The 2024 Tsukuriwake Selection features four boundary-pushing single malts from Yamazaki and Hakushu distilleries exploring artisanship through diversity of making. Raw ingredient selection, peating levels and fermentation, distillation and maturation techniques are expertly balanced by Suntory blenders to explore the full range of expressions of what a single malt can be.

The Yamazaki Golden Promise is composed from Golden Promise barley. First grown in Scotland in the 1960s, this varietal is revered for its flavour and malting characteristics. Combined with aging in American Oak casks, the nuances of the Yamazaki base are accentuated through a malty and rich character, with sweet, fruity and citrus notes.

Islay peat imparts one of scotch whisky’s most distinctive flavours, venerated globally for its distinctive smokiness. The Yamazaki Islay Peated Malt balances the smoky quality with a characteristic sweetness, borne from the unique water and maturation processes that define Yamazaki whisky. This marriage of traditions is especially present on the nose, where gentle smoke meets a hint of biscuit.

Through years of experimentation, our blenders have discovered the secret to the treasures of Mizunara casks: time. A long maturation period imparts unmistakeable spiciness and notes of sandalwood and aloe upon the Yamazaki. As a result, Yamazaki Mizunara Aged 18 Years is a pleasingly complex, rich and elegant whisky, where fruit, spice and wood notes engage to inspire the senses.

The Hakushu Peated Malt Aged 18 Years exemplifies the art of marrying ingredients, techniques and terroir. Throughout their long history of using peated malt, House of Suntory blenders have harnessed Hakushu’s climate to unveil intricate layers of flavour from the peated malt’s robust smoke character. This single malt was distilled in 2013 at Teaninich Distillery, located in the Highland whisky region. It was aged for 10 years in a single Refill Bourbon Hogshead and finished in a 1st fill American Oak Oloroso Sherry Hogshead for 1 year 9 months. Bottled at natural cask strength of 56.8% ABV. Bottled by Woodrow’s of Edinburgh for their Warehouse Reserve collection without chill-filtration or artificial colouring. Only 289 Bottles have been produced.

SCOTCH WHISKY DISTILLERIES UNVEIL UNIQUE SPIRITS BASED

ON 1920S TECHNIQUES

Six of Scotland’s most innovative distilleries have partnered with James Eadie to create a groundbreaking whisky collection, bringing nearly forgotten 1920s distillation techniques back to life.

Project 1927 is the first collaboration of its kind, uniting independent distilleries across Scotland to revive century-old production methods. Inspired by a historic early 20th-century guide to Scotch whisky production, this September marks the first time the public can experience these historic spirits, as each distillery’s unique new make spirit is released in a special collection, marking the beginning of their journey to becoming whisky.

The Distillation of Whisky, 1927-1931, one of the few available practical first-hand resources dating from Scotch whisky’s early history, was republished by James Eadie Ltd in 2023 in collaboration with the British Library, and illuminates lost whisky-making techniques from the interwar years.

Crafted at Ardnamurchan, Dornoch, Holyrood, InchDairnie, Lochlea, and ‘An Unnamed Farm Distillery in the Heart of the Kingdom of Fife’, with assistance from renowned whisky expert Dave Broom and Alan Winchester, former Master Distiller of The Glenlivet, the ground-breaking new make spirits were produced adhering to techniques derived from The Distillation of Whisky.

Each distillery has drawn its own inspiration from the book to imitate production methods from 100 years ago, blending tradition with modern expertise to produce spirits that offer a truly unique taste of Scotch whisky’s rich heritage. This collaborative effort not only revives lost techniques but also sets a new benchmark in today’s whisky industry.

The distilleries had exclusive use of locally grown barley or those varieties that were grown in the 1920s as well as exclusive use of brewer’s yeast for distilling, something which was standard at that time but is now almost unheard of.

New make spirit packs will also include a ‘blended at birth’ bottling containing spirit from each of the distilleries blended together. Each of the new make spirits have been bottled at 63.4% ABV, with an exclusive presale for buyers of The Distillation of Whisky launching on 4th September.

Ardnamurchan

Ardnamurchan has been a forward-focused distillery in every aspect of our production process since we started distilling in 2014. To have the opportunity to take cues from distillers of the past, and attempt to implement them within a modern distillery, was too intriguing a prospect to pass up.

The aim of the project is to replicate, as near as possible, the mashing, fermentation and distilling methods used between 1927 and 1931. This requires the adoption and, on occasion, omission of modern technological advances in our production process to authentically achieve this. Changes were also be made to temperatures, settling times, cut points and more. By looking to the past, we hope to learn something new that we can adopt in the future.

Dornoch

Here at Dornoch we have always taken inspiration from ‘old style’ production, with heritage barley varieties, spent brewer’s yeast, long fermentation times and cut points made by sense being amongst the cornerstones of our production. Our standard production model (which we adapted for this collaboration with James Eadie) is based heavily in production techniques common in the early twentieth century, and we frequently employ ingredients and techniques commonplace in the nineteenth century and earlier. With such a focus on historic distilling practices, the team here at Dornoch were incredibly excited when we were approached by James Eadie about the project, and used the information provided in this book to create something unique and explore aspects of ‘old-style’ we had not yet explored here at Dornoch.

Holyrood

For this collaboration with James Eadie, our inspiration came from the heritage malts themselves. At Holyrood, we have been working with a variety of heritage malts and with this project we have been able to reflect on our work so far. Our mashbill used 2 of our favourite heritage malts as the base, Chevallier and Plumage Archer, each chosen for the complex flavours and textures they impart on our spirit and as they were principal barley races of the 1920s.

We have selected Chevallier malt for the delicious bready and biscuity notes and chalky, viscous texture that contributes to a longer finish, allowing the more subtle flavours in the spirit to linger. Plumage Archer brings juicy, fruity flavours alongside hints of toffee, which marry beautifully with the bready notes of Chevallier. We layered this heritage base with a small inclusion of Highland peated malt, as a nod to the historic use of peated malt within Scotch single malt through the kilning process.

For this recipe, we exclusively pitched one of our most cherished yeast strains – Edinburgh Ale Yeast (EAY). EAY is a modern strain, which owes its origins to the homogenisation of historical Edinburgh yeasts shared amongst the breweries of the old city. We selected this yeast to pay homage to our home city and also for the tropical, fruity flavours it brings.

InchDairnie 

We were struck by the Champonnois still (see pp. 354, 358 in The Distillation of Whisky, 1927-1931), which resembles our Lomond Hill still, and the barbet caps in this book (p. 335), which look very similar to our bubble caps on the six trays in the Lomond Hill still neck. The Champonnois still was a French construction, later adopted by German distillers, mostly used to rectify wines and marc. It was not a continuous still but a batch still, again like our Lomond Hill still. The question which therefore needs to be asked is to what extent did this design form any part of the design for the original Lomond still, which first appeared in Scotland in the 1950s.

Lochlea 

We aimed to produce a spirit that the distillers and blenders from 100 years ago would recognise: one with a heavier creamier character, elegant floral and fruit forward tasting notes. We also plan to show some of the flavours that a winter whisky can bring – a subject mentioned often in this book. We hope that the liquid produced should have recognisable characteristics from 100 years ago but also that will allow current consumers to understand what the last century of change has made.

An Unnamed Farm Distillery in the Heart of the Kingdom of Fife

Many of the methods and parameters used back in the 1920s are exactly the same or very similar to what we are using today: long fermentation times, use of local farm-grown barley and traditional dunnage warehouses, for example. In my view, the big differences between now and then are the malt and yeast strains that we are using. It will be very interesting to see the differences that these things make to the final spirit and more interesting still to see if these differences remain as the spirit ages. Although you cannot replicate exactly what people did 100 years ago this is possibly as close as you can get.

New Old Malt Cask at K&L California – Scotch Whisky News

The Old Malt Cask line of single cask single malts was created by the Laing brothers in 1998. They’ve since bottled countless legendary single malt and continue to surprise and delight connoisseurs with their diverse range of exceptionally selected single casks. Unlike K&L’s Exclusive single casks, Old Malt Cask is traditionally bottled at 100 proof, but always without chillfiltration or coloring of any kind. The Laings selected a diverse range of malts to celebrate 25 years in the single cask business, picking out choice casks and bottling them in the gorgeous retro packaging.

2010 Linkwood 13 Year Old “Old Malt Cask 25th Anniversary” K&L Exclusive Single Canasta Sherry Butt Cask Strength Single Malt Scotch Whisky (700ml) $79.99 View

This very reasonably priced Linkwood is aged for 13 years in Canasta Cream Sherry. The famous distillery, which is one of the core malts in the Johnnie Walker line of blended scotch, has become well known in Scotch circles for producing excellent whisky. Built in 1821 outside of the city of Elgin by Peter Brown. It was eventually becoming part of United Distillers, one of predecessors to Diageo. The 3 sets of stills are housed in two separate buildings, 1 in Linkwood A and the others in Linkwood B, built in 1971. The robust character of the famous old distillery loves sherry and this lovely butt was well seasoned with a blend of oloroso and Pedro Ximinez sherry produced by William & Humbert known as Canasta. The savory and sweet character of the sherry pairs perfectly with the rich malty and earthy flavors of Linkwood. Deep and complex it’s taken the sherry character perfectly in stride.

2008 Inchgower 15 Year Old “Old Malt Cask 25th Anniversary” K&L Exclusive Single Sherry Butt Cask Strength Single Malt Scotch Whisky (700ml) $89.99 View

Inchgower is lovely underrated distillery on the eastern edge of the Speyside region. It was founded in 1875 and became one of the core malts for the Bell’s blend in the 1930s, eventually becoming part of Diageo when Guinness and Grand Metropolitan merged in 1997. It’s uniquely situated behind the seaside town of Buckie and it’s robust malt seems to love sherry as much as any other in the region. This refill sherry barrel offers a wonderful glimpse at the quality of this lovely distillery without over powering the malt with heavy wine character. It still has plenty of mature sherry flavor and offers a balanced polished example of this lovely undervalued distillery.

2009 Craigellachie 15 Year Old “Old Malt Cask” K&L Exclusive Refill Hogshead Cask Strength Single Malt Whisky (700ml) $99.99 View

The wonderful Craigellachie distillery is beginning to become more of a household name now that the owners have made an earnest attempt to market the malt under its own name. The funky little distillery outside of the eponymous named village is on the hillside directly across from Easter Elchies the famous estate where Macallan is built. The much more humble Craigellachie proudly displays the John Dewars name in large letters on the front of the distillery building. Craigellachie has been a regular on our shelves for many years offering complex malts of rich character. While this special cask is listed as a “refill hogshead” you’d figure the bottlers would have noticed the insanely dark color and powerful sherry character and listed the previous contents of the barrel on the label. Perhaps they don’t have precise records regarding the contents, but there’s no question that this whisky was filled into a highly active sherry hogshead in January of 2009. Bottled at a cask strength of 52.2 without coloring or chillfiltration, lovers of sherried Craigellachie will rejoice. Deep and complex with no sulfur character whatsoever. It retains the gorgeous old school industrial notes (old diesel engine and earthy malt) that we know and love in Craigellachie, but these are framed perfectly by the beautiful sherry and oak. A truly stupendous value that many other brand would be comfortable selling for twice the price.

2011 Caol Ila 12 Year Old “Old Malt Cask 25th Anniversary” K&L Exclusive Single Manzanilla Sherry Butt Cask Strength Single Malt Scotch Whisky (700ml) $109.99 View

This highly unusual and delicious malt from the famous Caol Ila distillery on the northern shore of Islay, was filled into a manzanilla sherry butt back in 2011. Finding Manzanilla sherry barrels outside of the Sanlucar is very unusual as the producers covet these old barrels for their ability to develop the trademark “flor”. The resulting wine is dry and salty with a rich texture and complex aromatics. The salty wine and the smoky whisky work in tandem to create a truly ocean driven malt. This special Caol Ila will provide an ultra-complex experience that will be nearly impossible to match elsewhere. Rich and savory with powerful ocean character and a deep complex palate. The Caol Ila distillery is the biggest secret on Islay. The darling of connoisseurs, it remains much less known than its southern sister Lagavulin. Yet, Caol Ila is consistently delivering incredible quality. Here’s the proof.

2007 Glengoyne 16 Year Old “Old Malt Cask” K&L Exclusive Single First Fill Sherry Butt Cask Strength Single Malt Whisky (700ml) $109.99 View

The wonderful Glengoyne distillery is always one to keep an eye. Built in 1833, it was sold by Archiball Macllelan to the Lang Brothers where it remained until 1965 when it was purchased by a predecessor organization to Edrington Group. In 2003, it was sold to blenders and bottlers Ian Macleod and they’ve rightfully made Glengoyne a worldwide brand. They’re famous for their sherried malt and it’s rare to see a butt make it out of their warehouses under anyone else’s label. That’s why we were so excited to see this pop up and when we tasted it we knew we had a real winner. The Glengoyne distillery is located in tiny town of Dumgoyne on the road to Blairquhosh, just 13 miles north of central Glasgow. It sits just beyond the imaginary line that all Scots agree is the starting point of the highlands. Despite its proximity to the lowlands, it’s very much in the classic highland style and has carved out a name for its self-providing nicely balanced sherry and rich malt character. We rarely see it bottled by independent bottlers and when we do its almost always in tired old hogsheads. This gorgeous 2nd fill butt, however, is so distinct and characterful, you might mistake it for first fill. We certainly did. A deep golden color and an explosive sherry nose filled with rich dried fruit, chocolate, and gorgeous malt. Many will second guess this one because it’s not a traditional “sherry bomb,” but one nosing is all it takes to see that this whisky is of exceptional quality.

2003 Benrinnes 19 Year Old “Old Malt Cask 25th Anniversary” K&L Exclusive Single Canasta Sherry Butt Cask Strength Single Malt Scotch Whisky (700ml) $119.99 View

This wonderful Benrinnes was distilled in 2003 and filled into a first fill Canasta Sherry Butt. Canasta is a brand of cream sherry prodced bny William & Humbert made by blending dry oloroso sherry and Pedro Ximinez. The Benrinnes Distillery was founded in 1826 by Peter Mackenzie not far from the village of Aberlour. It was famous for many decades for an usual, Mortlach style, partial triple distillation and great old gorgeous worm tub condensers. A stalwart blenders malt, it is capable of producing exceptional whiskies like this one. Finding an old heavily sherried Benrinnes is difficult in its own right, but one so carefully selected at such a wonderful price is nearly unheard of. We’re very proud and pleased to be stocking the exceptional Old Malt Cask 25th Anniversary line exclusively in the USA.

This 11 year old single malt from Teaninich Distillery has been finished in European Oak Malaga Hogsheads over 11 months.

NOSE: Fresh notes of apricot, peach, mango, and papaya are all immediately present, joined by thick beeswax and marzipan, with an undercurrent of green tea and cut grass.

PALATE: Creamy, thick and full-bodied, as Greek yoghurt, honeyed oats and white grapes combine with more savoury flavours of burnt caramel and camomile.

This 10 year old single malt from Dailuaine Distillery has been finished in Oloroso Sherry Hogsheads over 11 months – imparting rich, spicy notes.

NOSE: Rich, fruity aromas of stewed plums and rhubarb combine with dark chocolate, raisins, cardamom and cinnamon, alongside a touch of old leather.

PALATE: Soft and velvety mouthfeel, beginning with juicy plums, nectarines and melted almond butter, before umami notes of cinnamon, clove and brandy snaps emerge.

FINISH: Rich dark chocolate pudding – with a touch of chilli, cardamom and aniseed.

Freshly re-designed, The Glendronach has a new look for 2024. The much-loved sherry bomb is matured for 18 years entirely in rare Oloroso sherry casks from Andalucía in Spain, before being bottled at 46% abv.

On the nose, there is aromatic fudge and dark muscavado sugar, before waves of fruit compote and morello cherries. The palate is rich, dark and seductive, with flavours of stewed fruits, allspice, toasted walnut bread, chocolate orange and classical aged Oloroso notes leading to a delectable dried fruit-heavy finish.

Laphroaig 30 Year Old is a luxurious single malt Scotch whisky from the renowned Islay distillery, known for its bold peat smoke and maritime character. Expect flavours of tropical fruits, citrus and treacle toffee alongside smouldering peat smoke.

Crafted with passion using the time-honoured production techniques that make Laphroaig unique, this expression takes on a new layer of complexity from its extended time maturing in American oak barrels, and European oak ex-sherry hogsheads and butts.

Floral and tropical fruits gifted by 30 years of aging balances the distinctive smoky notes for a truly unforgettable tasting experience. Bottled at a fixed strength of 45.8% to be enjoyed and savoured with friends.

Aroma: Fruity and sweet initially with very distinctive top notes of zesty orange and lemon peel, vanilla custard and treacle toffee.

Taste: More delicate background notes are revealed such as bergamot, sweet pastries and fresh thyme along with white pepper on the palette.

Finish: This is finally followed by a smouldering peat smoke and sooty campfire notes.
