Some things are so surprising you wonder how they can possibly be true. And that’s exactly what our whiskymakers thought when they sampled cask #2 from our 2016 maturation trials: a robust one-year-old malt spirit re-racked in first fill Oloroso-seasoned butts and aged for a further three years. How could it develop such deliciousness in so little time?

Then, when we blended it with a parcel of first fill Bourbon barrels containing whisky from the now-closed Imperial Distillery, we really did think there were magical forces at work.

Tasting is believing though, and you’ll soon be able to experience it yourself. Magic Cask is being released gradually in regions from now until early February 2021. Please check our website and social channels for more information on availability. For those who appreciate lush fruitiness and fullness of body in their malt whiskies, it will be worth waiting for.

Jacob Grier from The Distiller writes: “New Riff has pulled off a rarity with their bourbon: a bottled-in-bond, four-year-old whiskey from a new distillery that’s reasonably priced and fully enjoyable. It deftly balances classic vanilla notes with an assertive dose of spice, hints of leather, and a mild medicinal note that lingers on the finish. It’s a welcome addition to Kentucky bourbon.”

The chance to work with Michel Couvreur on a special K&L whisky project was something that David and I had been dreaming of for years. We had heard the stories. This crazy Belgian had moved to Burgundy in the ’60s, carved out a wine cellar inside a mountain, only to fill it with Scottish single malt whisky instead of Pinot Noir. He set up camp in Beaune, ordered new-make spirit to be delivered by tanker, and drove down to Jerez himself, selecting his own sherry butts to ensure the finest quality casks for his contracted spirit. Unfortunately, Michel Couvreur passed away in 2013 from pancreatic cancer, thus ending the career of one of the industry’s most courageous pioneers. Luckily for us, however, apprentice Jean-Arnaud has carried on after studying under Michel for more than a decade. When we visited the underground cave, we were all in total awe. The tunnels of dripping stone go on forever, and the amount of whisky stored in this secret lair is jawdropping. We put our trust completely in Jean-Arnaud and are happy we did. Our peated version of the incredible sherry expression is a seamless creation that drinks like the best version of Johnnie Black ever, mixed with the most supple and soft expressions of Macallan. It’s a lush, unfiltered, creamy, caramel-laden dream of a whisky composed only of malts 12 years and older. There’s a bit of peat on the finish, but the soft sherry is the star. (NOTE: do NOT cut the hard wax seal, use a wine opener to go through it)

The history of the excellent Mars Distillery is long and complicated. The special stills that now sit at the high altitude distillery near Nagano were hand built to the specifications of the preeminent grandfather of Japanese Whisky, Masataka Taketsuru. In the 1950s, Taketsuru-san’s mentor Iwai Kiichiro, who had commissioned his famed voyage to Scotland, designed and built two pot stills for Hombo Shuzo in Yamanashi using Takesturu’s original specifications. The stills were moved to Kagoshima not long after production started and eventually moved again to Nagano in the early 80s. For another decade, Mars Whisky operated their old pot stills from their mountain home, but lackluster demand for whisky caused Hombo to cease operations completely at the plant in 1992. But renewed interest in the late ’00s for Japanese whisky compelled the owners to relaunch the brand and recommission the old pots at Mars Shinshi in Nagano. Now Mars Whisky consists of two distilleries, this one and another at the Mars headquarters on Kumamoto called Tsunuki. Production is tiny compared to their next largest competitors, Suntory and Nikka, but Mars’ single malts have become renowned for their extremely high quality. The Limited Editions are bottled at 48% and aged in primarily ex-bourbon barrels with various other cask types blended in without detail. An excellent example of what the future of craft Japanese whisky looks like and one of the more collectable and unique offerings on the market today.

The Macallan’s benchmark excellence is nowhere more evident than in the 18 year old, which is matured for a minimum of 18 years in seasoned sherry casks. Classic Macallan, with aromas and flavors of dried apricots and figs, spice, chocolate and orange zest. Made exclusively in hand-picked sherry oak casks from Jerez, Spain. As always, the Macallan is bottled with its natural color.  This is the new package but the same old Mac 18!

The latest restrictions in Edinburgh at Level 3 mean that we can’t serve any alcohol and have to close by 6PM. These operating restrictions are tough for any business to operate under and have made it unviable for both of our businesses to be open and as such we have regretfully decided that we will remain temporarily closed in both Whiski Bar on the Royal Mile and in Whiski Rooms on the Mound at the moment.

When Edinburgh is moved to Level 2 or ideally Level 1 or 0, (which we hope will be sooner rather than later), and fingers crossed, in time for the festive period before Christmas in December, we will reopen only then.

Our shop remains open on limited set days and our webshop is available 24/7 with worldwide delivery, We have a fabulous range of whiskies, Scottish spirits and tasty gins and our exclusive whisky and gin tasting sets – great gifts all available in time for Xmas, so have a look here.

Mark Dermul, Belgian whisky blogger, got hold a golden oldie from the Rare Malts Selection. This Mortlach has by now been in the bottle longer than it ever spent in the cask. Distilled in 1978 and bottled after 20 years at a whopping 62.2% ABV. You’ll have a very hard time getting hold of this bottle now – or need very deep pockets – but Mark got his hands on it via a raffle and poured it as the finale in his online masterclass last October.

The Macallan has unveiled Distil Your World: The London Edition, a unique limited edition single malt whisky providing a sensorial journey through one of the world’s greatest capital cities.

Marking the first global release in a ground-breaking series in collaboration with the Roca brothers to discover the essence of some of the world’s greatest cities, Distil Your World: The London Edition embodies London’s special charisma, and captures the people, experiences, colours and history that ultimately define the city.

United by an insatiable curiosity, quest for knowledge and dedication to mastery, The Macallan and the Roca brothers, owners of El Celler de Can Roca in Spain, twice named Best Restaurant in the World, explore different cultures and source inspiration for their own worlds of whisky-making and gastronomy.

Distil Your World: The London Edition is inspired by the long-standing partners’ journey and exploration through an uncharted London, with the purpose of distilling its soul and capturing the unique essence, aroma and flavour of the city in an exceptional single malt whisky.

In homage to its birthplace, the edition will be unveiled to the world in a highly coveted window display in Harrods’ world-famous flagship store in Knightsbridge, London on 1st November 2020. Over the years the renowned Hans Crescent window has hosted iconic displays from some of the world’s leading luxury brands and will showcase The Macallan’s remarkable whisky on a global stage.

During their adventure, The Macallan’s Whisky Maker Steven Bremner and Joan, Josep and Jordi Roca spent time with the craftspeople and creators who fuel London’s inimitable creativity and entrepreneurial drive; the committed leaders who add to its vibrancy; and the special thinkers who understand its past and anticipate its future. They truly immersed themselves by discovering emblematic buildings and going behind the scenes to uncover the unique flavours and scents that define London and unearthing its vibrant community spirit.

Ultimately, this journey led them to their own complex and sensorial map of the city and with this map as inspiration, they masterfully selected the perfect combination of six first fill European oak Oloroso seasoned casks to translate London’s values into an extraordinary single malt with unique tasting notes representing the spirit of the city.

A character led whisky with encapsulating nuances of orange caramel, curry spice and Earl Grey tea, rare to find in The Macallan single malts, this expression takes the taste buds and imagination on a journey of discovery, bringing London’s soul and unique character to life, while retaining The Macallan’s renowned signature taste. Seeking out these distinctive flavours among thousands of casks was a complex and highly skilled process, but Steven Bremner and the Roca brothers’ mastery of flavour, aroma and craftsmanship enabled them to distil the essence of London into a remarkable whisky.

Josep Roca, said: “The places we visited, the people we met, all that now takes shape in this whisky – our own distillation of the London essence. There is part of umami, the subtle touch of curry, orange, vanilla and raisin. There are some special notes that are really rare to find.”

Distil Your World: The London Edition is housed in a striking presentation box featuring a triangular engraving design to represent the map of London and red detailing inspired by the city’s red bricks. As well as the limited edition whisky, the box contains a luxurious book capturing the different inspirations behind this single malt, alongside rich London photography, which combined, form a picture of London as created by Steven Bremner and the Roca brothers. 

The Macallan Distil Your World series is the next step in the brand’s long-standing partnership with the Roca brothers. They have previously worked together on a range of ventures, including The Macallan Edition No.2 which was inspired by the brothers’ distinctive and dynamic characters and Distil Your World Scotland, a culinary journey through Scotland to explore the country’s rich cuisine tapestry which resulted in an innovative publication and documentary.

Limited to 2,000 bottles worldwide, Distil Your World: The London Edition has an RRSP of £2,630 and will be available globally from November 2020, including in Harrods, The Macallan Boutique in London Heathrow and The Macallan Estate Boutique.
