The Glenallachie Distillery

The Glenallachie Distillery: One of a few distilleries built to produce blending whisky, Glenallachie (pronounced ‘Glen-al-ACK-ee’) was founded by Mackinlay, McPherson and Co to provide malt whisky for Mackinlay blends. The distillery stands in the heart of Speyside, at the foot of Ben Rinnes and in relatively close proximity to Aberlour. Both whisky distilleries draw their water from springs in the mountains.

All of the three million litre annual production is intended for blending and it is rare to find single malt whisky from the Glenallachie distillery. All of the spirit is matured onsite in ex-bourbon casks. The distillery boasts fourteen onsite warehouses. The building was planned as early as 1940 by the famed architect William Delmé-Evans, designer of Isle of Jura, though Glenallachie was not founded until 1967.

Invergordon Distillers acquired Charles Mackinlay Ltd from Scottish and Newcastle Breweries Ltd. The deal included the Isle of Jura and Glenallachie distilleries. Following a brief closure in 1987, Campbell Distillers, a subsidiary of Pernod Ricard, acquired the distillery in 1989. Glenallachie was later transferred to Chivas Brothers hands. There is but one official release and just a handful of independent bottlings.

YAMAZAKI ® 1984 NAMED  “SUPREME CHAMPION SPIRIT” AS SUNTORY LIQUORS IS NAMED “DISTILLER OF THE YEAR” AT THE 2010 INTERNATIONAL SPIRITS CHALLENGE

Suntory First Japanese Distilling Company to Receive Prestigious Honors

New York, NY… Suntory Liquors became the first Japanese distilling company to win the “Supreme Champion Spirit” title at the 15th International Spirits Challenge (ISC) 2010 with its Suntory Single Malt Whisky YAMAZAKI® 1984.  At the same time, the company achieved a second remarkable “first” for a Japanese company, as Suntory Liquors was named “Distiller of the Year.”  The awards ceremony took place on Monday, November 8th in London, UK.

After YAMAZAKI 1984 was announced as a top “Trophy” winner within the “Whiskies” category, the extraordinary single malt went on to become the Supreme Champion Spirit, an accolade given to a single product among all category “Trophy” winners.   As the finest of some 1,000 brands entered into the ISC this year, YAMAZAKI 1984 was cited for its “…depth of flavor and maturation, together with the remarkable syrupiness of its texture.  It is absolutely outstanding in every respect.”

The additional, singular distinction of becoming the Distiller of the Year, also bestowed on Suntory Liquors by the ISC, is a prestigious honor that is given to the distiller that has endeavored to produce a rich array of high-quality products.  This is not the first such highly esteemed and significant distinction received by Suntory Liquors this year; it comes on the heels of the Whisky Distiller of the Year award that was presented in February at Icons of Whisky 2010, itself another first for the Japan liquor industry.

The International Spirits Challenge

The ISC is a liquor competition held every year in the UK, the very home of Scotch whisky. Products are divided into categories such as “Whiskies” or “Liqueur” and each category has its own Gold, Silver, Bronze and Commended Medal winners, while the Trophy is the top honor awarded to only the most outstanding products from among the Gold Medal winners of each category. The “Supreme Champion Spirit” award is then given to one chosen product from among all the Trophy winners from each category, making it the apotheosis of accolades.

In addition to this, the “Distiller of the Year” award is granted to the one distiller which has endeavored to produce a rich array of high-quality products.

The prizewinners of the “Whiskies” category are determined by unanimous votes by the ten judges who include blenders from whisky distilleries the world over and the prize giving draws the attention of the worldwide liquor industry each year.

About YAMAZAKI  1984

Handcrafted at the oldest distillery in Japan, YAMAZAKI 1984 is made from the purest natural ingredients distilled through the art of Japanese craftsmanship in perfect harmony with nature.  Indeed, YAMAZAKI is made with the same pure water used in Japan’s most esteemed tea ceremonies.  With a rich, sophisticated character all its own, YAMAZAKI’s secret lies in the harmonious marriage of single malt matured in three different oak casks – American, Spanish and Japanese.

As the supply of casks became limited in the 1940’s, Suntory turned to making its own casks from Japanese mizunara oak.   The coopers discovered the porous wood was prone to leaks; blenders found that the mizunara imparted overbearing aromas and taste to the malts stored within.  But their dismay turned to delight when they discovered, after the long period of aging, the mizunara oak casks added a distinctive touch to the whisky, endowing it with sweet fragrance reminiscent of incense.   The suggested retail price of YAMAZAKI 1984 Single Malt Whisky is $599.95.

Japan’s First Whisky

The history of Japanese whisky began in 1923 when Shinjiro Torii, the founder of Suntory and the father of Japanese whisky, built Japan’s first malt whisky distillery in the Vale of YAMAZAKI.  Located on the outskirts of Kyoto, the ancient capital of Japan, this proved to be the ideal environment for whisky production.

A good whisky is born of pure water and a climate where cool temperatures and high humidity create an ideal maturation environment.  The Vale of YAMAZAKI is famed for its pure waters, prized by the famous Japanese tea ceremony master Senno Rikyu since ancient times.  The YAMAZAKI distillery, where whisky was crafted from pure malt using copper pot stills, was the first of its kind outside of Scotland.

Today, YAMAZAKI is the most-popular single malt whisky in Japan and is enjoyed by whisky connoisseurs the world over.  YAMAZAKI was ranked the world’s eighth bestselling single malt whisky in terms of cases sold in 2009 and is currently exported to around 25 countries, including the United States.

Enjoying Suntory YAMAZAKI

The complex aromas and flavors of YAMAZAKI can be enjoyed in a variety of ways.  The ideal method to appraise its rich, fruity aroma is to enjoy YAMAZAKI straight,

either as an aperitif or after-dinner drink.  Tasting YAMAZAKI

on the rocks is an excellent way to appreciate its smoothness and flavor.  For more information, please visit www.yamazakiusa.com.

THE SCOTCH MALT WHISKY SOCIETY TRADES IN WELSH GOLD – Welsh Whisky News

THE SCOTCH MALT WHISKY SOCIETY TRADES IN WELSH GOLD

The Scotch Malt Whisky Society is known the world over for sourcing and bottling only the finest single cask, single malt Scotch whiskies for its members to buy.  It takes an extraordinary whisky to make it past The Scotch Malt Whisky Society’s Tasting Panel and this month it has secured a brace of exceptional casks from the Penderyn distillery in Wales. The Society is renowned for getting its hands on the rarest of whiskies and this is the first time anyone other than the Welsh Whisky Company has bottled Penderyn.

The Society was formed in the 1970s when a group of friends discovered the joys of drawing their whisky straight from the cask, straight from the distillery. The full flavour was retained and each cask was unique. No two casks are identical even if they’re filled with the same spirit and laid down for the same amount of time and it’s this diversity the Society celebrates.

Today that spirit of adventure and curiosity continues on in each of the casks The Tasting Panel approves and each of the bottles made available to members. Occasionally, only very occasionally, one from outside of Scotland makes it. There have been a few from Ireland and Japan to date and very well received they’ve been too. But Wales? Who’d have thought?

The Scotch Malt Whisky Society has had its eye on Penderyn for some time. A scout was dispatched earlier this year who reported back in wildly enthusiastic fashion about the qualities of a single cask port finish 7 year old he was allowed to try when the public weren’t looking.

Two casks were identified by The Tasting Panel; a 6 year old first fill port cask and a 7 year old first fill Madeira cask with only 233 of the former and 227 bottles of the latter available. Although relatively young, each is beautifully well-balanced and mature (for their age).

The Society releases new single casks every month and the Penderyn bottles are part of its biggest ever release with a total of 41 single casks being offered in November. It is anticipated that the Welsh wonders will be of particular interest so members will be restricted to one bottle of each (priced at £49.50) when they go on sale on November 19.

The sole distillery in Wales, The Welsh Whisky Company is one of the smallest (legal) distilleries in the world and only produces a hogshead of its Welsh gold each day. Established in 2000, Penderyn uses a unique design of still for its malted barley spirit. The still was developed by weapons inspector Dr David Faraday (a descendant of science legend Sir Michael Faraday).

Kai Ivalo from The Scotch Malt Whisky Society said: “Our Tasting Panel searches far and wide for the best whiskies for our members and we’ve been watching developments at Penderyn with interest. Our members are a smart lot and many had guessed that we were going to be bottling a single cask from the Penderyn distillery so we’re and pleased to be able to finally get the news out there. No-one other than the Welsh Whisky Company have bottled Penderyn which is the kind of coup that we like at The Scotch Malt Whisky Society. These are two great single cask examples and they’ll definitely delight malt whisky enthusiasts.”

Stephen Davies, managing director of the Penderyn Distillery said, “To be recognised by The Scotch Malt Whisky Society is an immensely proud moment for all of us at Penderyn.  Not only is this an appreciation of the whisky, but also of our innovative distillation technology.  When we embarked on reviving the tradition of Welsh whisky, our objective was to ensure that we created a spirit that we and Wales as a nation could truly be proud of.  In particular, the efforts of Master Distiller Dr Jim Swan and Gillian Macdonald have to be commended for creating a world class whisky that has earned such critical acclaim.  And with less made in a year than many distilleries produce in day, Penderyn truly is Welsh gold!”

PENDERYN TASTING NOTES:

128.1 A string quartet of flavours
The evocative nose delivered blood orange, strawberry, sangria, cola cubes, Calpol syrup and Covonia cough medicine; ‘pink’ Chartreuse, ‘After Shock’ and wine gums. Slightly different aromas appeared with water – furniture polish, shoe polish, bubble gum and freshly valeted cars. The unreduced palate had layers of flavours in harmony, like a string quartet – scented wood and spice in the middle, strawberry syrup, redcurrant and cranberry on top, with bass notes of smoke, embers and struck matches. The texture was deliciously thick and the finish long. The reduced palate had lip-smacking red fruits and Haribo sweets.

Colour – Deep Zinfandel blush

128.2 Caribbean breeze
The relaxing nose brought cherry lips, rhubarb tart and redcurrants; ginger cake and Pledge furniture polish.   The unreduced palate was multilayered and mouth-filling with fruitcake, marzipan and icing sugar, fresh root ginger and redcurrants.  Water brought out softer antique-like aromas with leather, beeswax and resin; Battenburg and sponge cake.   The reduced palate became “oh so creamy” with almond and cherry cake, palm trees and green ginger – the sweetest parts of the oak. The finish was surprisingly dry.

Very rare 1975 St Magdalene (LCBO # 203455)

This elusive whisky is now available at a limited number of LCBO stores in Ontario.  This is a 1975 St Magdalene single malt whisky and might just be the perfect Christmas Gift for that special someone.

History:

Founded in 1790 on the outskirts of Edinburgh this distillery used water from Loch Lomond.  The lowland distillery took its name from St Magdalene’s Cross, once a site of a mediaeval fair and leper colony. The Union Canal ran behind the distillery and not only supplied the cooling water, but in the distillery’s heyday it was also the main method of supply, with barley and other materials brought in by barge to its jetty. The distillery was closed down in 1983, and sold for property development.

Tasting notes:

WITHOUT WATER

Nose: Sherry notes with strong fruit aromas – melons, red apples. Dry hessian note with a herbal aroma.

Palate: Sweet, with wine, oak and hop flavours. Some heather blossom (honey) elements are also present.

WITH WATER

Nose: Floral with polished oak influences initially. Subtle malt, dark chocolate and nuts aromas follow.

Palate: A little smokiness initially followed by sweet, Sherry elements with floral flavours also present.

Body: Mellow.

Finish: Light with a Sherry edge.

Cask Type(s): Refill Sherry hogsheads.

Whisky Style: A smooth, sweet whisky with the Lowland style evident.

This unique whisky is available in EXTREMELY LIMITED quantities, and once sold will probably never come back to Canada.  You can order directly from any LCBO store quoting LCBO# 203455 or pick up at one of these four locations.

Neat (Bruichladdich) Whisky Solution Powers Island Distillery – Scotch Whisky News

phd_master_aqua_web

Neat Whisky Solution Powers Island Distillery

A Hebridean distiller has installed a pioneering new system to get volts from malts to power its distillery exclusively from recycled whisky waste.

On the remote Scottish island of Islay, the privately owned Bruichladdich distillery has installed a ground-breaking new scheme based on an old concept to become self sufficient in power.

Residual organic material left in ‘pot ale’ (the warm, watery post-distillation waste) is converted in to biogas by the action of microbes living in the absence of air – a process known for some time as anaerobic digestion.

The principal was first identified by scientist Robert Boyle around 1670, who noticed flammable bubbles emerging from the floor of a muddy pond.  Although the first digester was built in 1859, it never took off being too vast, expensive, inefficient and reliant on constant scientific monitoring.

Now an economically viable, compact version has been designed by Dr Paul Ditchfield of Biowayste Systems. This modern, hi-tech version uses a bespoke culture of microbes, and is scaled specifically to suit Bruichladdich’s operations.

Modern technology has improved the efficiency and replaced the day-to-day technical expertise required allowing small companies to benefit from this simple, green science for the first time.

When Bruichladdich was built by the young Harvey brothers as a state-of-the-art distillery in 1881, Victorian pragmatism ensured many new efficiency ideas were incorporated in to the design,  many were subsequently adopted industry-wide.

From the Victorians up until today there was nothing that could be done with the distillery’s watery waste which was merely piped out to sea. Now, thanks to a bunch of bilious microbes, it is recycled to produce electricity.

Managing director Mark Reynier said: “We wanted a ‘beautifully simple’ solution in keeping with the pioneering Harvey brothers – not just a conscience-salving piece of paper telling us how good we have been; we wanted waste out, power in. Now we can power the whole distillery from our whisky waste.  Drink Bruichladdich and save the planet! How neat is that?”

The biogas is created by 12 tons of microbes feeding off the pot ale in two reactors. Once commissioned, the gas is fed to a generator to create electricity to power the distillery and its 10 acre site, including bottling hall, computers, offices, warehouses and vehicles.

It is anticipated that energy savings will produce a payback of 2 years on the almost £⅓m cost. Bruichladdich recently launched the only Islay organic whisky.

Notes:

The first digester was built in 1859, but the level of continual technical expertise required, the enormous scale, high capital costs, and low level of efficiency – severely limited its commercial viability, meaning it could be used only on very large industrial projects in a part only solution. Roseile, Diageo’s £40m mega-distillery recently installed a type of digester.

The Biowayste compact version brings the science in to the reaches of small businesses such as food manufacturers and farmers.

Carbon savings: 225 tons per year.
