This whisky is outstanding. The sherry flavor is intense, but not in a candied way. It’s earthy, thick with rancio aromas; the cakebread and raisined fruit flavors are supple but dry, and the spice really takes off on the finish. If I were teaching a class about sherry-aged whisky, this would be my prime example of what’s possible. At 51.1 percent, the extra proof really helps drive the flavor through all that wood.
