We wanted to let you know that this month the Oak Barrel is hosting an exclusive whisky and cheese matching night with Sullivans Cove. The uniquely cured cheeses from Sullivans Cove compliment the whiskies that are regarded  as one of  Australia’s finest exports. Sullivans Cove whisky has been rated 90+ in Jim Murray’s annual World Whisky Bible and produce over 250 barrels of whisky a year. 

Tasmanian Providore Single Malt Whisky Cheddar is a “new to the world” product innovation. Firstly the Cheddar is matured for a minimum of 9 months. It is a deep yellow colour with a firm closed texture. The cheese is handmade – quite uncommon in this day and age of mass produced cheddars. Once mature it is infused with 8 Yr old Tasmanian Sullivans Cove Single Malt Whisky. The Single Malt Whisky flavour that develops complexity with further ageing. As the cheese matures the result is a deep, full flavour that lingers.

The nose sweet and spicy and actually has the familiar aromas one normally associates with scotch whisky. Naturally it noses as quite young however it is actually pleasant, lively and vibrant (this is a pleasant surprise). There is not however any real hints of malt. The taste is smooth, sweet and spicy (just like the aroma) along with some vague hints of tobacco and leather and then some really nice sweetness one often associates with grain (as opposed to malt) whisky. This is actually nice (but not great). The finish is sweet, very ‘grainy’ along with some spice and some mild fruit. The finish is also quite long and reflects the previously commented characteristics. The finish actually improves with time and doesn’t degrade over time which is a surprise…..

This is actually a pleasant dram and drinkable and by far the most pleasant of the three whiskies reviewed this week. Quite a surprise for 36 months…

Worldwide Travel

Currently Euan and Mark are both out of the country on business trips, Euan is in the US till the end of this week and Mark is in Amsterdam.  So far this year Mark has already been to Paris and has a trips planned to Tokyo, Denmark and Italy in the coming weeks. Lin plans to travel to Shanghai and Hong Kong at the end of February.

Tasting Notes
Colour: Tawny

Taste: Mild, juicy fruits, slight touch of oak and a soft coastal note. Raisins and cinnamon, exceptionally smooth
Finish: Vanilla, some kiwi fruits, freshly cut grass and a faint hint of aniseed
Comment: The best Bull yet! An exceptionally good whisky

We have had a number of new bottlings so far this month which I’m sure will be of interest to you all, a selection of these bottlings are listed below with some tasting notes to wet your appetite.

Rarest of the Rare Port Ellen 1983 26yo 54.6% Cask 674
Colour: Polished Mahogany
Nose: Sweet, dry smoke, smoked cheese, sandalwood.  Black cherries, a little creamy – antiseptic cream and pepper
Taste: Initial hit of ash, then big blood orange notes. Marzipan, dry smokiness. Cocoa, raisins, figs and a soft creaminess
Finish: Long lingering dry smokiness, giving way to big rich red fruits, white pepper and wet ash
Comment:  Like eating fruit in a Sauna! An exceptional whisky!

Rare Auld Royal Lochnagar 1986 54.5% Cask 949
Colour: Pale Gold
Nose: slight smoke, aromatic spices, mild cappuccino, cedar wood
Palate: Citrus, slight smoke, touch of melon, pear, grassy
Finish: dry, citrus, lightly spiced oak, medium length

Rare Auld Glenesk, Sherry Finish 1983 56.4% Cask 1288
Colour: Amber
Nose: Sherry spice, sandalwood, orange zest, caramelised brown sugar, burnt oak
Palate:  Predominantly sherry with dark chocolate, dark fruits, cherries, slightly leathery
Finish: Smokey, burnt wood
