News From Virginia Distillery Company – American Whiskey News

HAPPY NEW YEAR

2010 was an extraordinary year for the Virginia Distillery Co. as we completed Phase One of construction, launched the Second Edition of Eades Double Malt Whisky and met so many of you. Thanks for your support at festivals, in restaurants and sharing your thoughts on Facebook and Twitter. And of course by buying a bottle for yourself and to share with friends.

The Virginia Distillery Takes Shape as the steel tanks are in place peeking over the mezzanine level where visitors will view the operation. The second picture shows the ground floor perspective. When in final position, the tanks will be jacked up about two feet to allow for easier access for distillery crew.

The third image shows the stills moving into place with forklifts on steroids. They are now awaiting the installation of their swan necks.

Maker’s 46 Valentine’s Day Cocktail Recipe – American Whiskey News

As you know, last summer Maker’s Mark released Maker’s 46, the historic distillery’s first new bourbon in 52 years. With rich, creamy caramel and vanilla flavors that linger on the front of the palate, a touch of spice and a nutty nose, Maker’s 46 is an alluring drink to toast with over a romantic Valentine’s Day dinner. I would like to share with you an outstanding Maker’s 46 cocktail created just for Valentine’s Day by Ryan Goodspeed, head bartender at the acclaimed Miami restaurant Michael’s Genuine Food & Wine. The Maker’s Heart is a tantalizing mix of our new bourbon with pomegranate juice, blackberries, lemon juice and an aromatic orange zest sugared rim.  Light some candles, turn on a Marvin Gaye album and enjoy with the one you love! The Maker’s Heart

Recipe by Ryan Goodspeed, Head Bartender

Michael’s Genuine Food & Drink (Miami, FL)

Shake and strain up or over ice. Garnish with an orange peel. Dash of Fee Bros. Orange Bitters. Rim with navel orange-zested sugar.

In a mixing glass combine:

3 Blackberries

1 oz POM 100% Pomegranate Juice

¼ oz Lemon Juice
 
Muddle. Add ice and:

2 oz Maker’s 46

¾ oz Sweet Vermouth (preferably Carpano Antica)

1 oz Simple Syrup

For sugar rim: Take one ounce of plain white sugar and zest it with four peels of orange.

MIDLETON RELEASES NEW EXCLUSIVE WHISKEYS

Irish Distillers Pernod Ricard has launched two new rare, single cask, single pot still whiskeys from the Midleton Distillery, makers of the world’s No 1 Irish whiskey, Jameson.

Both new expressions have been released under the celebrated Midleton brand, renowned for its annual vintage release of the Midleton Very Rare blend. Created exclusively for two specific customers – the new Irish Whiskey Collection shop at the recently opened Terminal 2 at Dublin Airport, and The Celtic Whiskey Shop on Dublin’s Dawson Street – the whiskeys were personally selected from individual casks by Master Distiller Barry Crockett as outstanding expressions of the Midleton style.

Just 200 bottles of the Terminal 2 release were yielded from cask No 48709. This 19-year-old single pot still whiskey was laid down in November 1991 in a first-fill American bourbon barrel and has, in a new departure for the Midleton brand, been bottled at cask strength (53.7% ABV). The cask strength affords the whiskey connoisseur the rare opportunity to experience a Midleton whiskey as it emerges directly from the cask. The whiskey reveals a dark, fleshy fruit character in perfect balance with the underlying pot still spiciness. The impressive presentation box includes a portion of stave from the barrel in which the whiskey spent its life maturing. Each bottle is individually numbered and retails at €260.

The Celtic Whiskey Shop release was laid down in December 1996, also in a first-fill American bourbon barrel, and has been bottled at 46% ABV. This slightly lighter style offers green apples and banana on the palate. Just 270 individually numbered bottles have been made available, retailing at €225 each.

Irish Distillers Pernod Ricard CEO Alex Ricard says: “Connoisseurs of fine spirits have always eagerly awaited the annual vintage release of Midleton Very Rare, and with these new single cask, single pot still expressions, we are giving consumers more opportunities to experience the wonderful whiskey complexities of Midleton. Due to their rarity, we expect a high amount of interest.

“We have enjoyed a close working relationship with The Celtic Whiskey Shop for many years, so we are pleased to be able to offer this rare whiskey as an exclusive to them. We also wanted to mark the opening of Terminal 2 in Dublin, which is great news for both tourism and business in the city, and this wonderful new single cask expression seemed like the perfect opportunity.”

Notes:

Single Pot Still Irish Whiskey

Pot Still Irish Whiskey is a style of whiskey which is unique to Ireland in general and to the Midleton Distillery, Co. Cork, in particular and is regarded as the quintessential style of Irish whiskey.

Made from a mash of malted and unmalted barley, which is then triple distilled in traditional copper pot stills, pot still Irish whiskeys are characterised by full, complex flavours and a wonderful, creamy mouthfeel. The inclusion of unmalted barley to the mashbill distinguishes pot still whiskeys from the more widely known malt whiskeys which use only malted barley and is a uniquely Irish approach to whiskey distillation.

Single Pot Still Whiskeys (whiskeys originating from a single distillery) were once the norm in Ireland and from the late 18th century to the early 20th century, pot still Irish whiskey was the most popular style of whiskey in the world. However, this style fell out of favour and the increasingly popular blended whiskeys, which combine lighter unmalted grain whiskey with the fuller flavoured pot still whiskey, led to the demise of pot still Irish whiskey.

While pot still whiskey continues to be used as a key component in many well known Irish blend brands, by the turn of the millennium only two Single Pot Still whiskey brands had survived. – Redbreast & Green Spot. However, in recent years, this style of whiskey has received positive attention from whiskey commentators and enthusiasts alike giving rise to a groundswell of interest and in the release of new expressions.

Tasting Notes

Midleton Single Pot Still – Single Cask # 48709, exclusive to Terminal 2 Irish Whiskey Collection Shop

Nose: Full aromatic oils from the distillate are enriched with a fleshy fruity character. Hints of apricot and mango laid on leaves of blackcurrant. Touch of almond and a clover, honey sweetness follow to provide a remarkable nosing experience.
Taste: The first sip exudes a silky, mouth-coating sweetness. The succulence of the rich, fleshy fruit flavours in harmony with the pot still spice makes this a sophisticated whiskey with a deep complexity to be savoured.
Finish: The full succulence of the first sip remains in perfect proportion long into the finish. Irish pot still whiskey at its most elegant.

Midleton Single Pot Still – Single Cask # 71578, exclusive to Celtic Whiskey Shop

Nose: Initially soft, giving way to the characteristic pot still spicy notes of freshly milled peppers and a shred of pipe tobacco combined with the aromatics of garden mint, mandarins and green banana. From the cask come the hints of vanilla and toasted oak.
Taste: Barley sugar sweet reveals deeper spice. From a tongue coating of liquorice and cinnamon, through to a drying barley cereal note, to a crisp fruity fullness of apples and the unripe bananas.
Finish: All the flavours linger, then as they fade, the cask takes over with a succulent enhancement of vanilla and charred oak.

January 25th is the birth of Scotland’s, if not the world’s most famous poet, Robbie Burns. Burns was born in Alloway, Ayrshire in 1759 and died at the tender age of 37 in 1796. He was to cram much into his short-life, rising from poor tenant farmer to national celebrity and left behind a rich legacy of work. More than ten thousand people attended his funeral but Burns’ popularity had reached an entirely new level in the years since his passing.

The story behind the bottle…

On the evening of January 7th, after weeks of heavy snow and low temperatures, four feet of compacted snow covered the Glenfiddich distillery roofs, which housed hundreds of casks of fine aged whisky.

A number of warehouse roofs collapsed under the weight, leaving the oak casks exposed to the winter sky. In temperatures of -19°C, distillery staff worked to clear the snow.

Snow Phoenix was created by marrying together whiskies from the damaged warehouses, natural strength and non-chill filtered casks of different ages and finishes, including American oak and Oloroso sherry.

Given the name Snow Phoenix, this cask strength limited edition release will only be bottled in 2010.
