G’day Sherry Cask lovers…. Today is for you. The peat geeks get their hit every week so shouldn’t you have a turn on a regular basis?

In the bustling (I use that term lightly as Scotland is generally anything but) region of Speyside where most of the Scottish distilleries exist there is one that keeps making appearances in our calendars. Glenrothes seen by many as a fairly innocuous house style has really shined for us with these single cask independently bottled expressions.

The Malt Whisky owned by Scottish legend extraordinaire Stuart Nickerson was one of the big hits in the 2nd edition showcasing especially how amazing younger Single Malt can be

Glenrothes was built in 1878 and started producing the year after. The distillery is owned by the Edrington Group who used the bulk of it’s production for brands like Cutty Sark and Famous Grouse however in a twist that only Scotland can manage the Single Malt brand is owned by Berry Bros. & Rudd. Glenrothes has survived 4 major fires over the course of its life and as such is probably the hardiest distillery in Scotland. In cat lives does that mean it has 5 left?

Malt Whisky Company Glenrothes 8 Year Old – Bottled at the cask strength of 64.2%, no chill filtration or caramel of course. Cask number 37602 a refill Oloroso Hogshead.

Color:   A lovely reddish glow winking at the sherry influence and pretty decent for only 8 years and refill. Every cask is unique and this is a great example of that.

Nose:   Bovril (thick salty meat extract) and dark chocolate, burnt caramel mixed with a bag of asian spices, turmeric, paprika, cardamon and red chili flakes. This nose is immense and broods quietly like a trap door spider waiting patiently for a passing cricket.

Palate: Freaking delicious and initially no where near the 64.2% on the tongue that I was expecting. Going down however all the way from the back of the throat right past the core to that warm center of my being it leaves a lasting trail. Juicy and coating with an oily parafin feel that keeps pumping flavor into every taste bud. Sweet vermouth and bitters, spices continuing from the nose into rich sherried notes.

Finish:   This whisky will love you for a very long time……. a very long time. The sherry really makes itself felt on the finish finally climbing over those spicy notes and leaving a lasting rich sweetness.

Water:   Just had to try a little splash of water in this beast. Second only to the huge A.D. Rattray Glen Moray of the second edition which was 64.8% this is an anomaly to say the least and especially for a Glenrothes. More of that caramel note and sweetness rises above the meaty spice. More sherry influence here and creamy cocoa with the water taming it a great deal. I think that the raw unbridled power of this whisky at 64.2% is just amazing and today that is how my palate is screaming at me to drink it.

Wow Stuart what an amazing cask of Glenrothes. I never thought I would have something from this distillery that would be so huge. I love my job.

Buffalo Trace Distillery Completes First Warehouse X Experiment and Releases Findings  

3.5 Million Data Points Captured

FRANKFORT, Franklin County, Ky (Nov. 30, 2016) Buffalo Trace Distillery has completed phase one of its bourbon barrel aging experiment inside Warehouse X, the experimental warehouse built in 2013 that allows for specific atmospheric variables to be tested in four individual chambers, plus one open air breezeway.   The first experiment focused on natural light, keeping barrels in various stages of light for two years.

            Chamber One of Warehouse X held barrels at 50% natural light, while matching the temperature of the barrels inside the chamber to the temperature of the barrels in the outdoor breezeway.

            Barrels in Chamber Two experienced 100% darkness, while keeping the barrel temperature at a constant 72 degrees Fahrenheit.

            Chamber Three also had 100% darkness, but those barrel temperatures were kept the same temperature as the barrels in the outdoor breezeway.

            Chamber Four barrels saw 100% natural light as the temperature was kept the same as the barrels in the outdoor breezeway.

            In the two years this experiment was conducted, the barrels in the open air breezeway (which was not climate controlled) saw a fluctuation of temperatures ranging from -10 F to 105 F, likely some of the greatest temperature variance any bourbon barrels have ever experienced. The pressure inside these barrels varied from -2.5 psi to 2.5 psi.

            The team at Buffalo Trace collected and analyzed an astonishing 3.5 million data points. Among those learnings, an interesting correlation between light and psi was realized, and a long held distiller’s theory of more heat equaling higher proof was scientifically proven (at least for now).

            However, another popular theory was disproved in part – as it turns out, the amount of light does not really affect the color or the proof of the bourbon inside the barrels. So much for the theory of honey barrels! But Master Distiller Harlen Wheatley has this to add about honey barrels, “Even though we proved light doesn’t affect the color or the proof of the whiskey, that doesn’t mean that honey barrels (those next to windows in standard warehouses that are typically distiller’s favorites) don’t taste a little bit better. Perhaps because of other factors than natural light.  We did prove factors like temperature, pressure, humidity and air flow all play a role in the end result.”

Now that the light experiment is complete, Buffalo Trace is moving on to the next planned experiment, which focuses on temperature. In this experiment, the various chambers will experience different temperature variations, with Chamber One remaining the same temperature as the outdoor breezeway, plus 10 F.  Chamber Two will be 80 F, Chamber Three will be at 55 F and Chamber Four will be kept at the breezeway temperature minus 10 F.  The temperature experiment is expected to last at least two years.

A Trio of Exclusive 51 Year Old Scotch Whiskies at K&L California – Scotch Whisky News

Fifty year old Scotch whisky is an incredibly special thing. It’s the culmination of a complex flavor evolution that has proceeded slowly over five decades in wood, so finding an ample supply isn’t easy. As one might expect, fifty year old Scotch whisky is also an incredibly expensive luxury. Most of what’s available today on the general market sells for around $4000 a bottle for blends to between $10,000 and $12,000 a bottle for malts. A bottle of Glenlivet 50 year old will probably cost you $25,000 and the more prestigious names only get more expensive from there, which is partially why we’ve been so successful with our grain whisky barrel program over the last few years. We’ve been able to track down 40-50 year old Scotch whisky expressions for around $200-$300 per bottle that we feel scratch a similar itch for a much more reasonable price.

Our customers are often so excited by the pricing that we sell out of our supply in hours, if not minutes. This past September, on a rainy Glasgow morning, we visited one of our favorite warehouses and tracked down three more rarities that seemed to have fallen through the cracks: three unique barrels of Scotch whisky that had been distilled and blended as new-make whiskies back in December of 1964. Originally intended for a blended Scotch recipe, the identity of the whiskies had become lost over the years and simply sat around getting older, so it was anyone’s guess as to which distilleries we were dealing with. What was perhaps more compelling was the fact that each whisky had been married according to type: two of the barrels were blended grain whiskies and the third was a blend of purely single malts. Two of them had the fruit and oak spice we’ve tasted in previous ultra-mature grain editions, and the third had the creaminess and the texture of a classic malt. We knew we had stumbled upon something special.

While age and richness often go hand-in-hand, as more exposure to oak generally implies a darker and fuller whisky, these three barrels are something of an anomaly. As all three are refill hogshead casks (meaning the barrels had been used previously to age other whiskies), the influence of the wood has been slow and gradual. Rather than an intense and concentrated maturation, it’s as if all three whiskies have been simmering over a low flame for more than five decades. Much like a slow-cooked stew, they have also reduced their power naturally. Almost like a fine Bordeaux aging fifty years in a cellar, each has naturally dropped to 45% or lower and shed much of their original baby fat. The result is a finesse, elegance, and a haunting mellowness that can only be achieved over time. In the case of the pure malt whisky, the proof had dropped so low we weren’t sure if we could even legally bottle it, but luckily for us it clocked in at 40.1%, just a hair over the minimum. The resulting 51 year old Scotch whiskies are as soft and smooth as can be. What they are not, however, is significantly dark, rich, or incredibly complex like you might expect for something so old. They are what I consider to be fifty year old session whiskies: incredibly delightful, dangerously drinkable Scotch whiskies that go down easy and with a long, smooth finish. As a result of their unidentified origins and simple charm, we’ve been able to price them accordingly. For the first time ever, we’re offering a 50+ year old Scotch malt whisky for under $1000, along with two 51 year grains at our standard bargain price point. With the holiday season in full swing, we expect rare editions of 51 year old Scotch whisky to be an incredibly popular gift option, so it’s likely these ancient selections won’t last the weekend. We’ll be heading back to Scotland in 2017 in search of more ultra-mature whiskies, but unfortunately 51 year old selections like this don’t grow on trees. They do, however, fit nicely in a gift box under them.

This 51 year old blend is comprised of various grain whiskies, but drinks like one singular entity working in complete harmony. As grain whisky ages it becomes soft, mellow, mild, and creamy in nature, so after five decades in wood this mystery blend is as smooth as they come. There’s not much of a noticeable difference between the two casks we’re currently offering, but tasting them side by side this particular blend has a bit more wood and more of a pure grain flavor, almost like you can taste the husks in between the sweetness of the oak. There’s a flurry of spice on the finish that tingles your taste buds just before the soft wave of texture washes away. What this whisky lacks in complexity, it makes up for in pure grace.

1964 Sovereign 51 Year Old “K&L Exclusive” Single Barrel (45.8%) Cask Strength Blended Grain Scotch Whisky (750ml) ($299.99)

This 51 year old blend of grain whiskies comes in at a slightly higher proof than its sister cask and it’s the richer and rounder of the two. Whereas the other whisky is creamier, this whisky has a bit more fruit and a certain pop on the mid-palate that you wouldn’t expect after fifty-plus years in wood. There’s a hint of toasted oak on the finish and a bit of oily resin as well, which is standard for hogshead-aged whiskies of this age. After five decades, this whisky is still full of life and character. In no way is it tired, over-aged, or past its prime. It’s primary in its profile, but dangerously drinkable and most importantly showcases all of the fruit, texture, and simple pleasure that grain whisky has to offer.

1964 Sovereign 51 Year Old “K&L Exclusive” Single Barrel Cask Strength Blended Malt Scotch Whisky (750ml) ($399.99)

This 51 year malt is comprised of an unknown number of pure single malt whiskies and is so refined and reduced after five decades in wood that it’s naturally down to 40.1%. This is by no means a rich and over-oaked malt. It’s quite the opposite: light as a feather, soft as silk, and elegant as a whisper. Notes of oxidized fruit, fino sherry, burnt sugar, and oolong tea swirl faintly over a creamy layer of soft vanilla. Those expecting fifty-plus years of richness will be caught off guard by the standard amber color and classic Scotch whisky hue. This is old school Scotch from a lost era. It is not a bold and complex beast of exotic flavor, but rather a graceful echo of what was and what will no longer be; it’s a ghost.

Happy Wednesday, everyone! Now then, Jack Daniels. A Brand known around the world for their unique style of American Whisky, Tennessee Whisky. A style that only themselves and George Dickel create through the use of charcoal mellowing in large vats. Now, this whisky is simply the standard No.7 Black Label that we all know rather well, but it has been bottled at 43% ABV compared to the usual 40%. As a direct result it will allow a few more esters and interesting flavour points battle through to the drinker. 

The Master Distillers range has been put in place to showcase that only seven men have taken the helm of JD and these bottle, with their simple presentation and nostalgic flavour help to cement the fact that we owe a lot to JD as whisky fans. Enjoy!

Welcome back to the end of the first full week of whisky tasting through the 3rd edition. What a fun ride so far with some new players in the mix and a lot of different drams and wee bottles that have hit the recycling bin.

Today as promised we are getting our geek on with one of my favorite Independent Bottlers, Samaroli. Founded in 1968 by Silvano Samaroli they were at the time the only independent bottler outside of the UK buying up a bunch of casks and also laying down casks of their own. Bottling from a uniquely Italian perspective, Samaroli always look for the delicate complexity that is a feature of some of the best Scotches in the world. Just to make it 100% clear Samaroli source and bottle all their Scotch whisky in Scotland it just so happens that they get samples sent to Rome where Cindy and I get to travel to pick their whiskies every year (how did we make this up).

Allt a Bhainne (pronounced Olta-VAYne) is now owned by Pernod Ricard after being purchased from the closing Canadian Seagrams Group in 2000. Built in 1975 the bulk of its production goes into the Chivas Regal blends. Difficult to find as a Single Malt, even the odd independent bottling seems to be few and far between. The distillery started in 2010 to produce 50% of it’s output as a lightly peated whisky as Chivas needed some additional weight for some of its blends but does not own a distillery on Islay. The peated version of Allt a Bhainne is about 10ppm on the phenolic scale so still fairly light as far as peat goes.

Today’s whisky comes before that change and so should be peat free (sorry for the peat heads, you just had a dram a few days ago so chill already).

Samaroli Allt a Bhainne Single Malt 2008 – 8 Year Old aged in a lightly toasted new American Oak Hogshead and bottled at the Samaroli chosen percent of 43% without any color or chill filtration. Cask number 900853. Speyside.

Color:   Light as you would expect from Samaroli. Heck even the 30 year old Linkwood from the 2nd edition was incredibly light in color after 30 years. This one is no exception to that rule with only the tiniest touch of golden hue making it look like a lightly aged Sauv Blanc.

Nose:   Honeysuckle and tee tree bark. Alpine meadow complete with a fresh mountain stream.

Palate: OK seriously Italian dudes, wow. From the nose I was not expecting the explosion of taste on the palate. Sweet loving flavors of epic proportions. Intense floral notes of rose petals and violets underpinned with a cache of rich vanilla infused potpourri.

Finish: Fresh white chewy Nougat with almonds, rosemary and a hint of spearmint.

This is by far the very best Allt a Bhainne I have ever had (only had half a dozen or so) and only 8 years old. Got to love the Samaroli new oak aging. I wish more Scottish distilleries and independent bottlers would play with new oak and different toasting/charring levels. These are ingredients in whisky making that are largely ignored mostly due to tradition more than anything else.

BURNS NIGHT SPECIALS

If you were to say Robert Burns’ birthday is just an excuse for us to break out the good stuff, we would say ‘No, no, no, no!’…and then we might soften a little and say, ‘well…maybe’.

The truth be told, is somewhere in-between, with a respectful nod to the Bard but with the emphasis very much on the whisky aspect of the evening.

Funny that with a company name like ours…

What you can be sure of is that we will be bringing some of our favourite drams and you can be sure we only drink the good stuff…

At each venue we have a slightly different offering, in terms of both whiskies and food – from a simple six-whisky tasting with a tasty half-time haggis supper, to a full-blown Burns’ dinner experience. But whichever you choose to attend you know you can rely on our team to provide a fantastic evening of the finest whisky, food and fun!
