IRISH DISTILLERS UNVEILS THE LATEST CHAPTER IN THE MIDLETON VERY RARE DAIR GHAELACH STORY 

Knockrath Forest Single Pot Still Irish Whiskey

Irish Distillers, makers of some of the world’s most enjoyed whiskeys, has introduced Midleton Very Rare Dair Ghaelach Knockrath Forest, the third release in the Dair Ghaelach collection. A remarkable addition to the Midleton Very Rare story, the new expression has matured in barrels made from virgin Irish oak grown in Knockrath Forest, County Wicklow, reinforcing Midleton’s provenance and its standing as a true taste of Ireland.

The story of Midleton Very Rare Dair Ghaelach, which translates as ‘Irish oak’, began over a decade ago when the Midleton Masters, ever keen to innovate and create unique and exemplary whiskeys, decided to explore the possibility of maturing Irish whiskey in native oak. Midleton’s talented team, led by Master of Maturation Kevin O’Gorman, Master Cooper Ger Buckley and Master Blender Billy Leighton, set out to source sustainable Irish oak from estates throughout Ireland to produce a series of whiskeys, each with their own individual history and taste profile, that could be traced back to the specific tree from which the oak cask was made.

For the third edition, the Midleton team selected the Knockrath estate in the ancient Vale of Clara where the oak has grown for more than 150 years amidst the landscape of mountains and lakes. Known for its cool summers and heavy rainfall, the climate of County Wicklow impacts the density and porosity of the oak. This, in addition to a lighter toasting of the wood and unique combination of distillates, results in subtle flavour differences between Dair Ghaelach Knockrath Forest and its predecessors, Dair Ghaelach Grinsell’s Wood[1] and Dair Ghaelach Bluebell Forest.[2]

Since the 16th century the Brabazon family has watched over Knockrath Forest and continues to sustainably manage the trees from one season to the next. Under their guardianship, the Knockrath estate became one of the first sites where the iconic Great Spotted Woodpecker – engraved into the whiskey’s stunning wooden case – set up residence on its return to Ireland following years in exile. Today, after ten years of silence, the woodpecker’s drumming can be heard throughout the forests of Wicklow and beyond thanks to the Brabazon family and the expanding oak forests.

Once felled, the carefully harvested trees were shipped to the Maderbar sawmills in Baralla, north-west Spain, where they were traditionally quarter sawn into staves for barrel manufacturing and transferred to the Antonio Páez Lobato cooperage in Jerez.  After a 15-month drying process, the staves were worked into barrels and given a light toasting before returning to Ireland. Back at Midleton Distillery, the virgin oak casks were filled with Irish pot still whiskeys ranging in age from 13-26 years.

Following two further years maturing in the Irish oak, O’Gorman and Leighton diligently checked the barrels each month until finally the pair felt the whiskey had the perfect balance of flavour, aroma and wood contribution ready for bottling.

Midleton Very Rare Dair Ghaelach Knockrath Forest is bottled at cask strength ranging from 56.1% – 56.6% ABV, giving drinkers the opportunity to taste Irish whiskey almost directly from Irish oak. The native wood contributes notes of caramel, fruits, vanilla and chocolate for a smooth and robust whiskey.

Kevin O’Gorman explains: “Midleton Very Rare Dair Ghaelach Knockrath Forest is an amazing 150-year journey from Knockrath Forest to bottle and one we’re proud to be part of. Traceability and sustainability are at the heart of this whiskey and, until we started this project, Irish oak had not been used to mature whiskey for well over 100 years. Today, thanks to sustainable practices, we can harvest small volumes and trace each bottle right back to the very oak tree that helped to create it. This has, in turn, fostered an awareness and appreciation among whiskey lovers that there is even a subtle difference between trees which contributes to a whiskey’s unique flavour.”

Dair Ghaelach Knockrath Forest is available from January 2020 in Ireland, UK, France, US and China at the recommended selling price of €310 per 70cl.

Nose: Pot still spices are accentuated by the Irish oak contribution, adding waves of toasted wood with hints of vanilla and roasted coffee, layered over fresh fruit which evolves from orchard fruits to tropical notes.

Taste: Classic pot still spices give a luscious texture to the fore, while the influence of the Irish oak adds a medley of sweet notes including chocolate and honeycomb.

Finish: Remarkably long finish with fruit and spices fading to allow the Irish oak to have the final say.

“An injustice against one is an injustice against all.”

On the morning of January 18, 2018 three liquor inspectors from the BC Liquor Control and Licencing Branch (BCLB) attended Fets in a rented U-Haul van, filled with empty boxes. They entered the premises, requested the attendance of the Vancouver Police Department, and after briefly interviewing one of the owners of the establishment, they seized (over a period of several hours) 242 bottles of Scotch whisky, all of one brand; The Scotch Malt Whisky Society. They did so without a search warrant, and they did not advise the owner that Fets was being investigated for an offence, for which she could be jailed if convicted.

Simultaneous raids were conducted in Victoria at Little Jumbo and the Union Club as well as The Grand Hotel in Nanaimo. All 4 establishments were Scotch Malt Whisky Society Partner Bars and the only whisky taken at each location were the SMWS bottles.

Believing the actions of the BCLB to be improper, Fets refused to accept the penalty imposed by the BCLB and requested a hearing. Fets requested documents related to the investigation and this was refused by the BCLB; a subsequent Freedom of Information request was heavily redacted and arrived after the submissions deadline. Finally, following the hearing, on June 6, 2019 a delegate of the General Manager of the BCLB (in other words, the same organization that laid the charges makes the decision on whether their actions were lawful) issued a 64 page written decision confirming their view that the actions of the liquor inspectors were lawful, and confirming the monetary penalty against Fets in the amount of $3,000. Fets applied, as required under the Act, to have the decision reconsidered. The BCLB upheld the original decision and therefore Fets has appealed the decision to the BC Supreme Court under a judicial review application.

The General Manager’s decision, if not varied or rescinded, will set a dangerous precedent for all liquor licensees in British Columbia. In summary, the decision confirms as acceptable the following practices of the Branch and liquor inspectors:

When a licensee is faced with enforcement action, the Branch only needs to disclose to it the documents that help it prove the contravention. It is not required to produce any other
documents from its files that may assist the licensee in avoiding the contravention;

The General Manager’s delegate is not required to maintain an “open mind” during an enforcement hearing. It is acceptable for he or she to make up their mind at the very outset of the hearing, before evidence and submissions are made;

Liquor inspectors who observe liquor that in their opinion is kept contrary to the Act, can return at any time without a search warrant to seize it;

The Charter of Rights and Freedoms, which guarantees individuals the right to be free from unreasonable (warrantless) searches and the right to be informed of the potential for jail time, does not apply to the enforcement of British Columbia’s liquor licensing regime; and

Liquor inspectors can rely on the “mandatory cooperation” powers contained in s.42 of the Act to conscript evidence from licensees that may be used in a prosecution of an offence for which imprisonment is a potential penalty.

All licensees should take notice of this dangerous and potentially precedent setting decision. Although currently it is only Fets Whisky Kitchen dealing with the fallout, soon it will be other bars, restaurants and LRS’s who may face warrantless searches of their premises, and procedurally unfair hearings. British Columbians deserve better.

To date the costs fighting this exceed $40,000 and Fets is committed to an additional $30,000 to take this to the Supreme Court of British Columbia. These costs do not include the value of the Scotch Malt Whisky Society whiskies that were seized, those were valued, at the time of seizure, at more than $40,000, and all are irreplaceable. Fets is cautiously optimistic that the courts will side in Fets’ favour, but the government, with unlimited resources, can appeal the ruling. All funds raised are going towards this fight and any additional or excess funds will be put towards our lobbying efforts to see the implementation of the recommendations Mark Hicken laid out in the 2018 Liquor review. We will pledge any other remaining funds to the BC Hospitality Foundation.

Caperdonich Distillery was founded in 1897 and its two stills were fired up a year later. Established beside the North of Scotland Railway in the north west corner of Rothes. But Caperdonich opened just as demand for whisky crashed and it closed in 1902 it remained mothballed until 1965 but closed permanently in 2002. And was demolished in 2011. Caperdonich whisky went primarily into blended scotch but a small volume continues to be released by independent bottlers, featuring in the Old & Rare single cask releases of Hunter Laing. A lost Scottish Speyside malt whisky distillery.

Flaviar teams up with STXfilms’  The Gentlemen to create a special edition of Deer, Bear & Moose in celebration of the film’s release

When word gets out that he’s looking to cash out of the business forever it triggers plots, schemes, bribery and blackmail in an attempt to steal his domain out from under him (featuring an all-star ensemble cast including Charlie Hunnam, Henry Golding, Michelle Dockery, Jeremy Strong, Eddie Marsan, Colin Farrell, and Hugh Grant).

With plenty of shots in the film featuring whisky, it made perfect sense to create an ode to the film in whisky form.
