The evening is relaxed, with an introduction to Scotch from Marcus VonAlbrecht, Vancouver Branch, The Companions of the Quaich. And a great introduction to Chocolate Pairing from XOXOLAT Chocolates.
The pairings are brilliant – matching Scotch and Chocolate is an amazing treat. Listening to Steve Quinn, CBC Radio, when he tasted theses scotches, it made you want to tune in and have a beverage with him. One could hear Steve enjoying the flavours as Marcus poured some rare treats.
You want to match a chocolate that goes with the whiskey. When you’re drinking a blended Scotch it may not make that much of a difference. But single malts have very particular flavour profiles. They can be herbal, grassy, fruity or smoky. Single origin chocolates can be the same way. As with wine (and coffee), they take their character from the terroir and microclimate. Just as you pair your wine to the weight, sauces and seasonings of your dish, for the most pleasurable experience, you should do the same with your chocolate.
Laphroaig 10 year old – If you want a real Islay scotch this is the one. Embodies all the true characteristics of superior island malt with a smoothness and quality that is unrivalled amongst its neighbours. Chocolate Pairing will pick up the sea salt and thick peat. The finish for both scotch and chocolate will be very long, with waves of smoke and smoothness like no other.
Finlaggan Old Reserve – this is a natural to pair with chocolate – full and pungent with an earthy smokiness and fresh hints of ozone. A Taste that is dry, smoky and fresh, clean and big bodied, with wisps of chocolate. The scotch has a surprisingly soft and tempered, slightly smoky and sweet finish – complimented with all types of chocolate and chocolate infused foods.
Tantallan 10yr old – hints of fresh figs, clove and moist barley. A perfect partner for an amazing chocolate, dessert, or finish to a meal. This scotch pairs perfectly with all things chocolate and more. The sheer brilliance of this whisky is its simplicity.
Finlaggan Cask – Dry, smokiness is replaced with a heated leathery earthiness and a saltiness of the sea that fills your entire mouth. The Chocolate Pairing with this scotch will surpise and amuse. Expect to try the chocolate first, then the whiskey, then reverse – unique flavours abound
Caol Ila 29 year old scotch – $325 a bottle! Yes, this scotch is absolutely stunning. Worth every penny. The complexities and taste profile in this bottle is one that will not be easily forgotten or reproduced anytime soon. The chocolate pairing is equal to this fabulous bottle of scotch
