Better safe than sorry
Here at Old Pulteney, the spirit safe is something that always stands out when we are showing people around. Gleaming like a ship’s bell, with crystal-clear spirit pouring into it, perhaps it isn’t surprising.

As well as looking impressive, the spirit safe does an essential job. It ensures we get exactly the right cut of spirit, and that’s a major part of making a great whisky.

However, the time has come for our spirit safe to be replaced. If you look closely, you can see that years of constant use have left their mark. In fact, I sometimes joke that the metal is wearing so thin, we’ll soon be afraid to polish it!

Because we never take chances with Old Pulteney, we decided on a replacement that’s tried and tested. That’s why, instead of getting a new one, we’ll soon be taking delivery of a spirit safe that has only had one careful owner. Look out for more about this in the New Year.

Life begins at forty
I have been delighted at the way our oldest-ever bottling has been received, since it was launched in October. Matured in ex-sherry and ex-bourbon casks, and with an unmistakable Pulteney character, our 40 Year Old has a very long finish indeed.

Glann ar Mor Distillery appoints importer for Singapore and Taiwan

Glann ar Mor, the artisan distillery from Brittany is delighted to announce it has appointed The Auld Alliance in Singapore for the distribution of its whiskies in Singapore and in Taiwan.

Jean Donnay who owns Glann ar Mor, the “No Compromise” distillery which he fully designed, said “We are very happy to have our whiskies in such good hands for their new life in South East Asia”.

Beside being the importer for both markets, The Auld Alliance is also a wonderful bar offering the largest selection of whiskies in South East Asia with over 1000 references.

Glann ar Mor is a craft distillery producing its whiskies by the seaside on the Northern coast of Brittany in pure Celtic tradition, doing it the old fashion way with live flame heating for its two pot stills, worm tub condensers, wooden washbacks and ultra slow distillation.

The first two pallets of the un-peated Glann ar Mor and of the peated Kornog are now being flown to their remote destinations. Both single malts are already well established within the whisky community, having benefited from multiple awards and tasting reviews, including in particular a “Liquid Gold Award” for Kornog in the three latest editions of Jim Murray’s “Whisky Bible”.

We’ve all been solicited to give to Charities. Charitable organisations rely on fund raising events such as Galas, Dinners, Baked Goods Sales, Silent Auctions and etcetera. On Saturday evening, February 23rd 2013, between 7 and 10 pm, the Museum will be transformed into a whisky exhibition hall and over twenty Vendors will be dispersed amidst the museum’s displays. With your compli-mentary crystal glass, especially designed for whisking tasting and imported from Scotland, stroll through the Museum and discover which eau de vie tickles your fancies: Scotch, Irish, Canadian or American whiskies.

The Spirits of Kingston Whisky Festival is proud to offer you, with your general admission, an opportunity to enjoy Light Finger Food, which will consist of a great selection of bite-sized dishes prepared by Cordon Bleu Chef, Justin Hazlett. Experience Whisky-Food pairing, where the flavours of the whiskies compliment the taste of the food and vice versa!

It is the perfect occasion for novices, and enthusiasts alike, to experiment and avoid having to purchase a bottle of undesirable whisky that will forever sit on a dusty book shelf. Connoisseurs will be able to appreciate the premium whiskies served in Master Classes and the presence of one of the only two Canadian coopers.

In the end, I very much look forward to share with the 300 ticket holders to The Spirits of Kingston Whisky Festival the passion and enthusiasm that I have towards discovering, learning, sampling and enjoying whiskies and whisky making. A passion which started several years ago, after my wife told me to get a hobby to lessen the stressors of a busy life. When I mentioned that I could join a Scotch Whisky Club, I was pleasantly surprised by her response that it sounded like a great idea. Little did I know then that my dabbling in Whisky would take me to so many places throughout Canada and introduce me to so many interesting people. As the saying goes “People who love Whiskies, love people who love Whiskies” and with good reason. There are just as many interesting and complex Whiskies as there are people. Each with their own unique blend of characteristics which when paired with a complimentary joie de vivre makes for a great friendship.

1975 DALLAS DHU Very rare (LCBO # 2081603)

This is a very rare 1975 Dallas Dhu bottled at 40% from a distillery that went silent in 1983, this particular barrel was bottled 2007 giving it a distillation period of 32 years and is on the shelves at $409.95. Certainly one that could be squirreled away by a collector or to be shared at a special event e.g. this Christmas.

Dallas Dhu Distillery was built 6 miles from Dallas by Wright & Greig Ltd, a Glasgow based blending company. Construction was completed in April 1899. The distillery changed hands twice before it was taken over by the DCL in 1929. In April 1939 the distillery went on fire causing £7000 worth of damage.

During the second World War the distillery remained closed. In 1950 the distillery was connected to the national grid. Up until 1971 the wash still rummager was powered by a water wheel. Dallas Dhu stopped production in 1983. In 1988 it was bought by Scotland’s Historic Buildings and Monuments Directorate, it is now a museum and part of Speyside’s Whisky trail.

The old distillery buildings of Dallas Dhu are now used to house a museum. Dallas Dhu was one of the first distilleries with a pagoda roof. It was designed by the company of Charles Doig and his two sons who were involved with the design of more than a hundred distilleries in Scotland and Ireland. Dozens of them have been active until this day – like Glenfarclas, Highland Park, Lagavulin, Talisker and Bushmills (in Ireland).

The most popular blended whisky of Wright & Grieg Ltd. at the end of the 19th century was “Roderick Dhu”.

Between 1921 and 1929 Dallas Dhu distillery was owned by Benmore Distillers Ltd., an English consortium that also owned the Benmore and Lochhead whisky distilleries in Campbeltown and the Lochindaal distillery on Islay.

Even though the Dallas Dhu distillery was closed in 1983, warehousing continued at the premises until the distilling license was cancelled in 1992.

The name “Dallas Dhu” has sometimes been spelled as “Dallasdhu” in the past.

Tasting Notes:

• AROMA without water
Fruity notes present – fresh pear and peaches. Subtle ester influences, a delicate malty edge is present. A complex aroma.
• TASTE without water
Mouth watering, remains fresh – peach elements, a subtle vanilla comes to the forefront.
• AROMA with water
Prominent malty note with more subtle influences if fresh and ripe water melons. A subtle chocolate coffee note becomes apparent.
• TASTE with water Heavy tropical fruits initially, retains a certain freshness and becomes mouth drying.

Founded over two centuries ago in 1779, Bowmore is the first recorded distillery on the island of Islay and one of the oldest in the whole of Scotland. Bowmore whiskies then spend their long live resting in the legendary No. 1 Vaults, the oldest maturation warehouse in Scotland.
