.5 miles from Glenfarclas Distillery. Inspired by the surrounding Scottish landscape, the design marries artistry and heritage in a tribute to the distillery’s legacy. As John Grant, Chairman of Glenfarclas, notes: “As a Liveryman of longstanding, I am delighted to once again be supporting the brilliant work of The Distillers’ Charity. It is amazing to see the difference that has already been made to the lives of so many young people and it is my hope that this piece of Glenfarclas history will contribute to the ongoing success of the charity.”

The Glenturret has created Lineage by The Glenturret, a unique whisky spanning two generations, combining liquid from two 1987 casks and two 2005 casks. The whisky is presented in a jet-black Lalique 100 Points crystal decanter. The decanter sits atop a hand-crafted plinth representing the River Turret, created by father-and-son carpenters David and Callum Robinson – marking their first collaborative public work. The liquid delivers pineapple and mango with youthful vibrancy, layered with ginger and wood spices, and rounded by mature oak. Tropical fruits and subtle sweet spice lead to a gentle, fruity finish, reflecting the distillery’s dedication to heritage and craft. As John Laurie, Managing Director, notes: “Lineage speaks right to the heart of who we are as a distillery- The Glenturret is always trying to preserve the past in order to inform who we are in the future.  The skills of whisky making are still passed down from experienced hands to new apprentices much like the Plinth created by David & Callum. Dornoch Distillery Company Ltd is offering Thompson Bros – Mystery Malt, a specially curated series of four bottles created exclusively for the Distillers One of One Auction. Each bottle conceals its contents until opened, with the distillery and age discreetly displayed under the capsule, offering an element of surprise and discovery. Drawn from Thompson Bros’ finest stocks, this series spans whiskies aged between 7 and 45 years, including expressions from both new wave and established distilleries. Thompson Bros, awarded Best Independent Bottler at the 2024 OSWAs, has bottled over 500 unique whiskies, rums, cognacs, bourbons, blends, and world spirits. Mystery Malt, launched in April 2025, saw its first two series sell out in just 24 hours, highlighting its rarity and demand. The Tomatin Distillery Co Ltd presents a Cask of Tomatin Highland Single Malt Scotch Whisky, distilled on 4th April 2014 and matured in a 1st-fill bourbon cask (Cask No. 2263). Selected personally by Master Distiller Graham Eunson who retired in May 2025, this cask represents an exceptionally rare opportunity: Tomatin does not sell casks directly to private individuals nor via the brokerage market, making this offering truly unique. With an original 124.2 litres of alcohol, this liquid reflects Tomatin’s signature Highland style – balanced, rich, and crafted with precision. Whisk-E unveils Arran to Japan –The Journey, a one-of-a-kind bottling from Cask #2/1995, the second cask ever filled at Lochranza Distillery on Arran. Laid down on 15th August 1995 by David Croll, founder of Whisk-E Ltd Japan and one of Arran’s original investors, this exceptional whisky matured for 30 years in a Sherry Hogshead before being bottled on its 30th birthday, 15th August 2025, at 51.0% ABV. Created to mark the 30th Anniversary of Whisk-E Ltd Japan, this unique release is presented in a bespoke engraved bottle designed by Scottish glass artist Giles Lawson Johnston, featuring Mount Fuji to symbolise the Japanese market’s reverence for Arran. The bottle is showcased in a handcrafted burr oak cabinet by Noble & Gilmour, complete with an Island of Arran–shaped window.

Young Spirits Company Ltd is offering Ferg & Harris – Wings Over Kintyre, a 31-year-old organic Springbank single malt, distilled in 1992 and finished in a 1.2-litre oak cask previously holding organic Grande Champagne cognac from 100% Folle Blanche grapes. Bottled at 47.6% ABV, this rare expression harmonises orchard fruits and spiced warmth with Springbank’s signature coastal profile. Encased in a bespoke illuminated presentation, the bottle is detailed with delicate barley motifs in soft gold, topped with an asymmetrical glass stopper, and displayed within a hand-crafted stained-glass frontage by Inverclyde artist Alec Galloway, framed in sustainable oak by Scottish woodworker Eoghan Menzies. The winning bidder will enjoy a private tasting with Alex Harrison at Young Spirits’ Edinburgh headquarters and receive the 1.2-litre cask personalised with their details, along with hand-waxed glass ampoules for sampling.

In partnership with Buffalo Trace Distillery, Meridian will invest $40 million to construct an innovative facility and create dozens of new jobs in the community

FRANKFORT, Ky. – Meridian Biotech today announces a new partnership with Buffalo Trace Distillery that aims to improve global food system security by converting the Distillery’s byproduct into multifunctional alternative proteins. Meridian will invest $40 million to construct the state-of-the-art conversion facility in Franklin County, creating up to 35 high-tech, high-paying local jobs and positioning the Commonwealth at the forefront of sustainable food innovation. 

The new Meridian facility will utilize novel technology that converts Buffalo Trace stillage, a natural byproduct of the distilling process, into multifunctional alternative proteins. In its new form, the stillage, which will be piped directly from the Distillery to Meridian’s Frankfort facility, can be used in a variety of industries, including aquaculture (fish farming), pet foods, and the production of organic fertilizer.

“By reimagining distillery stillage as a resource rather than a byproduct, we’re pioneering new pathways in biotechnology that have the potential to transform the spirits industry,” said Brandon Corace, President of Meridian Biotech. “Like Buffalo Trace, we are committed to making a long-term, positive economic impact on the community.
